Out Like a Lamb.



The end of March is nigh, and thus is Easter. Passover is happening right now. It's a big time for a lot of people. And plants. Plants are having a blast right now. And people are having a blast with plants. Or, at least, Fred and I are.

When we last spoke, I had mentioned having chatted around to get a feel as to what food things meant to people with regard to Easter. I ended up settling on chocolate and lamb, though not necessarily together – which might not be a bad idea, come to think of it. So I shared a chocolate recipe.

So you probably know where we will be going with this. Lambville.

Coming from completely non-religious parents, other than the Easter Bunny covertly surprising me with an Easter basket each year at my mom's house, Easter meant little else. I don't even recall a special meal. So after sifting through people's responses to my query about what Easter represented, culinarily, to them, I went about figuring out what it meant to me. And I decided to embark on the most traditional Easter supper I have ever had. First order on the agenda: order a giant leg of lamb.


I like lamb just fine, now, but as a child it unnerved me a little. I think it was just the gamey-ness of the meat. It wasn't on the dinner table too often at home, but I know Dad loved it. He always ordered it at the Greek restaurant in our neighborhood. He loved their Lamb Guvetsi.

As I mentioned, years ago, like 2005, I heard Nigella Lawson interviewedon NPR around this time of year. She was promoting her then new book, Feast, a cookbook devoted primarily to celebrations, holidays and entertaining. I vividly recall her discussing her favorite Easter meal, and the great detail with which she described a saffron roasted leg of lamb and some sticky, crispy garlic potatoes. Obviously it stuck with me if eight years later that was the first thing to pop into my head when I decided to make my first, big Easter dinner. So I started planning the menu, the flowers, the dining room look, and called some friends.

Easter dinner was so happening.

Two days before the event I put the lamb in its marinade and refrigerated it. The day before, while Fred went out to get all of our groceries, flowers and the like, I poked around on the computer to find out why lamb in the Spring, and why lamb on Easter. Why throughout the entire world the most popular Easter symbol is the lamb. I'm sure, as usual in this department, everyone else already knows this stuff, but I'm new here.

The roast lamb dinner that many eat on Easter Sunday goes back earlier than Easter to the first Passover of the Jewish people. The sacrificial lamb was roasted and eaten, together with unleavened bread and bitter herbs (a Seder) in hopes that the angel of God would pass over their homes and bring no harm. As Hebrews converted to Christianity, they naturally brought along their traditions with them. The Christians often refer to Jesus as The Lamb of God. Thus, the traditions merged.

In the 7th century the Benedictine monks wrote a prayer for the blessing of lambs.
A few hundred years later the pope adopted it and a whole roasted lamb became the feature of the Pope's Easter Dinner, and has been ever since.

I wasn't going to roast a whole lamb, of course. Just one of its legs.


Now this lamb recipe involved saffron, which I absolutely love. I know a lot of people do not, however. It seems to be one of those ingredients like cilantro: people either love it or hate it. And I understand. Also, like cilantro, it has an unmistakable, very distinct aroma and taste. The thin, delicate, muted red hair-like strands are fragrant, floral, earthy, and honey-like with a bit of bitterness. Saffron also happens to be the most expensive spice in the world. Use too much and that will be the only thing you take away from that dish. With saffron, the words 'a little goes a long way' have never been more accurate. A little dab will do ya.

It's no surprise that you will find a wealth of recipes with saffron and lamb together. Kind of like chocolate and peanut butter, they just make sense. They are also both prominent elements in a lot of Middle-Eastern cuisine. Actually, it's funny, lamb takes me back to eating Greek food with my dad, and I used Greek saffron with my Easter lamb.


Yesterday, on the event of my Easter dinner celebration, once the lamb went into the oven after two days of marinating, I went about the décor of the dining room. I hand-picked each and every piece of silverware, plate and glass, dug through the linens to find the right napkins – I went for the fancies – and began meticulously arranging the bundles of daffodils and hyancinths into little vintage creamers and jelly jars while listening to my go-to soothing sounds: Explosions in the Sky. All the while the house was filling up with the entrancing smell of lamb, lemon and garlic fusing together in the oven. I dare say it was beginning to smell like Easter. Or, at least, really, really good. The air smelled like family and friends and the promise of festivity and future fond memories.

Everything was coming together perfectly. The food was on schedule, the room looked great, I had the perfect wines; some lovely rosés from a tasting the day before, and just moments before the guests arrived, as I was lighting the candles, Fred and I got our Easter baskets in the mail! I guess the Easter Bunny is trying to help out the US Post Office in their time of need... Nevertheless, that took care of dessert; Cadbury Creme Eggs!

