Have this Cake. And Eat it, Too.


I would be remiss if I did not take a brief pause from the road trip adventure stories to talk a little bit about the fact that this is Thanksgiving week. Not only is this, like, my favorite holiday of all time (next to Christmas, of course), but for the first time in over a decade, I am back home with my family to share in holiday times together. It's pretty special.

Much has transpired since Fred and I landed in Richmond a little over a month ago. We've settled into our new place – for the most part. Still looking for window treatments for the kitchen, and a few odds and ends. We carved jack-o-lanterns for Halloween and had trick-or-treaters! It snowed. A little. I got a new bike that is super, extra cute. And, at both my dad and Fred's behest, a helmet that is decidedly less cute. We have explored old and new Richmond restaurants and cooking at home with equal frequency. And I have a few other extremely exciting tidbits to share. But not quite yet.

Because, you see, we need to talk turkey. Or, at least, Thanksgiving stuff (ing). Or, at least, fall, food holiday things. You wouldn't know it from checking in here, but I actually have been cooking up a storm since we arrived in Richmond. With the exception of the brief few days it took to replace the electric stove with a new, super awesome gas stove.

There have been pools of soups, piles of cakes, profusion of roasted chickens, pyramids of biscuits, plenty of cookies and a prosperity of granola. As the leaves on the trees have gone from full and green to the bright yellows, reds, oranges and browns, to almost barren, we have sampled almost all of the various, local farmers' markets, settled on our favorite and have become regulars.

I baked two cakes that seem particularly timely for this season, this week: a persimmon upside down cake and an apple-walnut cake. They both showcase peak seasonal produce items and were both remarkably delicious. However, A) the persimmon cake requires several more shots to get it just rightfor you and, B) Fred got way better pictures of the apple-walnut cake. And they do say, we eat first with our eyes, right?


For this particular version, I used a local Virginia apple, the Jonathan, which was a new one for me. I was told that Virginia Jonathan apples are the first red apples available in the Fall and are the ideal all-purpose apple. The farmer told me that they are equally delicious for snacking, cooking and baking – and are perfect for candy apples. I found them to be earthy and at the same time exotic with a unique blend of sweet and tart. To the eye they appear to be a standard red, but upon closer inspection, their skin combines light red stripes over yellow or deep red. If you don't happen to be in Virginia, which you're probably not, find apples that hold up under heat and balance sweet-tart flavor, like Honeycrisp, Mutsu, Pink Lady.

All walnuts ripen in the Fall, so they were the perfect nut choice. However, I used black walnuts as opposed to the standard English walnuts (which are actually Persian). Black walnuts are native to the U.S. - from California, actually - and have a bolder, earthier flavor than the milder and slightly sweeter taste of the English walnut. That's just my jam, is all. Your walnut, your prerogative.

Team effort alert: Fred made the glaze! Fred chose the lemon-vanilla variety to add a brightness to the rounded warmth of the flavors in the cake.

Now, I realize this comes to you the day before Thanksgiving. A day you're probably working on pumpkin and pecan pies rather than an apple cake. But just in case you're looking for that curve ball, that little glimmer of inspirato that deviates slightly from the norm this Thanksgiving, I tell you what - this cake came together beautifully and I can't think of a single thing I would change about the recipe we made. So, whether it's today, tomorrow, next week or next month (as long as it's soon-ish), make this cake. Have a slice after dinner with a glass of rum, or in the morning with a cup of coffee.

But you should definitely have this cake. And eat it, too.



Apple-Walnut Cake with Lemon Vanilla Glaze

(recipe adapted from this Southern classic)

Ingredients
1 1/4 cup all-purpose flour
1 cup whole wheat flour
3/4 cup granulated sugar
1 cup light brown sugar, packed
1 tablespoon ground cinnamon
2 teaspoons baking powder
1 teaspoon salt
1/2 teaspoon baking soda
3/4 cup vegetable oil
1 teaspoon vanilla
3 eggs
2 cups finely chopped peeled apples
1 cup chopped walnuts
Lemon Vanilla Glaze, below

Preparation
In a large mixing bowl, blend all ingredients except chopped apples and walnuts with electric mixer. Stir in chopped apples and nuts. Pour into a generously greased and floured 10-inch Bundt cake pan or tube pan. Bake at 325° for 55 to 65 minutes, until a wooden pick inserted in center comes out clean. Cool in pan for 15 minutes; turn out onto serving plate to cool completely. Drizzle with a vanilla glaze.

For the Lemon Vanilla Glaze
3 tablespoons lemon juice
1 1/2 teaspoons vanilla extract
3/4 cup+ confectioners’ sugar, sifted

Combine lemon juice, 1 1/2 teaspoons vanilla, and confectioners’ sugar in a small bowl and whisk until smooth, playing with lemon juice and sugar ratios until desired glaze consistency and flavor has been reached. Drizzle glaze over cake and serve immediately. Store cake in an airtight container at room temperature or in the refrigerator for up to 5 days.



