Field of Dreams


While I am patently aware of the dearth of new content on F for Food, it nonetheless hit me hard to receive an e-mail last week with an offer to buy the blog. Someone clearly took notice of the lack of activity and exhibited interest in taking it over and 're-aliving' it, so to speak.

Well folks, F for Food isn't for sale. Even though I have not been able to find the time to put the proverbial pen to paper consistently for over a year, I really, really plan to. I think about it all the time. Not only did this blog keep me relatively sane, relatively grounded, during some very bumpy periods for half of a decade in LA, but it has also been huge part of my identity, my creative outlet, my escape, my happiness and, now, my new career.

My New Career.

If you build it, they will come.* Whether you are referring to a ghost to play catch with in a field of dreams or a version of yourself that you are projecting, creating or recreating, I find this mantra, if you will, to be true. Sort of a fake it 'til you make it kind of thing, you know?

First jobs tend to always be this way. Waitress? Gotta start somewhere. Just fib a little bit in the interview, say you've done it before. At that little cafe. They're closed now, though. You get the job, and after a few months, you're Flo. In my own life I have found myself in this field of dreams scenario quite a few times. It seems that I usually hit the ground running and end up taking off just fine. A few hiccups here and there, of course, but that is to be expected. (Dig the mixed metaphors, here.)

Upon moving to Richmond I decideda few things. One of them was that I was going to be a Food Stylist to Fred's Food Photographer. Or rather that we already were. So we had cards printed up saying as much. Done.

Cut to a few months back, standing in a studio with Fred, each of our assistants, one for styling and one for photography, a production assistant scuttling around, and a cluster of people from The Martin Agency looking over our shoulders as we style and shoot a holiday ad campaign for Oreo Cookie Balls. Surrounded by dozens and dozens of said balls for days with little rest and trying to care for a six week-old baby, you can imagine the slap-happy-terrible-taste ball jokes flying around.

And then jump ahead to a week ago: I'm alone – that is, sans Fred, standing in a frozen yogurt shop, after hours, filled with twenty people, cast, crew and clients, along with truckloads of cameras, equipment and gear for a Hamilton Beach blender video shoot. I was The Stylist.

In addition to these high falootin' gigs we've kind of become the go-to food photographer/stylist team for our local magazine'sfood spreads and we even spoke at a local event recently, giving a how-to workshop on food photography and social media. Like, suddenly we're the experts, for crying out loud!

If you build it they will come.*

So, between all that stuff and our five month-old baby girl, the blog has gotten a little dusty. But not forgotten! I have been bugging Fred every week about us needing to get new work up here, and we keep saying we will. Life will regulate again at some point – I know it will. Bikes will be ridden. Books will be read. Maybe even a movie. In a theater.

A couple of days after the offer-to-buy email, I received an email with an offer to publish sponsored content. Us bloggers receive these with some frequency and with varying degrees of appeal, but this one caught my eye for a number of reasons. First of all, I know and respect the source. Secondly, the company, Rakuten, to be sponsored was new to me and I was pleasantly surprised with its bounty of offerings. Third, the post was to be Thanksgiving-themed.


That's right! It's Thanksgiving!

How could this have happened? How could it be thisclose to Thanksgiving with my hardly given it a thought? I am a food writer! A food stylist! This is thefood holiday! Even though I have never had a tradition for this holiday, that is I have never really done the same thing twice, I always host and always cook. A lot. Except this year. This year Fred, Emerson and I will be flying back to LA. On Thanksgiving day no less. I don't know what we will be doing or what we will be eating. I don't even know if Emerson will allow for much anyway, it being her first flight, her first new time zone.

At best we will be able to make a humble, yet noble, side dish for the holiday. So we turned to the beautiful new cookbook Heritagefrom fellow Virginia native, Sean Brock, for inspiration. We didn't have to look far. He had us at Farrotto. To be specific, Farrotto with Acorn Squash and Red Russian Kale. This dish is all kinds of Autumnal, it's healthy and with kale and farro, it's super IN. A perfect winner of a choice for Thanksgiving, if I do say so.