As we all sat down to the table, we raised our glasses of rosé and toasted to a happy Easter. And as I looked around the room, I took stock. The smiling faces of my friends, the table looked beauteous, the food was delicious, the wine went perfectly with the saffrony lamb, the flowers smelled wonderful, and best of all we were all so happy to be with each other. Good friends, together, on our Easter, eating, drinking, smiling, talking, sharing Easter memories and laughter.

SAFFRON ROAST LAMB WITH STICKY GARLIC POTATOES
(recipe adapted from Nigella Lawson's book, Feast)

Serves 6
1 leg of lamb (4.5 lbs)
1/3 cup olive oil
3 cloves garlic, bruised
6 scallions
2 bay leaves
juice of 1 lemon
small bunch mint, 1 1/2 oz including stalks, torn roughly makes 1 cup
1/2 teaspoon saffron threads, steeped in 1 cup very hot water
1/3 cup rosé wine

 Put the lamb in a large freezer bag, pour over the olive oil and then throw in the garlic, trimmed scallions and bay leaves, squeeze in the lemon juice and throw in the squeezed-out lemon halves too, then add the torn-up bunch of mint. Seal the bag and marinate in the fridge overnight.
Bring the lamb to room temperature before you even think of putting it in the oven, and preheat that to 425 degrees F when you take the lamb out of the fridge.
Pour the entire contents of the freezer bag into a roasting pan and roast for about 20 minutes a pound, or until the lamb is cooked a perfect, à point pink; you will just have to pierce it with the knife to see. Just before the lamb is due to come out of the oven, put the saffron strands in a measuring cup and pour over the hot water so that it can get on with steeping.
Remove the lamb to a wooden carving board to rest. Pick out the lemon rinds, and then place the roasting pan on the stove over medium heat, and stir until it starts bubbling. Stir in the saffron in its water and add 1/3 cup rosé – tasting for seasoning as you go – as needed to let this bubble into a small amount of ungloopy gravy. 
Carve the lamb on to a large warmed plate and strain the saffrony juices, stirring in any liquid first from the carving board, over the pink meat.
Read the sticky garlic potato recipe now so that you can coordinate your movements. And, to go with, I'd want no more than a bowl of green peas, turned in some butter.

STICKY GARLIC POTATOES
Serves 6
1 1/2 lbs small fingerling potatoes
8 cloves garlic (more if you like)
1/2 cup olive or other vegetable oil 
Coarse salt & freshly cracked pepper to taste.

Bring a saucepan of water to the boil and add some salt, add the potatoes and cook for 30 minutes. Drain, and put back into the dry pan.


Peel the garlic cloves by squishing with the flat of a knife so that they bruise slightly and the skin slips off. Put them in the dry pan with the potatoes, and then bash potatoes and garlic  so they are cracked and split. You can do this ahead and leave them in the pan – though with the lid off, so that they don’t get watery – until you want to roast them.
Preheat the oven to 425 degrees F and slip a roasting pan in to heat up at the same time. Once the oven’s hot, pour in the oil and let it, in turn, heat up for 10 minutes.
Carefully tip the potatoes and garlic into the hot oil and cook for 15 minutes. Turn the potatoes over and then give them another 15 minutes. 
Salt & pepper to taste.
Serve on a platter with the lamb.



Building a Fort


There has been a lot of stuff going on in the world of Fred and me. We are great, don't you worry. But the world around us has been a bit, shall we say, dicey. We have both been moving very fast, doing a lot of things, a lot of busy. Yet we have been ships in the night, hardly had a moment to really spend quality time with one another. In our house, the books and magazines have been piling up to resemble colorful totem poles, the garden is more like a graveyard, and as of last Friday, you could hear an echo in our refrigerator.

And so we decided to STOP. We decided to spend our weekend together, focused on the things we love to do together and the things we love about each other. We decided we were going to shut off the world, and concentrate on what home means to us. We decided to have vacation. Go camping. At home.

On Friday, while Fred was at work, I took off and stocked up on all of the provisions. Groceries, firewood, dog bones, you know, the usual stuff. Once I got home and put all of the groceries away (one of my very favorite things to do), I did laundry, so all of our cozies were clean and warm, cleaned the house and set some of our favorite old movies to record (and a Lakers game for Sunday). I then called Fred and told him we were ready: the house was clean and sparkly, and the kitchen stocked. Let the staycation commence.