Four years ago: Bouchon Beverly Hills

Hot Stuff in Nashville.


Nashville is hot stuff right now - it's quite the culinary darling, actually. In addition to our hefty list of restaurants to visit, one of my closest friends from LA, Chris, is from Nashville, and his family all live there. His brother-in-law runs a restaurant that I had been hearing about for some time.

Unfortunately for me, somewhere between New Orleans and Nashville I acquired one super nasty cold (that fortunately – and bizarrely – only lasted twenty-four hours). But we had reservations at Rolf & Daughters, and by gum, we were sticking to it. Even through a super hero dosage of cold medicines, I was able to appreciate the atmosphere, service, food and wine. As per usual, I ordered the chicken. But alas, we were not long for the world that night, and right after dinner, hurried back to the hotel to rest up for the next few days in town. And our next stop was going to be Chris' brother-in-law's restaurant; Fido.

In 1993, way before local, sustainable, organic, farm to table took root (think Pearl Jam-era), Fido was launched as part of the unofficial Bongo World and consists of a wholesale coffee roasting company and four cafes – each having a unique identity and menu. Their coffee is 100% organic and bought directly from Fair Trade small-farm co-ops. Fido is both coffee shop and restaurant, nestled in Nashville’s Hillsboro neighborhood. Well known for their fish tacos, the Local Burger and their sweet potato fries, and with dishes like a grilled Tennessee cheddar and country ham sandwich and baked cheese grits, Chef John Stephenson offers a fresh, local menu which simultaneously breaks away from, and pays homage to, traditional southern fare.

Fido got its name from the pet store that previously occupied their space and is, no surprise here, dog-friendly. This was a huge plus for us traveling with two of our canine boys, Eduardo and Byron. Right around lunchtime on a recent weekday, the four of us laid claim to one of the precious tables outside before we went in to peruse the menu and place our order. And out popped Chris' brother-in-law, Chef John himself – lucky for us he was manning all of the food coming out of the kitchen that day. So we ordered a lot: the Local Burger with sweet potato fries, the last of the season heirloom tomato salad with fresh figs and blue cheese, tomato-basil soup with focaccia, grilled salmon with polenta, mache, berries and feta, the special plate of the day which had a sampling of a couple Southern staples: green bean casserole, succotash, and finally a hefty slice of pumpkin cheesecake.


Their most popular dish is the Local burger with sweet potato fries, is fantastic. It's made with Tennessee beef and local lamb, Swiss cheese, pickles, onion strips and a zesty sauce. The meat was seasoned with a beautiful blend of spices. The bread was an ideal texture and there wasn't too much of it to eclipse the meat. The sweet potato fries were grilled, made from sweet potatoes on site, were tender, soft and delicious.


We saw John and his family quite a bit during our three nights in Nashville. We hit the hotspots and the nightspots and the old tried and true spots. We heard rad, live music, went to a farmers' market and I even bought a beautiful, new handbag from a local designer that Chris' sister, Katherine, turned me on to. But culinarily, two things in Nashville really stood out to me; Fido and another joint Katherine and John sent us to: Hattie B's Hot Chicken. It was my first Hot Chicken experience and it was memorable. We sat outside (again with the pups) and stared down at our massive platters of Nashville-style fried chicken: marinated in buttermilk, breaded, sauced using a paste that had been heavily spiced with cayenne pepper, then pan-fried and coated in 'damn hot' sauce. It is served atop slices of white bread with pickle chips with traditional Southern sides like collards, black-eyed pea salad, fried okra, pimiento mac n cheese, and tea so sweet it hurts your teeth. Fred, of course, ordered his hot chicken as hot as he could and was on fire after two bites in. But we loved it. We felt so Nashville.


The food we experienced in Nashville – all of it – was solid, satisfying and fresh. We appreciated that we were also able to experience the new school and the old school. None were necessarily bells and whistles places. More, I'd say, salt of the earth, with just the right amount of salt.


We use this salsa for many things at Fido, but mainly it is the star ingredient in our Huevos Cubano.  Add it to soft scrambled eggs, with some nice sharp cheese and you have a wonderful breakfast item. Place in a blender with some of your favorite hot sauce and you have a tangy green hot sauce. Serve on pork loin, tacos, or just eat with chips!

