Call Me When the Shuttle Lands.


It would appear that this whole hippie thing's pendulum has swung its groovy way again. Read, it's in. This could be attributed to many things: a disenchantment and exhaustion (or sheer anger) with current politics, climate change (save water, shower with a friend), the way we view and approach our food, or just the wave of fashion. Everything comes back around, you know.

Though I was born in a particularly pointedly hippie period with hairy, bell-bottomed parents (who named their daughter Elliott), the whole hippie thing, with its ins and outs in my lifetime, has had little effect on me. In high school and even college, while many of our peers donned the gauzy, flowy shirts and floor-length paisley skirts, Birkenstocks, and the god-forsaken patchouli, Paz and I were listening to NWA, drinking 40s and seeing how much cleavage we could get away with.

I had an old friend back in LA, a real meat and potatoes guy and proud Texan, who had a saying when I – or anyone for that matter – got a little, er, out there, a little too magic-y or feel-y or granola-y (think Anne Heche's 4thdimension circa 2000, or just Gary Busey, in general).

'Call me when the shuttle lands,' he would say wryly.


Regardless of the dude's generally great deadpan, comedic timing, this was always hilarious and perfect to me. And so, of course, I have long since, and with much frequency, adopted the comment.

I, for the most part, am pretty even-keeled and pragmatic when it comes to social politics. I understand the motivation for going green, buying local, being responsible with my carbon footprint, etc. But I equally understand that it is a very high maintenance and prohibitively expensive lifestyle to adapt. Go ahead, buy a week's worth of groceries at Whole Foods and a week's worth of groceries anywhere else, and tell me the price difference. How much did you spend on kombucha or fair trade coffee last week?

I'll never forget a photo assignment I had when I first moved to LA and was working for the LA Weekly. I was in my twenties and really struggling financially. I was asked to photograph a woman (married to a extra, super, mega famous actor/comedian) whose personal crusade it was to abolish Hummers and the like and get everyone to drive a Prius. She actually threw stones at people's environmentally cruel vehicles. Needless to say, I parked my banged up gas guzzler far, far away and lugged my photo equipment on foot to her house for the shoot. Oh, her house that was a ginormous manse in the famously richer than rich Pacific Palisades neighborhood (Steven Spielberg was her neighbor). Parked in the driveway were a minimum of five various hybrid and electric cars.

My point is: I appreciate that she wanted to share the gospel, so to speak, but COME ON. And by the way, I still can't afford a Prius. I try in other ways. I have a vegetable and herb garden, I recycle, I buy seasonal and local – when I can, I read, I think, I don't drive a gas guzzler – actually, I hardly drive at all. So keep your judgment, your stone throwing (literally) to yourself, step down from that fancy-ass high horse and, hey, call me when the shuttle lands.


Here's the funny thing: the same girl that would steal Paz's sister's hippie outfits and dress up in them to poke fun at her, the same girl whose eyeballs roll out of her head when she hears a little too much about whatever this acai berry is, and the same girl who knows absolutely nothing about your or her own astrological sign has turned in a decidedly bizarre direction whilst pregnant.

And here it is: currently I have my own doula, a small troupe of midwives, and a tiny library of books with such titles as Spiritual Midwifery (where the vagina is sometimes referred to as a Yoni and contractions are called rushes), and am having an entirely natural childbirth. Like, no drugs. And in water. And now that I am large and in charge at seven months pregnant and counting, I'm pretty much wearing the exact clothes I would have derided twenty-five years ago: long, flowy maxi dresses (if we're going to call a spade a spade, muu muus), colorful, decorative scarves – around my head, and even the Birkenstocks. You should see all my wicker and canvas totes. I'd like to think I'm channeling Elizabeth Taylor in the Sandpiper.

I've also been listening to Van Morrison's Astral Weeks on repeat for, well, weeks.

If I knew me and heard all of this from me, my response to me would, without a doubt, be, 'Elliott, please, PLEASE call me when the shuttle lands.'


Fortunately, thanks to Portlandia, Pinterest, all things DIY - pickling, craft beers, chickens in the yard, salad greens 'foraged' from the vacant lot, Mason jars and twine, I feel the pregnant, muu muu-wearing me has just so happened to luck out in the roulette of current fashion. This whole hippie thing has returned. Again. Sort of. With a twist. It's more lumberjack-self-reliant than bongs and tapestries, more sweat than patchouli, more Airstream than school bus. It's far more conscious, I suppose.