Once Fred got home, we both changed into our cozies, put on some Otis Redding and poked and prodded about our stocked-for-the-apocalypse kitchen for a guiding light. Parsnips, savory, carrots, burrata, walnuts, blood oranges, Littleneck clams, duck breasts, Anson Mills grits, rapini, hominy, salted capers, bacon, okra(!), leeks, pasilla pepper, Pacific cod, a whole chicken, potatoes, fresh cream, and more – I was paralyzed with options. So I turned to Fred and asked him to just pick a protein, and I would run with it from there. Clams.

I can do that.

While in Inverness recently, we stopped at a little spot on Tomales Bay and had a bowl of clam chowder. It inspired me, which is why I had purchased the clams in the first place. I liked this direction. And as Fred built a fire in the fireplace, my plan evolved even more. On that brisk, drizzly evening, while in our cozies, we decided to cook the soup on the open fire. We were camping, after all.

And so we brought all of our provisions, our mise en place, into the living room, dimmed the lights and lit candles. And as Otis crooned in our ears, and the fire warmed our faces, and the dogs curled up close to us with their bones, I got started steaming the clams while Fred chopped potatoes, celery, onions and garlic on the cutting board by the hearth.

Though, admittedly, it was a challenge for the OCD part of me to relinquish control of the mess that was inevitable for this indoor camping night to be successful, it was so, so beautiful. So warm and intimate, so still. As we slurped our steamy chowder and messily brought dunked, torn chunks of baguette, dripping with creamy stew and pieces of potato and clam up to our faces, we hardly said a word. Instead we stared around the room, at the pups, at the fire, at each other, and smiled and giggled.

When we were full of clam chowder and bread, we left everything as it was. As the fire continued to flicker, and the music played on, we stayed and languished on the floor and did the crossword until the light was completely gone, but our smiles remained.

Sometimes it's important to close the door to the rest of the world and take stock on what's really important; love, warmth, smiles, giggles, and home – wherever you make it.


Classic New England Clam Chowder

Serves 6-8

Ingredients

4 pounds cherrystone clams, scrubbed
1/2 cup vermouth
1 tablespoon unsalted butter
4 ounces bacon, cut into 1/2-inch pieces
1 celery stalk, diced
1 large onion, diced
1 garlic clove, minced
1 Yukon Gold potato, peeled, cut into 1/2-inch pieces
1/2 tablespoon chopped fresh thyme
1 bay leaf
1 tablespoon cornstarch
1 cup heavy cream
Kosher salt, freshly ground pepper
Chopped fresh chives
Oyster crackers or Fresh Baguette

Directions

Bring clams, vermouth and 2 cups water to a boil in a large pot over high heat. Cook until clams just open, 8-10 minutes (discard any that do not open). Using a large slotted spoon, transfer clams to a large rimmed baking sheet; set broth aside. Let clams cool slightly, then pull meat from shells; discard shells.

Chop clams into bite-size pieces. Strain broth through a fine-mesh sieve set over a large bowl. Add water if needed to measure 4 cups. 

DO AHEAD Clams and broth can be made 1 day ahead. Cover separately and chill.

Melt butter in a large heavy pot over medium heat. Add bacon and cook, stirring occasionally, until fat is rendered and bacon begins to brown, about 8 minutes. Add celery, onion, and garlic and cook, stirring often, until onion is translucent, about 10 minutes. 

Add reserved broth (or 6 cups bottled clam juice), potatoes, thyme, and bay leaf. Bring chowder base to a simmer; cook until potatoes are tender, 20-25 minutes. 

Stir cornstarch and 2 tablespoons water in a small bowl to form a slurry. Stir slurry into chowder base; return to a boil to thicken. 

DO AHEAD Base can be made 1 day ahead. Let cool; cover and chill. Keep clams chilled. Bring base to a simmer before continuing.

Remove base from heat. Discard bay leaf. Stir in reserved clams and cream. Season with salt, if needed (clams' brininess varies), and pepper.

Divide chowder among bowls. Garnish with chives, and serve with bread or crackers.

Here it is.
I’m ready.

I stopped making New Year’s resolutions a long time ago. I don’t make too many finite rules for myself, in general. I hate fooling myself or disappointing myself. Making decrees that seem unrealistic for the long term and then breaking those rules as a result is, I think, an unhealthy practice. There are, however, broad, general, obtuse sorts of things I’d like to see more or less of at the start of each year.

I’d like to get more exercise (but I really hate exercise).
I’d like to want to exercise more.
I’d like to drink more water, and perhaps a skosh less wine.
I’d like to read and write more.
I’d like to see more movies in theaters.
I’d like to push myself more in the kitchen.
I’d like to travel more.
I’d like to see myself save some money.
I’d like to stay in better touch with friends and family that I don’t get to see often/ever.
I’d like that to mean that I will send cards and write letters.
I’d like to be calmer and more flowy, in general.