Fido Roasted Tomatillo Salsa

Ingredients

1 red onions finely diced
1 poblano finely diced
1diced jalapeño
1 lemons juice and zest
1 tablespoon garlic minced
½ cup chopped cilantro
¼ cup chopped parsley
2 teaspoons cumin
1 teaspoon paprika
1 teaspoon salt
1 teaspoon ground coriander
½ cup olive oil
¼ cup rice wine vinegar
2 teaspoons brown sugar
salt & pepper to taste
4 quarts tomatillos

Directions

Preheat oven to 400F.  In a large bowl filled with water, place a few tomatillos at a time in and remove stems and paper husk from tomatillos. Place on large sheet pan. Place the sheet pan with all tomatillos, a little olive oil, and a pinch of salt in the oven and roast for 15-20 minutes until soft. Remove and cool for 10 minutes.

Place the tomatillos in a blender and pulse until chunky. Pour into large mixing bowl.
Put all other ingredients in bowl with tomatillos and mix together until combined. Taste for salt and pepper.

Movin' On - New Orleans City Limits.


Another long day in the car making it the rest of the way through Texas and into some more familiar territory. Things went from arid to humid pretty fast as we rolled into the swamp lands of Southern Louisiana. And, although I had been enjoying myself immensely, wide eyed and fascinated with the new places I was experiencing, I was eager to return to climates, time zones, cities and cuisines that were more familiar. Louisiana was the first stop on our trajectory that fit the bill. Hello, N'awlins!


Sure, we had a list of restaurants to visit, but the highlight of this stop was to be an evening with my really good friend, Sarah, and her family. Sarah moved to New Orleans right after college and fell in love with it. She remained even after Katrina hit, and now lives in the Lower 9th Ward with her husband, Simon, little boy, Robin, and a host of cats. Both Sarah and Simon are educators: he teaches the second grade; she is Director of the Greater New Orleans Writing Project and an English instructor at the University of New Orleans. They are also hugely active in the politics of the City and their own neighborhood.

Needless to say, they're quite busy.


So, Fred and I decided to spend a day foraging for all of the local ingredients to make a big batch of chicken and smoked andouille gumbo for Sarah and family. After calling ahead to find out which kitchen 'fossil fuels' they had on hand (oil, rice, flour, cayenne pepper, etc.), we threw back a couple of cups of chicory coffee at our bed and breakfast, and hit the streets of the Big Easy. We picked up our produce - onions, celery, bell peppers, green onions and parsley – at the historic French Market in the Quarter. Then it was off to one of my favorite places in the city, the Cochon Butcher, to pick up our chicken and andouille sausage. We also grabbed some boudin to grill up and have as snacks for all during the long gumbo-making process. After a quick stop at a small, corner market to procure the file powder, we had only one last stop: wine, cheese and bread. That means Bacchanal. Sarah and Simon were actually married at Bacchanal and I was their wedding photographer. How could I not pick up the most important provisions there?


We arrived at their house a skosh early and busted in on Simon taking a shower. Sarah was apparently at a doctor's appointment and was running a few minutes late. While Simon finished up, Fred and I began unloading and getting organized. We prepared a cheese plate and opened a bottle of wine. As the cork popped from the bottle, Sarah walked in. Jokingly I asked, “Did you get a clean bill of health from the doctor?”

“Yes. I'm pregnant,” she replied. At first I thought she was putting me on, but as I looked from Simon to Sarah then Sarah to Simon, I knew they knew. It was for real. I was so filled with emotion and happiness – and thrilled about my really great timing to be there right at that moment.


We cooked and talked and snacked and sipped into the night while listening to classic Creole music. By the time the gumbo was ready it was late, but that was just fine. Simon ate with us while Sarah gave Robin his bath. Sarah ate with us while Simon tucked Robin into bed and then headed that way himself. We could tell it was Sarah's bed time as well. As I mentioned, this is one busy family.

Dinner was delicious. Sarah and Simon both loved the gumbo. The roux, the spice level and the consistency were all on point from the perspective of these New Orleanians. And though we were in a city with some of the best restaurants and night clubs in the country, if not the world, I couldn't think of a better place to be than in that little house by the levee in the Lower 9thWard with Sarah and her family.


Post script: I just spoke with Sarah asking permission to mention her doctor’s appointment. She approved and said she heard the baby's heartbeat a little earlier in the day. Insert smiley face, here.


Chicken & Andouille Gumbo
(recipe adapted from Emeril Lagasse)

Serves 6-8

Ingredients
1 tablespoon plus 1/2 cup vegetable oil
1 pound andouille sausage, cut crosswise 1/2-inch thick pieces
4 pounds chicken thighs, skin removed
1 tablespoon Creole seasoning
1 cup all-purpose flour
2 cups chopped onions
1 cup chopped celery
1 cup chopped bell peppers
1 teaspoon salt
1/4 teaspoon cayenne
3 bay leaves
9 cups chicken stock
1/2 cup chopped green onions
2 tablespoons chopped parsley leaves
1 tablespoon file powder

Directions
In a large Dutch oven, heat 1 tablespoon of the vegetable oil over medium-high heat. Add the sausage and cook until well browned, about 8 minutes. Remove the sausage with a slotted spoon, drain & set aside.