Fred and I have a lifestyle that adapts some of this ethos. Like I said, we have our garden. We sometimes shower together (though I'm too large for shower sharing these days). Fred sort of looks like a lumberjack. But we also live realistically. We enjoy our creature comforts. We watch our shows on HBO. We pay taxes.

But one major do-it-yourself that we, Fred in particular, has been super keen on for a few years now is making ice cream. In the ice cream-y months he likes to make a different batch each week, always experimenting with new ideas. And, while some aren't as successful – conceptually (coconut milk and Sriracha, for example) – his actual ice cream is undeniably delicious.

In the spirit of this post, we picked up some local, just-in-season rhubarb from our local, green grocery and got to it: a rhubarb-swirl ice cream. While Fred usually takes the reins with the ice cream, we collaborated for this one. He prepared the ice cream part and I made the swirl part. It was our first swirl (well, in the ice cream department - how do you think I got pregnant, after all?).

In the end, we made a beautiful and tasty new ice cream. I need to tweak the swirl method I chose but otherwise we were very pleased with the outcome. Even better than the local farm eggs, milk and cream used was that the ice cream matched the tie-dye pattern of my muu muu...

Oh, Jesus. Call me when the shuttle lands, right?


Rhubarb-Swirl Ice Cream
(recipe adapted from The Faux Martha)


Makes 1 ½ quarts

Ingredients
2 1/2 cups half and half
2 cups whole milk
1 cup + 2 tablespoons sugar
Dash of sea salt
3 egg yolks
1 tablespoon vanilla extract

Rhubarb Swirl
4 cups rhubarb, chopped
1/4 cup sugar
1/4 cup fresh orange juice

Directions
In a heavy bottomed sauce pan, combine half and half, whole milk, heavy cream, 1 cup of sugar, and salt. Whisk to combine. Taste for salt.

In a bowl, whisk together egg yolks and 2 tablespoons of sugar.

Over medium-high heat, heat milk mixture until sugar dissolves and begins to simmer. Slowly pour about one cup of the simmering milk mixture into the egg mixture, whisking constantly to temper the eggs. Add egg mixture to sauce pan, stirring occasionally for about 5 minutes. Turn heat off. Add vanilla extract.

Pour mixture in a large bowl over a fine mesh sieve to catch any clumps. Cover and place in fridge to cool, about 3 hours. To speed up the cooling process, place bowl in an ice bath in the fridge, or place in the freezer sans ice bath.


Rhubarb Swirl:
Place rhubarb, sugar, and orange juice in a sauce pan. Cover and cook over medium heat until rhubarb is soft, about 10 minutes. Puree mixture in food processor until smooth. Once ice cream mixture is cold, make according to your machine’s instructions. Add rhubarb in at the end, swirling through the ice cream (here's what I did). Place in freezer again for ice cream to become hard enough.

Building a Fort


There has been a lot of stuff going on in the world of Fred and me. We are great, don't you worry. But the world around us has been a bit, shall we say, dicey. We have both been moving very fast, doing a lot of things, a lot of busy. Yet we have been ships in the night, hardly had a moment to really spend quality time with one another. In our house, the books and magazines have been piling up to resemble colorful totem poles, the garden is more like a graveyard, and as of last Friday, you could hear an echo in our refrigerator.

And so we decided to STOP. We decided to spend our weekend together, focused on the things we love to do together and the things we love about each other. We decided we were going to shut off the world, and concentrate on what home means to us. We decided to have vacation. Go camping. At home.

On Friday, while Fred was at work, I took off and stocked up on all of the provisions. Groceries, firewood, dog bones, you know, the usual stuff. Once I got home and put all of the groceries away (one of my very favorite things to do), I did laundry, so all of our cozies were clean and warm, cleaned the house and set some of our favorite old movies to record (and a Lakers game for Sunday). I then called Fred and told him we were ready: the house was clean and sparkly, and the kitchen stocked. Let the staycation commence.

Once Fred got home, we both changed into our cozies, put on some Otis Redding and poked and prodded about our stocked-for-the-apocalypse kitchen for a guiding light. Parsnips, savory, carrots, burrata, walnuts, blood oranges, Littleneck clams, duck breasts, Anson Mills grits, rapini, hominy, salted capers, bacon, okra(!), leeks, pasilla pepper, Pacific cod, a whole chicken, potatoes, fresh cream, and more – I was paralyzed with options. So I turned to Fred and asked him to just pick a protein, and I would run with it from there. Clams.

I can do that.