Most of these things seem reasonable enough. The exercise one is questionable. So is the wine one. And the calm and flowy. We’ll see.

One of the things Fred and I have been doing in the kitchen lately is play sort of a Chopped game with our approach to dinner. I’ll pick three to five seemingly disparate items (usually things in the refrigerator that need to get used for fear of waste) and putting together a complete meal with them. One night it was duck breast, savoy cabbage, rice leftover from Chinese food delivery and sausage. Fred made seared duck breast over a fried rice with sausage and cabbage that was extraordinary.

Another time the items were salmon, coconut milk, scallions, avocado and parsley. We marinated the salmon in coconut milk, pan roasted it and topped it with a avocado-parsley cream. It’s fun, challenging and ensures very little goes into the trash bin/compost that we don’t have.

Last night the items were a leek, a potato, buttermilk, sour cream and some fennel from the garden. All of the items save for the fennel were on the brink of getting tossed. As I looked over the items for my challenge it was so very obvious. Soup. Plus, I could finally get a chance to use my Christmas present from Fred; my new Vitamix blender (!). He had used it the night before making the parsley-avocado cream, but I had not messed with it, yet. Perfecto.

As I tossed the chopped leek into the melted butter, the idea fully came together; I was going to make a buttermilk vichyssoise with fennel. When I got to the part where I dumped everything into the blender - hot - I was scared and excited. It did not explode hot liquid all over me and it even managed to fully blend the fennel fronds. In less than thirty seconds I had a silky smooth, velvety, perfectly pureed, beautiful, perky bright green soup.

I’ve said it many times here, but soup really is my favorite thing to make. It can be as comforting, elegant, rustic, hearty, simple, complex, delicate, chunky, smooth, hot, cold, big or little as you want it to be. It goes with every meal and every season. And the garnish is always so fun to decide. It’s like that hat or scarf that just makes the outfit.

This soup, a vichyssoise, is kind of all of those things: simple yet complex, delicate yet hearty, elegant yet rustic. It can even be served hot or cold. This soup calls for any manner of garnishes. Chives , creme fraiche, a simple buttery crouton, or maybe you want to really dress it up - with a sliver of smoked salmon and a small dollop of caviar. Now that really makes the outfit.

I guess with my new kitchen toy I am accomplishing at least one of the things I’d like to see more of in 2013 - I am pushing myself more in the kitchen already. If this soup didn’t go so perfectly with any number of white wines I might be able to start accomplishing another one of the things on that list...




  • Buttermilk Vichyssoise with Fennel

  • Serves 6

Ingredients

  • 3 tablespoons unsalted butter
  • 1 leek, white and light-green parts only, halved lengthwise then thinly sliced into half-moons, washed well and drained
  • 1 large white potato, cut into 1-inch pieces
  • 3 1/2 cups chicken stock
  • 1 cup chopped fennel bulb & fronds
  • Coarse salt and freshly ground white pepper
  • 2 cups buttermilk
  • 1/2 cup creme fraiche
  • Smoked salmon and caviar (for garnish)

Directions

Melt butter in a stockpot over medium-low heat. 
Add leek, and cook, covered, until tender, about 15 minutes.
Add potatoes and stock. Bring to a boil; simmer until potatoes are tender, about 20 minutes. Stir in fennel and cook for about 5-7 more minutes.
Working in batches, puree soup in a blender until smooth. Transfer pureed soup to a large bowl. 
Season with salt and white pepper. Stir in sour cream and buttermilk just before serving. Adjust seasoning as needed. 
If necessary, thin the soup with a bit more chicken stock or water to achieve desired consistency. 
Garnish with a sliver of smoked salmon and a tiny drop of caviar.
May be served hot or cold.

Out of the Past(ure)



Lately I have been homesick. Really homesick. In no small part for calm and simplicity.  Many things recently have been so Sisyphean here in my City of Angels. Or so it seems.  Everything is so big and heavy and more difficult than necessary.  People appear to be filled with drama or anger, or both, and take it out on the other drivers (or pedestrians) on the road, the Census taker on the other end of the phone line, or their server in a restaurant. I can hardly say I blame them. It’s a vicious cycle that I have fallen prey to as a result of my own recent circumstances: the nightmare of my unpredictable and mean-spirited next door neighbor, my evil, evil landlord (EVIL. GRR.), Beso’s doctor who won’t call me back, running into one someone I’d rather never lay eyes on again during lunch at Cheebo, money, driving, gas prices, traffic, crowds. A little jaunt from Point A to Point B, more often than not, seems a fairly substantial undertaking.  Not to worry; buck up I will.