Season the chicken with the Creole seasoning and add in batches to the fat remaining in the pan. Cook over medium-high heat until well browned, 5 to 6 minutes. Remove the chicken from the pan, let cool, until ready to use.

Combine the remaining 1/2 cup oil and the flour in the same Dutch oven over medium heat. Cook, stirring slowly and constantly for 20 to 25 minutes, to make a dark brown roux.

Add the onions, celery, and bell peppers and cook, stirring, until sweating, 4 to 5 minutes. Add the reserved sausage, salt, cayenne, and bay leaves, stir, and cook for 2 minutes. Stirring, slowly add the chicken stock, and cook, stirring, until well combined. Bring the mixture to a boil. Reduce the heat to medium-low and cook, uncovered and stirring occasionally, for about 1 hour.

Add the reserved chicken to the pot and simmer for 1 1/2 hours, periodically skimming off any fat that rises to the surface.

Remove the pot from the heat. Using a slotted spoon, remove the chicken thighs from the gumbo and place on a cutting board to cool slightly. Remove and discard the bay leaves. Pull the chicken meat from the bones and shred, discarding the bones and skin. Return the meat to the gumbo and stir in the green onions, parsley, and file powder.


Serve over white rice.



Three years ago: Pecan Shortbread

Less is More, More or Less.


I've always heard that it's wise to stop and check yourself in the mirror right before you walk out the door and remove one element of your outfit; the hat, the pin on your jacket, something. Since I am terrible at accessorizing – I never wear hats, belts or pins on my jackets or sweaters. Hell, I hardly even stray from solid colors – that concept seems to be non-issue with me in the fashion department.

The kitchen department, however, is another story entirely. I like to throw a lot of different elements into most of my dishes. Admittedly, they can get very busy. I think it's because A) I always try to move ingredients through my kitchen with regularity, hence adding that shisito pepper or a splash of orange thyme-infused vinegar before it goes bad, and B) I'm very curious about flavor and texture combinations and really like to experiment. And let's all admit it; neither of these are bad intentions or bad applications.

But when I think about the chefs and the foods that most inspire me, and when I think about a quote I have mentioned here countless times, about simplicity being the hallmark of genius, I wonder why I don't practice it more often in my kitchen.

I mean, must I add shiso butterto a grilled steak? Do I really need to add sherry to tuna casserole? Is it necessary to make my own almond meal to add to a classic pie crust in lieu of sticking to the straight-up all-purpose flour? The answer is, of course, no. I will say, though, that while I have experienced my share of flops with these twists, I have stumbled upon great success equally as often.

But at Summer's peak, when all of my very favorite produce has hit its stride and is as perfect as it could ever possibly be, why gild the lily? So lately, I have had a lot of tomato sandwiches for lunch. That means, soft white(ish) bread, good mayonnaise, salt, pepper (generous portions of all) and big, thick slices of tomato. That's it. No basil, no bacon, no lettuce, nothing to distract from the celebrity of that tomato.

And corn. During this time of year just cut it from the cob and eat it raw with a little salt and pepper. Maybe even toss a little fresh tomato in there, too. Keep it simple. Listen to the corn sing her (his?) solo. Less is more.

More or less.

Which brings me to the bowl full of fresh, ripe avocados on the kitchen counter staring me down a few days ago. I have really been wanting to make that whole egg-baked-in-the-hole-of-the-avocado-half thing I've been seeing all over Pinterest and whatnot. But then I stopped myself... 'Don't cook it, for crying out loud. Keep it simple.' And so I listened to me: I kept it simple and I kept it raw. I made a cold soup and I let the avocado sing. And her voice was smooth, soft, clear and bright. Kind of like Sade, actually.

For now I think I'm going to keep on keeping it simple in the kitchen, but try to incorporate hats into my wardrobe.


Chilled Avocado-Cucumber Soup with Buttermilk

Serves 2-4 (depending on whether it's served as entree size or appetizer size)

Ingredients
1 ripe avocado
½ cup buttermilk
1/2 cucumber, peeled and seeded, plus some julienned pieces for garnish
1 tablespoon cilantro, plus some sprigs for garnish
1/4 of a shallot, diced
¼ tsp cayenne pepper
Juice of half a lime
½ cup – ⅔ cup water
Sea salt & black pepper
Toasted pepitas for garnish


Directions
In a blender mix together the avocado, cucumber, buttermilk, cilantro, salt, shallot, cayenne pepper, lime juice, ½ cup water. Blend until completely smooth and then check for consistency. If you want a thinner soup add more water.

Pour the soup into two glasses or one bowl. Cover with plastic wrap and chill in the refrigerator for at least one hour before serving.