It will be interesting to return to LA, to my old friends, my old stomping ground, as a new mother with a new career, a new life. It will be interesting to head right into a Thanksgiving I have no concept of and no control over. I guess Thanksgiving's tradition for me is its non-tradition. That works. Thanksgiving is the holiday that I am constantly projecting, creating or recreating. If I build it IT will come.*

Farrotto With Acorn Squash and Red Russian Kale
(Recipe from Heritageby Sean Brock)


Servings: 6 as a side or 4 as an entree

Ingredients

Acorn squash
1 small acorn squash (about 2 1/2 pounds)
1 tablespoon unsalted butter
1 1/2 teaspoons kosher salt
Scant 1 teaspoon freshly ground white pepper
1 cup vegetable stock
1 bunch Red Russian or other kale (about 3 pounds)

Farrotto
2 quarts vegetable stock
1 1/2 teaspoons canola oil
4 tablespoons unsalted butter
1/2 cup diced white onion
1 garlic clove, sliced paper-thin
1/2 cup dry white wine
1 cup freshly grated Parmigiano-Reggianocheese



Directions

For the squash:

Preheat the oven to 425°F.

Cut the squash in half. Remove and discard the seeds and rinse the squash under cold water. Place the squash cut side up on a rimmed baking sheet. Divide the butter between the two halves and sprinkle with the salt and white pepper. Roast the squash for 35 minutes, or until fork-tender.

While the squash is roasting, prepare the kale: Remove the stems and ribs from the leaves. Make stacks of the leaves, roll them into cylinders, and cut them into very thin ribbons. Wash the kale in a sink of cold water, changing it several times, to remove any sand. Drain and dry with paper towels.

When the squash is done, remove it from the oven and pour the butter and juices from the cavities into a container. Let the squash cool enough to handle.

Warm the stock in a small saucepan over medium-high heat. Add the butter and juices from the cavities of the squash.

Peel the squash. Place the pulp in a blender, add the warm stock and juices, and blend on high to a very smooth puree, about 3 minutes. Set aside.

For the farrotto:

Preheat the oven to 425°F.

Heat the stock in a partially covered large saucepan over medium heat; keep warm over low heat.
Heat the canola oil in a medium ovenproof skillet over medium heat. When the oil is shimmering, add the farro and stir to coat it with the oil. Place the skillet in the oven and toast the farro for 8 minutes, stirring after 4 minutes. Transfer the farro to a bowl and reserve. Wipe the skillet clean.

Put the empty skillet over medium-high heat. When the skillet is hot, about 2 minutes, add 2 tablespoons of the butter and reduce the heat to medium. Add the onion and cook, stirring occasionally, until translucent, about 4 minutes. Add the garlic and cook, stirring constantly, until soft, about 2 minutes. Add the wine, increase the heat to high, and cook until the wine is almost evaporated, about 2 minutes.

Add the toasted farro to the pan and stir to coat. Add 1/2 cup of the warm stock, reduce the heat to medium, and stir until the liquid is almost absorbed. Continue cooking, adding 1/2 cup of warm stock at a time, stirring to prevent scorching and letting each addition be absorbed before adding the next, until the farro grains have expanded and are al dente, about 1 hour. The farro will look creamy like risotto. (The farro can be made up to 3 days ahead. Cool to room temperature, cover, and refrigerate. Reheat over low heat before proceeding.)

To complete:

Remove the farro from the heat, add the squash puree and kale, and stir until the kale is wilted. Put the skillet back over medium heat and add the remaining 2 tablespoons of butter and the cheese. Stir and serve.

Hubris.


The most amazing thing has happened. And even though, for eight and a half months I knew it was inevitable, it was going to happen, nothing could have prepared me for that exact moment when it did. The moment Emerson was born. The moment I became a Mom.

I'm not sure that I'm one of those people who always knew I would be a mom some day, or dreamed my whole life of having a baby. To tell you the truth, it was never something that was all that important to me until it was. And that was not all that long ago. And now there is absolutely nothing that is more important. Not even close.

Though it's been just four short/long/short weeks since Emerson was born, one minute it feels like yesterday and I'm lost without a clue, the next it's like I've been doing this, like I've known her forever. Time has never expanded and contracted at this level for me before. And don't even get me started on the hormonal scatting my body has been performing. I was recently talking casually about the weather or some such thing with Fred as tears streamed down my face for seemingly no reason at all. Pay no attention to any tears you see. Unless, of course, you disregard the wrong tears. The real tears. How dare you be so glib about how I'm feeling – what I'm going through?! I don't understand. Everything's changed!*

I constantly vacillate between “What am I doing?” and “I got this.”