So very recently I went back home for a visit. Fred came with me. I was overwhelmingly excited to see my dad, Paz, Spencer and everyone. I was mostly looking forward to chilling out, slowing down. To walk places. To munch a ginormous sandwich from Coppola's Deli on the James River. To lounge on my back deck. And to eat. Okay, and to drink some wine.

On our first night I trumped Dad’s call to go to Acacia (his fave). I had been there. I wanted to try Pasture. I had been hearing good things. It was new. It just opened last November under chef Jason Alley, who we know from his RVA standby, Comfort, along a stretch of Grace Street that has likely waited far too long for a little attention.


Upon entering, the space sort of took me aback a bit. It didn’t feel like Richmond. Instead of small, intimate, cozy and warm, it was big and airy and shiny and modern. It was very designed. Actually, I felt like I could have been in LA.

We had a drink at the large, wood bar (full bar) while we waited for our table. Dad and Fred had cocktails and Dale and I wined. After only about ten minutes we were seated.



And here’s what happened next…

Pimento cheese, crackers ($4). I am, admittedly, a huge pimiento cheese fan (note; I prefer the use of the optional I after the M and before the E (pimiento)). I love my mom’s recipe. The Duke’s mayonnaise and the zested sweet onion are key in creating the perfect texture. The slightest dash of Worcestershire is vital for that little somethin’ somethin’ that ignites your palate. Alley’s pimiento cheese was really nice, and more importantly, it was true. He served it topped with chopped fresh chives and alongside Ritz crackers. I applaud his confident choice of using Ritz rather than giving into the compulsion many have to bells-and-whistle it up with arm candy like crostini.


Deviled eggs, house cured rockfish roe ($5). Up there with the pimiento cheese love is my, perhaps, even greater affinity for deviled eggs. I make a mean one, myself. Again, I usually push to keep it simple. But Alley’s deviled eggs surprised and impressed me immensely. They were fresh and bright and rich without being cloying. They were simple and comfortable but different and exciting. That rockfish roe was a beautiful accompaniment to both the eyes and the palate. This dish was the New South. Classic dish, local ingredients, with a flare. In the right place. Taking the local rockfish and using the roe, the caviar if you will, was just perfect.


Marinated beets, chopped salad, avocado ranch ($9). This was a pleasant and ample salad. It was not, however, what I know to be a chopped salad. The greens were a little uninspired, calling it a day with just the romaine - but the beets were delicious, beautifully mandolined and served under the greenery which added an interesting visual effect.

Brussels sprouts, butternut squash, preserved lemon, pecan ($6). My father, who taught me so very much about food, the man who always insisted I, at least, try everything, the man who will eat anything, will not eat a Brussels sprout. He LOVED this dish. Jason Alley, that is one amazing feat. I will leave it at that.

Braised pork belly, ginger gravy, braised celery, celery leaf salad ($11). To be brutally honest, I’m a little burned out on the token pork belly dish every chef feels the need to pepper into their menus at present. Remember the sun-dried tomato tsunami from the 1980s? That being said, it is something I still enjoy putting in my mouth. I found this incarnation to be too busy. I agree that often pork belly, like foie gras, pairs well with a sticky sweetness, but the ginger gravy was too gelatinous and the sweetness sort of overwhelmed the meat. I really loved the peanuts in there, though.


Fingerling potatoes, apples, shallots ($5) add duck fat ($1). We added the duck fat. In fact, we ordered this one because we saw the words duck and fat next to one another. I would have liked to see these taters with a little bit of crispety-ness and a hair's breath more salt.


Carolina Gold rice, mushroom gravy ($7). I’m not certain that I have ever experienced Carolina Gold rice before, so I won’t pretend as though I have. I will say that, as a result of my ‘first time’ I will not be likely to order it if I spy it on a menu again. This was tremendously watered down long-grain rice topped with also watered down, flavorless mushroom gravy. None of us at the table had more than a taste.

Fried Barcat oysters, spicy tartar sauce ($10). This dish, these oysters, was fabulous. Some of the best I’ve had. Anywhere. The breading (Anson Mills?) was crisp and light and allowed the fresh, tart, impossibly juicy, and beautifully briny oyster to shine right on through. The tartar sauce was tart, citrusy and acted as an apt accomplice to those brilliant oysters. Kudos.