While in Inverness recently, we stopped at a little spot on Tomales Bay and had a bowl of clam chowder. It inspired me, which is why I had purchased the clams in the first place. I liked this direction. And as Fred built a fire in the fireplace, my plan evolved even more. On that brisk, drizzly evening, while in our cozies, we decided to cook the soup on the open fire. We were camping, after all.

And so we brought all of our provisions, our mise en place, into the living room, dimmed the lights and lit candles. And as Otis crooned in our ears, and the fire warmed our faces, and the dogs curled up close to us with their bones, I got started steaming the clams while Fred chopped potatoes, celery, onions and garlic on the cutting board by the hearth.

Though, admittedly, it was a challenge for the OCD part of me to relinquish control of the mess that was inevitable for this indoor camping night to be successful, it was so, so beautiful. So warm and intimate, so still. As we slurped our steamy chowder and messily brought dunked, torn chunks of baguette, dripping with creamy stew and pieces of potato and clam up to our faces, we hardly said a word. Instead we stared around the room, at the pups, at the fire, at each other, and smiled and giggled.

When we were full of clam chowder and bread, we left everything as it was. As the fire continued to flicker, and the music played on, we stayed and languished on the floor and did the crossword until the light was completely gone, but our smiles remained.

Sometimes it's important to close the door to the rest of the world and take stock on what's really important; love, warmth, smiles, giggles, and home – wherever you make it.


Classic New England Clam Chowder

Serves 6-8

Ingredients

4 pounds cherrystone clams, scrubbed
1/2 cup vermouth
1 tablespoon unsalted butter
4 ounces bacon, cut into 1/2-inch pieces
1 celery stalk, diced
1 large onion, diced
1 garlic clove, minced
1 Yukon Gold potato, peeled, cut into 1/2-inch pieces
1/2 tablespoon chopped fresh thyme
1 bay leaf
1 tablespoon cornstarch
1 cup heavy cream
Kosher salt, freshly ground pepper
Chopped fresh chives
Oyster crackers or Fresh Baguette

Directions

Bring clams, vermouth and 2 cups water to a boil in a large pot over high heat. Cook until clams just open, 8-10 minutes (discard any that do not open). Using a large slotted spoon, transfer clams to a large rimmed baking sheet; set broth aside. Let clams cool slightly, then pull meat from shells; discard shells.

Chop clams into bite-size pieces. Strain broth through a fine-mesh sieve set over a large bowl. Add water if needed to measure 4 cups. 

DO AHEAD Clams and broth can be made 1 day ahead. Cover separately and chill.

Melt butter in a large heavy pot over medium heat. Add bacon and cook, stirring occasionally, until fat is rendered and bacon begins to brown, about 8 minutes. Add celery, onion, and garlic and cook, stirring often, until onion is translucent, about 10 minutes. 

Add reserved broth (or 6 cups bottled clam juice), potatoes, thyme, and bay leaf. Bring chowder base to a simmer; cook until potatoes are tender, 20-25 minutes. 

Stir cornstarch and 2 tablespoons water in a small bowl to form a slurry. Stir slurry into chowder base; return to a boil to thicken. 

DO AHEAD Base can be made 1 day ahead. Let cool; cover and chill. Keep clams chilled. Bring base to a simmer before continuing.

Remove base from heat. Discard bay leaf. Stir in reserved clams and cream. Season with salt, if needed (clams' brininess varies), and pepper.

Divide chowder among bowls. Garnish with chives, and serve with bread or crackers.

Here it is.
I’m ready.

I stopped making New Year’s resolutions a long time ago. I don’t make too many finite rules for myself, in general. I hate fooling myself or disappointing myself. Making decrees that seem unrealistic for the long term and then breaking those rules as a result is, I think, an unhealthy practice. There are, however, broad, general, obtuse sorts of things I’d like to see more or less of at the start of each year.

I’d like to get more exercise (but I really hate exercise).
I’d like to want to exercise more.
I’d like to drink more water, and perhaps a skosh less wine.
I’d like to read and write more.
I’d like to see more movies in theaters.
I’d like to push myself more in the kitchen.
I’d like to travel more.
I’d like to see myself save some money.
I’d like to stay in better touch with friends and family that I don’t get to see often/ever.
I’d like that to mean that I will send cards and write letters.
I’d like to be calmer and more flowy, in general.

Most of these things seem reasonable enough. The exercise one is questionable. So is the wine one. And the calm and flowy. We’ll see.

One of the things Fred and I have been doing in the kitchen lately is play sort of a Chopped game with our approach to dinner. I’ll pick three to five seemingly disparate items (usually things in the refrigerator that need to get used for fear of waste) and putting together a complete meal with them. One night it was duck breast, savoy cabbage, rice leftover from Chinese food delivery and sausage. Fred made seared duck breast over a fried rice with sausage and cabbage that was extraordinary.