Regardless of the tears, legitimate or absurd, and whatever side of confidence I happen to be on at any given moment, every droplet of me knows I have never loved anything like I love this little person. And every part of me knows that I will do anything and everything I possibly can to keep her safe and happy for as long as I live. That yes, everything's changed.* And that I would not want it any other way.

That alone is enough to put someone through a ricochet of emotions from pure, ethereal bliss to sheer, paralyzing fear. And don't even get me started on the hormones... again.


Fred says I'm like a shark; I must constantly be moving and doing. He's right. Though I have spent countless still and quiet hours just staring at Emerson in awe, disbelief and appreciation, it has been a challenge to be so motionless in all of the exterior elements of my life. Work, friends, chores, errands, cleaning, reading, emailing, crosswording, gardening, phone calling, self-grooming, cooking and writing have all had to be put in the back seat. (I do pat myself on the back for being timely and up to date with thank-you cards. I am a good southern girl, after all.)

I have learned am learning to stop, let go and rely on the kindness of family, friends and neighbors - and have been overwhelmed to the point of tears (of course) by all of the thoughtfulness, selflessness and generosity (and food!) that have poured in for me and my family (family!!). Fred who has continued to do so, so much – has added witnessing his partner in life morph into Sybil meets The Excorsist... and still manages to say I'm beautiful and strong and that he loves me (#keeper).


The other day we decided it was time to do 'something normal.' You know, like cook something new and fun and take pictures of it, normal. I was pretty sure I wanted to play with this extraordinary, ginormous burgundy okra we have growing in our garden. Considering I haven't done much of it, pickling was the obvious choice. On the weekend before the okra pickling was to take place, Paz came over for a practice session. We used squash, cucumber and red onion (also from my garden) to make a bread and butter pickle in addition to a standard dill pickle. They turned out pretty great with a couple of little tweaks I would make the next time – like peel the squash.

With my new pickling confidence, I began to think about the okra and what exactly I wanted to do with it. It occurred to me that I had recently had some pretty memorably delicious pickles prepared by Travis Milton, chef de cuisine at Comfort here in Richmond. Coming from rural Southwestern Virginia with the culture of Appalachian food, Chef Milton is known for preserving and furthering the foodways of his old stomping ground and is heavily involved with the Central Appalachian Food Heritage Project, and the Appalachian Community Table. He was even featured in the most recent issue of Garden & Gun Magazine for his Cast-Iron Green Tomato Pie.

So I emailed him and got his Grandmother's recipe for pickled okra. Booya!

Being back home in Richmond has not only brought me back to my mom and dad, but also the other people that I call family. One of these people who I am so grateful to have back in my life is Mary. Mary is Sam's mom and she is family to me. Her house is one I know very well - one overflowing with wonderful, euphoric memories of youth. Now I can add to that a recent Christmas Eve filled with just everyone, a beautiful ladies lunch (just the two of us), an al fresco early Summer dinner in the yard with friends of Sam near and far and new memories we are adding all the time. Speaking of new memories, Mary is pretty excited about little Emerson, too. Oh, and Mary also has one of my all-time favorite kitchens. 


So Fred, Emerson and I packed up our okra fixings, camera equipment and diaper bag and headed to Mary's house for the afternoon. While I pickled, Fred photographed and Mary happily looked after Emerson (though I did find myself scurrying out of the kitchen to peek in on my baby every so often). In a way, I think Mary, Fred and I all got to do something that felt kind of normal. Comfortable. Happy.

But as a thank you for the use of her kitchen and for looking after Emerson, we left the pickled okra in Mary's fridge. Maybe for her to enjoy – or maybe we'd find it there on the next visit, for us all to snack on together.**

Pickled Burgundy Okra
(Recipe by Chef Travis Milton)

Okra is one of my favorite things to pickle or can, as it's insanely simple. A lot of people try to over complicate it with different ways to get rid of the "snot", I don't bother with any of those methods and it always comes out great. With burgundy okra you will loose some of the color in the pods, but it will color the vinegar nicely.” -Chef Milton

Ingredients
5 Pounds of okra, trimmed at the cap
2 Red cayenne peppers, de-seeded and sliced into thin rings
1 1/2 Tablespoon dried dill
6 Cups of apple cider vinegar
1 Cup chardonnay
1 1/2 Cups water
4 Shallots, thinly sliced
2 Heads of garlic cloves (about 20 cloves) sliced thin
2 Tablespoon yellow mustard seeds
2 Tablespoons yellow mustard (By mustard I mean just straight up yellow mustard. It may sound weird, but its something my great grandmother did.)
3 Tablespoons black peppercorns

Directions

Place okra in a large metal mixing bowl.