When the soup is ready to serve, dice the remaining avocado. Garnish the soup with avocado chunks, julienned cucumber, pepitas, cilantro, salt and pepper. Serve immediately while it is still cold.






We Got the Beet.


Growing up we had a Patrick Nagel print hanging on a wall in the dining room. It's exactly the one you're thinking of. Or maybe not. A lot of them have that woman in them. You know, the woman on the cover of Duran Duran's Rio. I never much cared for it. Oh, I loved the album, just not the print hanging on the wall in our dining room. My dad really liked that whole style; that very 80s, minimalist, pastel thing. My dad really liked the 80s, in general. And the 80s liked my dad. They made sense together. He was newly single, very handsome, a great cook, liked to travel, play tennis, hang glide and party. And, of course, he was into the art.

Patrick Nagel was born in 1945. My dad was born in 1945. Patrick Nagel's work was greatly inspired by and directly descended from Art Deco. And Art Deco is, without a doubt, my dad's favorite visual design style. His house and work are both filled with furniture and light fixtures from the Deco era.

Unlike my dad, who is alive, healthy and happy, Patrick Nagel died at the peak of his life and career, at thirty-eight years of age. Strange as it sounds, immediately after participating in a fifteen minute celebrity 'Aerobithon' to raise money for the American Heart Association, Nagel was found dead in his car. From a heart attack. The Reagan Era was a bitch.

This past weekend I was in a fun, food frenzy in the kitchen. I just wanted to make stuff. I see some rhubarb. Let's make a cake! I see leftover coffee and a pork tenderloin. Let's make a marinade and grill stuff! I see beets and carrots. Let's make a borsch! I see Greek yogurt and horseradish. Let's make a garnish for the borsch! You get the idea.

The borsch came out so bright, saturated, rich and vivid that it immediately reminded me, visually, of Pop Art. Flashes of bright colors and sharp shapes from the works of Warhol, Lichtenstein, and yes, Nagel rushed through my head. Fred agreed, but his head was swimming with images of Bauhaus and Kandinsky. Which is totally appropriate for cold borsch as all three are/were Russian! And thus our Sunday unfolded into the eighties-inspired photoshoot of borsch. I did very little styling on this shoot. Fred really ran with it on his own. I picked the soundtrack: The Go-Go's. Right around the time that Nagel was at his peak, so were The Go-Go's. And right around that time I participated in a lip syncing 'class' at Summer camp. And our group's piéce de résistance was, you guessed it, 'We Got the Beat'. I was Belinda Carlisle and my tennis racket was my guitar. Though I'm pretty sure Belinda Carlisle did not actually play the guitar. Man, I miss my Swatch.

The bosrcht was quite good. A success. It was rich and bold with a rear kick of subtle heat from the white pepper and the horseradish yogurt. It was complex on the palate but finished very neatly. This innocent little soup also made a morbid mess of anything that came near it. We had so much left over that we took it up to a Memorial Day BBQ in the canyon. I think I saw one person try it. Who can blame them? At a cookout abundant with steaks, lamb, burgers, sausages, corn salad, chips, banana crème pudding and booze, who wants to deal with a bowl of borsch?

Ah, well. It's not for everyone. People kind of either love it or hate it. I'm not certain what Patrick Nagel liked to eat, but if he's anything like my dad, borsch was not high on the list. 

Me, I'll take a bowl any time.


Chilled Beet Soup with Horseradish Yogurt

Serves 4-6

4 cups (or more) chicken stock
1 pound beets, peeled, chopped
1 cup chopped onion
1 cup peeled chopped carrot
2 teaspoons chopped garlic
1 teaspoon sugar
1 bay leaf
2 tablespoons horseradish
A handful of fresh chives, trimmed
Greek yogurt
Generous salt & white pepper to taste


Combine 4 cups broth, beets, onions, carrot, bay leaf and garlic in medium saucepan. Bring to boil.

Reduce heat to medium-low; cover and simmer until vegetables are very tender, about 35 minutes. Cool slightly. Remove bay leaf and puree in blender in batches until smooth. Transfer to bowl.

Thin with additional stock if soup is too thick. Mix in sugar. Season with salt and pepper. Cover and chill until cold, at least 4 hours or overnight. (Can be prepared 2 days ahead. Keep refrigerated.)

Ladle soup into bowls.

In a small bowl, mix horseradish and yogurt. Put a dollop of horseradish mixture in the middle of the bowl of soup and top with chives.




Pucker Up.