Olde Salt clams, cabbage, bacon, butter, lemon ($12). This was everyone’s favorite dish of the evening. Though a little more thought could have gone into the plating – one piece of un-toasted bread tossed on top, and the cabbage haphazardly strewn about over the clams – the flavors and textures were astonishing and delectable. 


Banana flan, peanut brittle, slated caramel ($7). I was reluctant because of the banana factor (and that I’m not much of a dessert person), but Fred made me taste it. And I’m glad he did. This was an absolute standout. Airy, delicate and rich. Subtly sweet with a crunchety brittle and salty caramel. Faultless.


“Rice grits” pudding, roasted pineapple, passion fruit, vanilla bean ($7). For those who know me, it’s obvious that this is not a dish I would order or even really want too close to me. But, that being said, those who tried it, loved it. In fact, this is one of Susan Winiecki’s, editor of Richmond Magazine, favorite desserts around town.


There were a lot of hits and only a few misses. I enjoyed my evening at Pasture. We all did. But what stuck with me was that it felt as though it could have been anywhere, in any city. It’s a destination restaurant but not necessarily an occasion restaurant. It's certainly worth a visit to this 'just getting turned around' neighborhood, because likely you won't just meander on in while walking, riding your bike or really even cruising around to or from something else. For example, I asked my dad if he liked Pasture and he said definitely. I asked him if he would frequent the place and he said he doubted it.

I stumbled across this quote of Jason Alley’s: “I want people to feel like they are getting out of town when they come here.”


Maybe that’s what Richmonders want and need. To feel like they’re getting out of town.

But coming from someone who has lived in big, ole, crazy, sprawly LA for the past ten years I think Richmond has fantastic food, incredible restaurants and amazing people cooking the food in their kitchens. And for the most part they are on the smaller side, welcoming and without pretense. But I get it - I dig Pasture and I can see why Richmond digs it, too. The thing here is I’m homesick, I want to be back home and when I’m there it’s hard to even imagine wanting to get out of town.

Egg (on) Thy Neighbor


Borrow an egg from my neighbor? Apparently not. My neighbor, Meg, happens to live within spitting distance of my house--yep, right next door, up close.  Perish the thought; I would never , nor have I ever, spit at Meg or her house. I do, however, think Meg has given some thought to spitting at me.

I grew up in a row house, I shared walls in dorms in college and even had a few dorm-mates at certain points, I have lived in a dozen apartments, surrounded on all sides by other apartments, and I have lived in three different houses in my canyon, a whisper's whisper from numerous other houses, and I have never had any real problems with any of these neighbors. When I moved into my current house, my landlord advised me to meet my soon-to-be next door neighbor, Meg. He told me she had some “issues” with the prior tenants.

So I went over and introduced myself. I explained to her that I had a small dog and that, more often than not, other dogs would also be at my house. She told me she had two small dogs as well. She was genuinely pleased that I bothered to come by, introduce myself and explain my situation to her. She even threw a little neighborhood meet and greet at her house when I moved in. Two other women from our block showed up. My dad was with me as he had come out to help me move. They flirted with him.

Meg had told me all about her “issues” with the couple that occupied the house before me. They had two small dogs that barked at all hours. They were swingers and had “wild parties”. The woman had fake breasts, Meg told me. The woman with fake breasts and Meg would yell at each other and apparently the whole neighborhood knew about their rift. Meg took the woman with fake breasts to dog court four (4) times.

I think she genuinely appreciated the gesture I made by coming to her first, introducing myself and preemptively mentioning the potential animalia at my house. Things were good between us. I used her wi-fi network, she used my printer. Every once in a blue moon she would kindly ask me to keep it down if I was out on the patio super late, with music and company. We were kind and chatty and cordial. Things went on like this for about a year and a half or so.

Then the winds changed.

I’m honestly not entirely sure what happened. I’m really not.  But something sure did. Suddenly she imposed a curfew on Maggie and me. A curfew. We were told that by midnight (each night) we were to be sealed in our house with all noise at a minimum.  If she heard the TV after our midnight curfew, I'd get a phone call or a text message. If I had company, having dinner and drinks out on the patio on a Saturday night, I’d get a text at 12:01am telling me to keep it down. I kept waiting for the citizens' arrest.

Stranger than fiction; I decided to take the kill-her-with-kindness route. So I sent flowers. Every text and email I send to Meg is littered with smiley emoticons (which I, otherwise, never use), exclamation points and phrases like super duper.

Yes, it's exhausting but so much fun in the most perverse of ways. 