Bring all the other ingredients to a boil and pour over okra. Let the okra sit for 45 minutes.

Pack in Mason jars and cover with liquid up to 1 1/2 inches below the lip of the jar.


My Americana.


It was hot. Very hot and very humid. In those dog days of summer at Dad's house, we would turn on the one air conditioner window unit we had downstairs and pretty much camp out down there. I can remember Wimbledon playing on the tiny TV that traveled around to whichever room my dad, barefoot wearing cut-off denim shorts and a perfectly worn in red Adidas t-shirt, was situated in. In the kitchen, also barefoot, with the back door open the sound of the cicadas and the smell of the 30% chance of afternoon thunderstorms through the screen door, I would be standing over the sink with a tomato sandwich in my hands and the magical mixture of salty mayonnaise and the seedy, juicy mess of the perfectly sweet and ripe tomato running down my face and wrists.

After wiping my face with the back of my hand and throwing on some flip flops, I would run out the front door to meet up with neighborhood friends and roam around streets, parks, alleys or the river until the light began to shift, the cicadas got ear-piercingly louder, and the fireflies began to light up the dusk, signifying the end of our day. All of us kids, with our hands and feet brownish-black, covered with dirt and muck, would scurry home for baths and dinner. And in those beautiful, nasty, hot, humid dog days of summer, the deep red, ripe tomatoes would most assuredly be on the plate at dinnertime as well. Perhaps served in chunks with some raw sweet corn kernels, in a mixed salad or most often, simply thickly sliced and generously sprinkled with salt and pepper.


I couldn't tell you my favorite color. I couldn't tell you my favorite ice cream flavor or my favorite band. Shockingly, I couldn't even tell you my favorite dish or meal, though sea urchin and extra salty movie theater popcorn would invariably be in the running (but not together). But I can tell you this: the tomato is my favorite food. I will eat a tomato any way it can possibly be made to exist, even in jam form. And unlike my dad, if I'm desperate, I will even eat a wintery, mealy out of season tomato. I just can't turn one away.

The perfect tomato – at least in Virginia - is a singular yet fleeting experience. Its prime season is short and very sweet. Even after spending more than a decade in Southern California, with its vast array of year-round beautiful and amazing produce, I never came across a tomato to rival the ones in Virginia in July and August.


It's 4th of July weekend – America's birthday – which harks to a lot of tradition and nostalgia for many of us. With all of our senses: smells, sounds, textures, sights and tastes in overdrive, we think of apple pies cooling on the windowsill, hot dogs and hamburgers sizzling on the grill, baseball, parades, picnics on the grass, music and fireworks. But for me, my Americana, though it can and does include those things, is really that tomato sandwich and its gorgeous juicy mess running down my face and wrists as I triumphantly devour it over the kitchen sink as the cicadas sing and I can smell the 30% chance of afternoon thunderstorms just outside the screen door. 


The Perfect Tomato Sandwich

Makes 2 sandwiches

The perfect, transcendent tomato sandwich is so extraordinarily simple that it requires considerable restraint to not mess it up, to not gild the lily. There is a place and time to add the avocado or to toast the bread - or to even go full BLT - but that is a different thing entirely. For the sandwich I speak of you will need only five things and napkins and plates are not on the list.


Ingredients:
4 slices of soft, white bread
1 large, perfectly ripe tomato, sliced about 1/4” thick (the quality of the tomato is 99.9% of what makes this sandwich great, so select yours wisely)
Duke's mayonnaise
Salt & pepper (no need for the fancy stuff)


Directions:
Go ahead and be decadent with the mayo. Smear it liberally on each piece of bread. 

For that matter, go ahead and be decadent with the salt and pepper as well. Salt and pepper each slice of the mayo-laden bread.

Ideally the tomato is large enough that you will only need one, maybe two slices for the whole sandwich. Put the tomato on one side of the bread and place the other piece of bread on top.