I've been thinking about the handful of fruits and vegetables that we use in cooking but would never just pop into our mouths, fresh. I mean to say, foods that require a significant transformation for them to be edible, like olives, rhubarb and cranberries. Olives have to be fermented or cured, rhubarb has toxic leaves and is almost always macerated then baked. And cranberries, have you ever tried to just eat a cranberry? Not pleasant. And acorns. It has never even occurred to me to eat an acorn. Yet, it is a nut. Squirrels eat acorns. And throughout history acorns have been used, ground up to make grain flours and even used as a coffee substitute for soldiers in both the Civil War and World War II.

It fascinates me to no end to think of the trajectory of how we, the people, figured out how to make these things (and all things) edible. 'Well, Hyram there died when he ate that acorn. So let's try and soak it in another poisonous substance, LYE, and give it another go. Yes? Rodney's okay? Alright, good to hear because this would make a lovely flour with which to create a noodle.'

Rhubarb. It comes into season in the Spring and everyone gets all aflutter about it. I'd say about ninety percent of the time you'll find rhubarb paired with strawberries and baked into a pie or a crumble. It's bright, tart and guaranteed to make you pucker up. My favorite bit of information I stumbled across in my rhubarb research: In British theatre and early radio drama, the words "rhubarb rhubarb" were repeated for the effect of unintelligible conversation in the background. This usage lent its title to the 1969 film Rhubarb and its 1980 remake Rhubarb Rhubarb. I guess it's just about time for someone to make Rhubarb, Rhubarb, Rhubarb.

I haven't played with much rhubarb in my day. I could probably count on one hand, the number of times I've purchased any. And so, last time I found myself staring at produce at the market looking for inspiration, I grabbed a handful of those awkward, glossy, orangey, reddish-pinkish stalks and got to thinking. Even though I entertained some compelling arguments to go the savory route, which is generally more apropos for me, I knew pretty quickly that I was going to go sweet.
But a muted, subtle sweet.

Time to bake.

Though I am no cake connoisseur, I have always really loved coffee cakes and pound cakes. They are less cake-like and more akin to very sweet breads (not sweetbreads, mind you – wildly different things). Interestingly, both are also Southern. To this day, I would eat the Tasty Cake version of a coffee cake or the Sarah Lee version of a pound cake in a hot minute. The most beguiling part of coffee cake is the crumb on top. Those brown sugary, buttery grape-sized chunks on top of the cake that are toothachingly, cloyingly sweet – that almost requires a swallow of coffee to allay the sweetness – that's my jam.

And what better an element to cut that sweetness than the tartness of rhubarb?

I was right. When my cake cooled, we all dug in. The rhubarb, which had been macerated prior to baking, was mellow and gently sweet, but maintained it's pert zing, adding an ideal offset to the sugar bomb crumby coffee cake. Well, that and a cup of hot coffee.

And no one even had to die in the process. But Hyram, we certainly do thank you.



Rhubarb Crumb Coffee Cake
(recipe adapted from NYT Dining, June 2007)

Serves 8


For the rhubarb filling:


1/2 pound rhubarb, trimmed

1/4 cup sugar

2 teaspoons cornstarch

1/2 teaspoon fresh, grated ginger

For the crumbs:


1/3 cup dark brown sugar

1/3 cup granulated sugar

1 teaspoon ground cinnamon

1/2 teaspoon fresh, grated ginger

1/8 teaspoon salt

1/2 cup (1 stick or 4 ounces) butter, melted

1 3/4 cups all-purpose flour

For the cake:


1/3 cup plain greek yogurt

1 large egg

1 large egg yolk

2 teaspoons vanilla extract

1 cup all-purpose flour

1/2 cup sugar

1/2 teaspoon baking soda

1/2 teaspoon baking powder

1/4 teaspoon salt

6 tablespoons softened butter, cut into 8 pieces.

Preheat oven to 325 degrees. Grease an 8-inch baking pan. For filling, slice rhubarb 1/2 inch thick and toss with sugar, cornstarch and ginger. Set aside.

To make crumbs, in a large bowl, whisk sugars, spices and salt into melted butter until smooth. Then, add flour with a spatula or wooden spoon. It will look and feel like a solid dough. Leave it pressed together in the bottom of the bowl and set aside.

To prepare cake, in a small bowl, stir together the yogurt, egg, egg yolk and vanilla. Using a mixer fitted with paddle attachment, mix together flour, sugar, baking soda, baking powder and salt. Add butter and a spoonful of sour cream mixture and mix on medium speed until flour is moistened. Increase speed and beat for 30 seconds. Add remaining sour cream mixture in two batches, beating for 20 seconds after each addition, and scraping down the sides of bowl with a spatula. Scoop out about 1/2 cup batter and set aside.

Scrape remaining batter into prepared pan. Spoon rhubarb over batter. Dollop set-aside batter over rhubarb; it does not have to be even.

Using your fingers, break topping mixture into big crumbs, about 1/2 inch to 3/4 inch in size. They do not have to be uniform, but make sure most are around that size. Sprinkle over cake. Bake cake until a toothpick inserted into center comes out clean of batter (it might be moist from rhubarb), 45 to 55 minutes. Cool completely before serving.