Well, it’s Easter and Fred and I wanted to make a special Easter-y brunch. But we were short one egg. What could be more neighborly than to borrow an egg from a neighbor? (I’m such a brat) Of course Meg did not respond to my neighborly request (with a winky face and, like, two exclamation points), so we zipped down to Lindy Grundyto get some eggs and some of their bacon, thick-cut. Brunch was great. I would tweak a few things here and there about our approach to the dish below and the recipe reflects those tweaks.

I’m now considering dropping off one of these beauties on Meg’s doorstep with an Easter card with bunnies and smiley faces all over it. Little baby Jesus would be so proud. He comes back to life today, right?

Eggs in a Basket with Maple Bacon, Fontina & Chives

Ingredients

Serves 6
3 large russet potatoes, peeled
1/2 stick unsalted butter, melted
Kosher salt and freshly cracked black pepper
Nonstick cooking spray
6 slices bacon, about 2 1/2 ounces, chopped
2 tablespoons sorghum (or maple syrup)
6 eggs
1 cup grated fontina cheese
1 tablespoon chopped fresh chives

Directions
Special equipment: jumbo sized 6-cup muffin tin
Heat the oven to 350 degrees F.
In a food processor fitted with the grater attachment, push chunks of the potato through the chute to grate. Once all the potatoes are grated, put them into a piece of cheesecloth or a clean kitchen towel and squeeze to remove the moisture. Add the potatoes to a large bowl, stir in the melted butter and season well with salt and pepper, to taste.
Spray the muffin tin lightly with nonstick cooking spray. Press the grated potatoes evenly into the muffin cups being sure the potatoes go up the sides and a thin layer and covers the bottom. Bake until the top edges turn light golden brown and the potatoes are cooked through, about 45 minutes.
Meanwhile, in a small bowl toss together the bacon with sorghum (or maple syrup) and a few grinds of freshly ground black pepper. Set aside.
Remove the potatoes from the oven and gently crack an egg into each cup. Bake until the egg whites set but the yolk remains runny, about 6 to 8 minutes.
Remove from the oven and set the oven to broil. Top the eggs with grated cheese and put the maple bacon on another sheet tray. Broil both until cheese melts, and bacon crisps slightly, about 1 minute.
Top the eggs with chives and crispy bacon, sprinkle a little salt & pepper to taste and serve immediately.

Winner, Winner, Chicken Dinner



I looked the phrase up. Years ago every Las Vegas casino had a three-piece chicken dinner with potato and veggie for $1.79. A standard bet back then was $2.00, hence when you won a bet you had enough for a chicken dinner. Winner, winner...

I’ve never been to Vegas. And I’ve lived in LA for ten years. I don’t care about gambling at all, but I like the idea of winning my chicken dinner. I doubt they still do that, but I should go. I should at least check Vegas off my list.

What I do love, a lot, is chicken. For quite a few years now I have been mastering my whole roast chicken. It’s sort of my Sunday ritual. I get a chicken at the Sunday farmers’ market, or at Lindy Grundy, and roast it that night. In the past year, usually Maggie joins me as she’s generally around on Sunday nights. Fred has had one or two, I think. All of my peoples have had my roast chicken at some point or another. Like I said, I’ve been making it for years.


What I love so much about the Sunday Roast Chicken is how it’s really a whole week of chicken joy. Yes, it is dinner on Sunday night. But then it is sliced in sandwiches on Monday, chicken salad or tacos on Tuesday, and chicken stock on Wednesday, used both for soup bases and in our dog’s food for a little yummy, protein kick that lasts for the rest of the week. All from one, small chicken.

I’m not sure why, but unfortunately the chicken entrée is historically the pariah of the menu in most restaurants. It’s treated as the throw away, the cheapest option, the choice for the kids, the relative visiting from Iowa or the seniors at the table. I'm thinking about L.A. Story, the 1991 movie that Steve Martin wrote and starred in as Harris K. Telemacher. He attempts to land a reservation at an upscale L.A. French restaurant called L' Idiot (pronounced Leedy-O), only to be interrogated about his finances by the Fourth Reich Bank of Hamburg. "He can't have zee duck!..." the chef snorts. "He can have zee chicken."

There have always been exceptions, of course. Both Zuni Café's Judy Rodgers and French Laundry's Thomas Keller both have very famous roast chickens that are the stars of the menu. And lately, times they are a changing. Suzanne Goin has a Devil’s Chicken with Mustard and Bread Crumbs that blows my mind. Salt’s Cure often offers a half roasted chicken that is pretty tasty as well. But, to be shamelessly, brutally honest – I think mine is better. And the majority of the people that have had my roast chicken will agree.