The mayo and the juices of the tomato will quickly create a beautiful pink, milky liquid that renders the sandwich a drippy, wet mess. Embrace the mess but eat fast and deftly - I suggest over the sink. While the last bite is still in your mouth, slurp juices off hands, wipe face with back of now 'clean' hands and promptly run outside to play with your friends.

What You Really Know About the Dirty South?


Before moving to the City of Angels, I lived in Atlanta. I moved there straight from college and spent six important years in the Dirty South. For the most part I loved it and those were happy years. My twenties – the salad days, if you will. And, with the exception of one very brief visit to a friend, I had not returned.

Until now.

One of the beefs I had with the ATL when I was there was the sprawl (and so, of course, I moved to LA). The city seemed disconnected as a whole. I remember the nail in the coffin for me and the ATL - I was walking down the street in my neighborhood, Little 5 Points, when a friend drove by, honked his horn and hollered, “What up, Duchess?!” (Yes, that was my nickname). I don't know what it was about that moment. I suppose I had been itchy already, but right then I felt like I couldn't breathe. Despite the sprawl, despite the city-ness of the city, everything seemed so small. I needed to fly away. I needed to find bigger. And so I did.

It's a funny thing, however. After all of my years in LA, the very thing thing I really missed, the thing I yearned for the most was exactly the thing I had turned away from in Atlanta all those years before. Screw anonymity, screw the whole little fish/big pond thing, I wanted community and family. I wanted little(r), not big(gest). I wanted to return home to Richmond.


So, how could I not stop in Atlanta, the very city that took me on my long journey back home? (And I do so love to come full circle) Plus, it has become a pretty big food destination over the past few years. What's more, some of my old friends from back in the day are smack in the middle of this Atlanta, New South food surge. And some other old friends are still making their food, their way, deliciously, same as it ever was. And I had three places to visit that fell into either one, the other, or both of these categories.

Our first stop was one of those classics, El Myr. It was my Regal Beagle, so to speak, and perhaps where the whole “duchess” thing originated. Part dive bar, part DJ venue, part diner, part tattoo corral, all cheap beer, tequila, chips, salsa, guacamole and massive burritos. I was relieved to find, upon bellying up to the bar one quiet afternoon for lunch, that not a thing has changed. Every possible surface is covered with outsider art or band stickers, ashtrays on each table, jukebox in the corner, and the same gloriously irreverent and surly staff: perfect. As Fred and I split chips, salsa and guacamole, a couple of sweet teas and a Brunswick stew burrito that was the size of our dog, Eduardo, I gazed around the space, nostalgically. If those walls could talk... Actually, I'm glad they can't. As soon as we finished, I hurried Fred out. Just in case.

The next morning was slotted for brunch at another restaurant that held a special place in my heart, a spot that employed me for my last year in Atlanta: Ria's Bluebird. Ria is a local celebrity of sorts in Atlanta and has been for as long as I can remember. Everyone knows Ria. And, likewise, everyone knows her namesake restaurant famous for its brunch. In fact, Ria recently appeared on the Food Network's show, Chopped. It was a brunch battle. Ria won. Even on a weekday there was a bit of a wait in her tiny little nook on Memorial Drive, but fortunately Fred and I most often prefer to dine at the counter, and, after about ten minutes, we had our seats. And then we dove in: two coffees, huevos (grilled, blue corn tortillas with black and pinto beans, topped with white cheddar, two fried eggs, salsa and sour cream), biscuits and gravy (two handmade buttermilk biscuits with pepper milk gravy), and a short stack of buttermilk pancakes, aka “The world's best pancakes” - New York Times (hand-sifted, made from scratch, with hot maple syrup). Chopped champion? “World's best pancakes”? I get it. This is food for the heart, mind and soul. 


After that meal, we returned to our home base: my dear, dear friend, Brian's house, at which point we all three decided we should take a walk. Brian led us to Atlanta's newest, and probably most attractive addition yet; the BeltLine. The BeltLine is a former railway corridor around the core of Atlanta which is under development in stages as a multi-use trail. Some portions are already complete, while others are still in progress, but absolutely hikeable. We walked from Brian's house, which is a stone's throw from my old apartment, all the way to the dog run in Piedmont Park. Though there and back took the better part of the afternoon, the concept of that route being realistically walkable in that amount of time would have been completely unheard of during my time in Atlanta. To see all of the people walking, riding their bikes or skateboarding, through the heart of a city as car-centric as Los Angeles was remarkable, and truly a beautiful sight. Kudos, ATL.