Another time the items were salmon, coconut milk, scallions, avocado and parsley. We marinated the salmon in coconut milk, pan roasted it and topped it with a avocado-parsley cream. It’s fun, challenging and ensures very little goes into the trash bin/compost that we don’t have.

Last night the items were a leek, a potato, buttermilk, sour cream and some fennel from the garden. All of the items save for the fennel were on the brink of getting tossed. As I looked over the items for my challenge it was so very obvious. Soup. Plus, I could finally get a chance to use my Christmas present from Fred; my new Vitamix blender (!). He had used it the night before making the parsley-avocado cream, but I had not messed with it, yet. Perfecto.

As I tossed the chopped leek into the melted butter, the idea fully came together; I was going to make a buttermilk vichyssoise with fennel. When I got to the part where I dumped everything into the blender - hot - I was scared and excited. It did not explode hot liquid all over me and it even managed to fully blend the fennel fronds. In less than thirty seconds I had a silky smooth, velvety, perfectly pureed, beautiful, perky bright green soup.

I’ve said it many times here, but soup really is my favorite thing to make. It can be as comforting, elegant, rustic, hearty, simple, complex, delicate, chunky, smooth, hot, cold, big or little as you want it to be. It goes with every meal and every season. And the garnish is always so fun to decide. It’s like that hat or scarf that just makes the outfit.

This soup, a vichyssoise, is kind of all of those things: simple yet complex, delicate yet hearty, elegant yet rustic. It can even be served hot or cold. This soup calls for any manner of garnishes. Chives , creme fraiche, a simple buttery crouton, or maybe you want to really dress it up - with a sliver of smoked salmon and a small dollop of caviar. Now that really makes the outfit.

I guess with my new kitchen toy I am accomplishing at least one of the things I’d like to see more of in 2013 - I am pushing myself more in the kitchen already. If this soup didn’t go so perfectly with any number of white wines I might be able to start accomplishing another one of the things on that list...




  • Buttermilk Vichyssoise with Fennel

  • Serves 6

Ingredients

  • 3 tablespoons unsalted butter
  • 1 leek, white and light-green parts only, halved lengthwise then thinly sliced into half-moons, washed well and drained
  • 1 large white potato, cut into 1-inch pieces
  • 3 1/2 cups chicken stock
  • 1 cup chopped fennel bulb & fronds
  • Coarse salt and freshly ground white pepper
  • 2 cups buttermilk
  • 1/2 cup creme fraiche
  • Smoked salmon and caviar (for garnish)

Directions

Melt butter in a stockpot over medium-low heat. 
Add leek, and cook, covered, until tender, about 15 minutes.
Add potatoes and stock. Bring to a boil; simmer until potatoes are tender, about 20 minutes. Stir in fennel and cook for about 5-7 more minutes.
Working in batches, puree soup in a blender until smooth. Transfer pureed soup to a large bowl. 
Season with salt and white pepper. Stir in sour cream and buttermilk just before serving. Adjust seasoning as needed. 
If necessary, thin the soup with a bit more chicken stock or water to achieve desired consistency. 
Garnish with a sliver of smoked salmon and a tiny drop of caviar.
May be served hot or cold.

Raindrops Keep Falling on My Head.


What a couple of weeks. What a month. 

Without really even recovering from that which was Thanksgiving, I caught a cold, and had some pretty big stuff going on in both work and home worlds. Although I had lined up dinner commitments for a good many of the nights, I also planned to spend all of my home-times meals concentrating on continuing to clear out and utilize all of the ingredients still left in the fridge from that which was Thanksgiving. There were no more leftovers, mind you, but a lot of ingredients that simply didn’t get used as I went a little haywire on that which was Thanksgiving and made enough food to feed greater Los Angeles. 

Since then, in my kitchen, there has been -– peppered between dining out on anything from an entire pig’s head (I ate the eyeball!) to beautiful, simple food, done right -- oyster stew, roasted heirloom carrots, a couple of filets, sausage over lentils, sausage biscuits, beef bourguignon, any number of pastas, some throw-together hors d'oeuvres for a small holiday soiree last week, and a roast chicken over white beans, leeks and garlic with sautéed rapini.

It doesn’t feel like it, but looking at that last paragraph I guess I’ve been pretty busy.
 