On the night that I actually roast the chicken, something magical happens in the house. Regardless of the weather or time of year, it might as well be blustery and chilly outside and inside the whole house is warm and welcoming and smells like home. It feels like flannel and fireplace and jazz.

Although, I am ready for Summer in a big way, I cannot control whatever it is that is going on with our weather here right now (or ever, for that matter). And ever since Fred and I returned from San Francisco last week where we finally sampled the Zuni Café chicken, my wheels have been spinning. And so how fortuitous that we have had a cold, blustery, rainy weekend? And so last night, on a rainy St. Patrick’s Day, Fred and I built a fire, put the Pogues on the radio, and got to roasting a chicken – slow and low, that is the tempo. While that chicken cooked, we snacked on white anchovies, cheese, olives, soppressata, marcona almonds and bread. I also worked on a stock from the chicken feet. 


Then when it was all ready, and the house smelled like cozy, Fred and I sat down, poured ourselves a couple of glasses of garnacha and ate until we were sated. Heck, we even whipped up some sauteed broccoli rabe topped with a beurre blanc to add some green in the spirit of St. Patrick's Day (we are nothing if not festive). We saved the other half of the meal for Maggie to have when she returned home from working a double. And with the week ahead I look forward to all of the other dishes we create from that one little chicken. I'm going to shoot for a pasta tomorrow, I think. Or maybe Maggie can whip up some of her infamously spicy chicken lettuce wraps. Who knows, the possibilities are endless.

And, by the way, as I devoured my chicken dinner last night, I couldn’t help but say aloud, “Yep, mine isbetter”. Winner, winner...

Now, who’s up for Vegas?


A Sunday Supper:
Slow & Low Roast Chicken with Meyer Lemon and Thyme
with Roasted
Heirloom Carrots, Baby Potatoes & Cipollini Onions

Serves 4

Ingredients
  • 3½-4 lb chicken (free range/organic and fresh)
  • Salt and pepper
  • fresh thyme sprigs (or sage, or rosemary, or all of them)
  • large lemon, cut in 1/8 inch slices (Meyer lemons if available)
  • tbsp (1 stick) unsalted butter at room temperature, divided
  • 1 bulb of garlic
  • 1/4 lb mixed baby potatoes (yellow, red & purple)
  • 1 bunch heirloom carrots (the more colors the better)
  • 1/4 lb cipollini onions
  • 1/2 cup red wine
  • 2 tbsp olive oil


Special equipment:

A cast iron skillet that's about 3 inches deep, a pastry brush for basting; a board or platter for resting and carving; kitchen twine



Preheat the oven to 425 degrees.

Preparing the Chicken:
Rinse the chicken well (inside and out) and pat it dry with paper towels.
Tuck the wings up against the breast.
Poke tiny holes through the skin, everywhere with a toothpick or bbq skewer (this helps achieve super crispy skin).
Season 6 tbsp butter with 1 tsp fresh thyme leaves, salt & pepper and mix together.
Carefully slide your hand underneath the chicken skin, and gently move over the breast and leg meat to create space between the skin and the meat. You don’t want to tear the skin, so try to keep your hand as flat as possible and work slowly if necessary. Once you’ve created space, evenly distribute the butter beneath the skin.
Next, take 6 lemon slices and slide them underneath the skin, giving them a slight squeeze, and again evenly distributing them on top of the breast and thigh meat.
Take the remaining 2 tablespoons of butter, and gently rub it all over the outside skin of the chicken. Salt and pepper the outside of the chicken and inside the cavity. Drop 2 lemon slices, an onion, a bulb of garlic and any leftover herbs into the cavity, giving the slices a slight squeeze as you place them inside.
Tie the ends of the drumsticks together with twine. Place the chicken breast up in the cast iron skillet. Distribute the carrots, potatoes and onion around the bird. Drizzle the red wine over the top of the whole thing. Top chicken with sprigs of thyme. Finally, squeeze the juice of the remaining lemon pieces all over the top of the chicken.
Roasting the Chicken:
Place skillet in the oven, with the chicken legs pointed to the back of the oven.
After 30 minutes, lower the oven temperature to 350 degrees.
Check on the chicken every fifteen minutes or so, and when you see it beginning to brown quickly on top, baste the chicken with the pan juices. 
Roast the chicken for an hour, basting several times. The chicken will be done when the juices run clear and when the leg joint can be easily moved if wiggled. A thermometer inserted into the thick part of the thigh should read 180 degrees.