A Project, of the Sweetest Kind.



My word! Everything is so crazy right now. Work has hit some random fever pitch, my chores have stacked up and are looming, I haven't had any time to make my weekly batches of pimiento cheese or deviled ham salad for Lindy & Grundy, Fred and I are going on a vacation tomorrow, which means my packing agita began days ago, and, oh my GAWD - I had to remove a large tick from a dog (ticks are one of THE scariest things in the whole world to me). 

Mercifully, there is always light and growth. Right now those very elements are springing forth in the literal sense: the sun is bright and strong, and all things produce are exploding in my garden and at the market. The bounty of all of the new, and unusual produce, has helped to quell the lack of carbs allowed in my world. Because when things feel this funky, I really just want a big bowl of pasta served with a massive chunk of bread on the side. In their stead I have eaten many 'creative' salads, and an inordinate amount of cheese and almonds. The cheese and almonds are the closest snacky thing I have found to satisfy my salty, crunchy cravings (read potato chip desperation).

When in need of soothing I go grocery shopping; it is my therapy – it grounds me. Whenever I stumble across a brand new food anything, I buy it. And I rarely have a clue what I will do with my new Precious, even by the time I'm back in my kitchen. So last week, while aimlessly navigating each aisle of Whole Foods, mostly just to pick up some healthy lunch snack while out running around, I was suddenly face to spear with bright purple asparagus. And this, my friends, I had never seen before.

Thus, a project was born. Of the sweetest kind.


I raced home, put on my cozies, poured a glass of Moscato (needless to say, wine has been ushered back into diet headquarters) and sat down to poke through my brand new copy of Vegetable Literacy for an idea. I wanted something simple. I wanted something clean. I wanted something light and bright and fresh. And I wanted to incorporate the sixty-two degree egg that I have been besotted with of late. I read that purple asparagus (asparaguses? asparagi?) have less fiber and more sugar than other varieties. So I knew I wanted to bring an acid onto the palate with this dish. And things just all came together. As things tend to do. Or not.

This is a fun and versatile dish. You could serve this with brunch, lunch or dinner. It – at least the asparagus – could be served cool, with warm egg, to play on temperatures, or have the whole thing warm, depending on your whimsy. This arrangement creates a wonderful journey for the eyes, with the bright colors and textures. The aggressive spears of asparagus topped with the soft, sensual, gooey ephemeral egg. The little drizzle of the vinaigrette add that tiny pop of pink. That and the smattering of the bright green bits of basil keep your eyes busy for longer than you'd expect.

And theydo say, 'you first eat with your eyes', no?

Here, in the apex of Spring, I highly encourage everyone to plant something right now. Whether you are able to cultivate a garden in the ground, in containers, or you have a few little plants of basil, thyme or oregano on your kitchen windowsill – or how about Sea Monkeys? Remember them? Watch it (or them) grow and use it to enhance your day, your spirit and your food.



Roasted Purple Asparagus, Red Wine Vinaigrette, 62 Degree Egg

Serves 2

1 pound asparagus
3 tablespoons plus 1 teaspoon olive oil, divided
Sea salt
Freshly ground black pepper
1 teaspoon coarse prepared mustard
1 tablespoon red wine vinegar
2 eggs 62 degree or soft poached
A few basil leaves, chiffonade

Preheat oven to 400 degrees. If the asparagus spears are thick, peel the stalks and cut off the tough stem ends. If thin, snap off the bottom where it breaks easily and trim the ends.

Toss the spears with 1 teaspoon olive oil to moisten, season well with salt and pepper, and lay them in a single layer in a baking dish or sheet pan. Roast the spears, turning them once every 10 minutes, until tender and colored in places, 20 to 30 minutes.

Make the vinaigrette. Combine mustard, vinegar and 1/4 teaspoon salt, then whisk in the oil. 

Lay the asparagus on two plates. Top with eggs. Spoon the vinaigrette over all and finish with freshly ground black pepper. Delicately scatter basil leaves across the plates.

Blind Melon


At a market, recently, I stumbled upon a basket of melons with identifying signage that read Sugar Queens. I’m not really a melon fanatic, but I snatched one up quicker than a bell clapper in a goose’s ass. Why? Because it said Sugar Queen. No, I had never heard of this variety of melon, nor did I have a clue what it was or what it would taste like. But the fact that it was called Sugar Queen made me all chirpy. I figured it must be a precious and exultant melon.