So now, I’ve got my tree up and decorated, wrapped gifts spilling out from underneath (Christmas shopping = done), the house is all holiday-y and lovely looking and smelling, it’s rainy and blustery outside, I’ve got a fire in the fireplace, a pot of chili stewing on the stove, a glass of Chilean Cabernet in my hand, my sweet dog lying next to me, and Christmas cookies baking in the oven (my first ever by myself). So what am I missing?
 

Sam.
 

I came home the other night after a decadent and extravagant holiday dinner with Uncle Dougertons, put on my jammies, clicked on the TV to find some completely banal movie on whatever channel it had been left on, which completely absorbed me. When the final credits rolled, the accompanying song was Raindrops Keep Falling on My Head. I didn’t see it coming. I was completely blindsided. I didn’t know why for a moment.
 

I was bawling.
 

Then I realized: this was one of Sam’s favorite songs. He even put it on a mix cd for me ages ago. That cd was stolen from my car in Atlanta about a decade ago. It was also the only thing stolen from my car that day that I cared even remotely about. Ironically, also the thing that probably got tossed in the trash almost immediately by whomever broke into that old Jetta.
 

So what did I do? I ran to my room and grabbed a bunch of my old photo albums to pore through, and even put a framed picture of Sam wearing a Santa hat on my mantle.
 

I was still bawling.
 

It was very late – too late to call anyone – so I texted Paz, Heather and Emma. I just wrote that I was overwhelmingly sad about Sam (they all knew him as well). I think I just wanted to talk about him to someone. Good things. I thought it would make me feel better. But everyone was asleep (I assume).
 

That moment has passed and I feel better now. I don’t feel like bawling. But I realized that that which occurred the other night was a really good thing. No, I could not touch, smell or hear Sam – and I desperately wanted to. But I felt him. I remembered him. I thought about him. And I realized, again, how fortunate I am to even have that. I’m not very good at crying or emoting in certain ways and moments like that night only occur randomly (and very rarely), when some obscure visceral trigger is hit. Then, wham-o.


I’ve written about Sam before – a little over a year ago. I’ll probably write about him again. I want you all to know about him, too. He was pretty great – and has had an enormous impact on my life, and very likely had a lot to do with who I’ve been and am, and will be.

Considering that it's now Christmas I was going to share a recipe for Christmas cookies. But considering A) I can't bake, B) My cookies looked ridiculous, C) everyone has a Christmas cookie recipe anyway (or one can just turn to Martha), and D) did Sam even care about Christmas cookies that much? I sure don't..., I decided to go a different route.



Sam ate oddly. He grazed a lot. Small nibbles throughout the day. He also seemed to prefer really basic foods. My strongest recollection was from college: the most common "meal" he would prepare for himself was spaghetti with a ton of butter, salt and maybe pepper. Well, clearly I am not going to - nor do I have any need to - share that recipe with you. So, I thought I'd do it up my own way. And I think Sam would dig this dish.
 
Happy Holidays and a beautiful New Year to Sam, where ever and however he may be, to Mary (and Jerry) Trice, and to all of my beautiful friends and family. I know how truly blessed I am to have each and every one of you touch my life.



Linguine with Pancetta Mushroom Cream Sauce

Serves 2

Ingredients
  


8 oz
 dry linguine
 
1 tablespoon
 olive oil
 
3 tablespoons
 Pancetta, cut in ¼-inch dice
 
1/2 cup
 1/4-inch thick slices of cremini mushrooms
 
1/2 cup
 Chardonnay
 
1/2 cup
 heavy cream
 
2 teaspoon
 freshly grated Parmesan cheese
 
2 teaspoon
 chopped flat-leaf parsley
 
Small pinch
 minced garlic
 
Salt and pepper to taste
1/2 teaspoon
 freshly grated Meyer lemon zest moistened in 1 teaspoon lemon juice
 

*Fresh lemon zest added at the last minute brings out the lemony nuances of a nice white wine, such as a Sancerre or Puilly Fume. I also suggest adding a pinch of minced fresh garlic just before tossing the sauce and pasta together.



Bring a large pot of water to a boil. Salt generously. Add the pasta and cook 8-10 minutes just until al dente.
 

While the pasta is cooking, sauté pancetta in olive oil in a large sauté pan over medium heat.
 

As the pancetta begins to brown, add the mushrooms and continue to cook, stirring occasionally, until mushrooms are golden brown and dry. Stir in wine. Cook until wine is reduced by half. Add cream. When sauce comes to a boil, remove from the heat and stir in cheese and parsley. Add garlic and salt to taste. Toss sauce and pasta together. Garnish with lemon zest and serve immediately.