I don’t know much about melon selecting. I’ve seen people smell them and shake them, gently and/or hard. And I’ve seen folks hold them up by their ears - as if they had a conch shell and were listening for the ocean. But from this basket of Sugar Queens, I simply selected the one that spoke to me. It was not the largest or smallest or roundest or oblongest. But it felt confident and firm in my one hand and it had a little bit of a blemish on one side of its netted skin. It smelled so sweet, almost candy-like, almost too sweet. She was now my Sugar Queen.

When I got home and began to unload and put all my groceries away (which is one of my all-time favorite things to do) I put Sugar Queen on the counter and briefly wondered what I might do with her. After a day or so I very well could have forgotten about her but Sugar Queen would not let me. Her perfume was so strong and floral that each time I walked by I was reminded that I needed to find a special something or another to do with her. I totally get it. Us, women... we do like our attention. After a few days, and especially these crazy hot ones we’ve been having, I began to get nervous she would become too ripe to do much with, so, just in case, I put her in the refrigerator. There she continued to acost both Fred and myself with her eau de melon each time we opened the refrigerator door. And her scent even lingered in the kitchen for a few moments after closing the door.

It was time for me to figure it out. The only style in which I have eaten melons, historically, is the way my mom served them to me as a girl: a wedge, with the rind attached, scored in bite-sized cubes, with the cut going down to the rind, making it easy to eat with a spoon. It was a breakfast thing or a snack thing. I occasionally eat some honeydew melon with a sprinkle of salt, or cantaloupe wrapped in prosciutto. I am quite fond of watermelon used in salads with heirloom tomatoes, red onion and feta cheese. But that is pretty much it for me and my melons. After all, it is fruit.

And then I realized - what do I always do when I don’t know where to turn with an ingredient? And, for crying out loud, what have I not made in far, far too long? Soup! Ah, but this one is a challenge. It’s Sugar Queen. 
 

When I googled Sugar Queen, not tons came up. Wikipedia didn’t even have a page for her, for godssake. But I did notice a promising recipe from 2010 from the Seattle Times. An heirloom melon gazpacho. And lo and behold, that heirloom melon called for in the recipe was my Sugar Queen. In total me form, I only glanced at the ingredients to make sure I had everything I needed. I did not, however, actually read through the entire recipe. It’s a terrible habit of mine that bites me in the arse more often than not. Had I read through the recipe I would have noticed that it was very poorly written with steps and ingredients missing in the directions. It even had an added ingredient that was not listed in the ingredients. So what ended up happening was some pretty awesome riffing and improvising. A lot of tasting and adding this and that and some of that over there and a little more of this. At one point I couldn’t figure out why the vinegar was so strong and recalled that white wine was listed in the ingredients but never mentioned in the directions. So I added the white wine and it completely balanced the acid of the vinegar - and without making the soup taste like white wine at all. Science, I tell you.

What I came up with is pretty great. It’s sweet, yes. But it’s nuanced and complex. It’s lovely and also smart. It has notes that dance around on the tip of your tongue that are simple yet unrecognizable. It’s seemingly obvious to describe but right when you try, the words float right out of your consciousness, rendering you into a stumped stutter. It smells really beautiful. Just like us women...


I think this soup is best served as a small portion, perhaps even as an amuse bouche.
 
Heirloom Melon & Tomato Gazpacho
Serves 6
Ingredients
2 cups cubed French baguette, all crusts removed, and cut into small cubes (about 1 baguette), divided
1/4 cup white wine
2 tbsp Champagne or sherry vinegar
4 cups cubed, peeled and seeded melons (preferably heirloom, such as Sugar Queen, butterscotch, Ogen, Ananas)
1 cup chopped, ripe tomatoes
1/4 cup diced shallot
1 tbsp chopped, fresh chives
2 tbsp purple basil
1/4 cup extra-virgin olive oil, plus extra oil for frying the croutons
3 dried bay leaves, ground to a powder
1 tsp dried sage
1 tsp celery salt
Sea salt & fresh cracked black pepper to taste
Walnut oil to garnish
1/2 cup ice cubes, or as needed


Directions
In a bowl, soak 1 1/2 cups cubed bread in the vinegar.
Meanwhile, using a blender or food processor, purée the melons, tomato, shallot, chives & basil. Add the soaked bread and vinegar to the food processor and purée until completely smooth.
With the motor running, slowly add the wine, one-fourth cup olive oil, then the ground bay leaves. Taste, and adjust the seasoning with sage, celery salt, sea salt & pepper.
If the soup is overly thick, add a few ice cubes and purée until the desired consistency is achieved. Taste and adjust seasoning with salt and vinegar.
Transfer the soup to a nonreactive metal bowl and chill before serving. This makes about 4 cups soup.
While the soup is chilling, fry the garnish. Pan-fry the remaining cubes of bread in a hot skillet with a little olive oil until evenly toasted and golden brown. Season to taste with a light sprinkling of salt and.
Serve the soup, garnished with a few croutons and a drizzle of walnut oil.