Alright, we all three had exercised, we got sunshine, some beautiful fall scenes, a lot of laughter and conversation, and now were showered and ready for our fancy dinner at my third, planned destination: Miller Union. As a result of more old friends and Facebook and other social media, I had been hearing about the development of Miller Union long before they opened in late 2009. Plus all those years ago, their chef, Steven Satterfield had worked at quite a few well-known and well-respected restaurants in Atlanta (one with Ria!) and was my roommate's bandmate. So I was very much looking forward to saying hello and finally experiencing this New South food magic he has been creating that has been mentioned in every, single food-related magazine that I have touched in the past few years. But really, one dish in particular, I'd say their most iconic dish: his farm egg baked in celery cream.That's right - a single, beautiful, farm fresh egg with that bright orange yolk suspended in cream, infused with the earthiness of celery, and baked until it's set like custard, and served with a crisp, buttery slab of grilled country bread. This dish exemplifies freshness, simplicity, restraint and beauty.


That alone, and of course a little QT and a glass of wine with Steven after dinner was well worth the entire evening.


What a trip.

Atlanta, you surprised and delighted me on many levels. You gave me three days with Brian, good wine, delicious food, first glimpses of fall, pride and confidence in growth and change for the better, wonderful and profound memories of a life and a me that I had almost forgotten – and missed. You took sprawl and created cohesion. Atlanta, you are big and beautiful and doing things right. And though I am confidently heading towards my new home, I will keep all of these thoughts tucked not too far away. Because you never know. You never do.

Farm Egg Baked in Celery Cream
(Recipe adapted from Stephen Satterfield, Miller Union, Atlanta)

Serves 2

Ingredients
1/3 cup fresh cream

2 stalks celery, including leaves, roughly chopped

1 shallot, sliced, including skin

1/2 small onion, sliced, including skin

1 tsp kosher salt

3 peppercorns

1 small bay leaf

1 sprig fresh thyme

butter for greasing  

2 farm fresh eggs

Directions
Preheat oven to 350 degrees. In a small saucepan, gently heat cream, celery, shallot, onion, salt, peppercorns, and herbs until very hot. Remove from heat and let steep for 15 minutes. Meanwhile, lightly butter two small ovenproof ramekins and crack an egg into each, being careful not to break the yolk. Strain the cream into a small bowl, gently pressing on the solids. Discard solids. Spoon cream over each egg just until covered. (It's okay if the egg yolk is protruding slightly across the top.)
Bake dishes in preheated oven for 5 to 6 minutes. Check closely to make sure the whites are setting but the yolk is still soft. Then turn the oven to broil and, with the door propped open, heat until tops begin to brown. Remove immediately and let rest a minute before serving. Serve with warm crusty bread brushed with olive oil.

Hot Stuff in Nashville.


Nashville is hot stuff right now - it's quite the culinary darling, actually. In addition to our hefty list of restaurants to visit, one of my closest friends from LA, Chris, is from Nashville, and his family all live there. His brother-in-law runs a restaurant that I had been hearing about for some time.

Unfortunately for me, somewhere between New Orleans and Nashville I acquired one super nasty cold (that fortunately – and bizarrely – only lasted twenty-four hours). But we had reservations at Rolf & Daughters, and by gum, we were sticking to it. Even through a super hero dosage of cold medicines, I was able to appreciate the atmosphere, service, food and wine. As per usual, I ordered the chicken. But alas, we were not long for the world that night, and right after dinner, hurried back to the hotel to rest up for the next few days in town. And our next stop was going to be Chris' brother-in-law's restaurant; Fido.

In 1993, way before local, sustainable, organic, farm to table took root (think Pearl Jam-era), Fido was launched as part of the unofficial Bongo World and consists of a wholesale coffee roasting company and four cafes – each having a unique identity and menu. Their coffee is 100% organic and bought directly from Fair Trade small-farm co-ops. Fido is both coffee shop and restaurant, nestled in Nashville’s Hillsboro neighborhood. Well known for their fish tacos, the Local Burger and their sweet potato fries, and with dishes like a grilled Tennessee cheddar and country ham sandwich and baked cheese grits, Chef John Stephenson offers a fresh, local menu which simultaneously breaks away from, and pays homage to, traditional southern fare.

Fido got its name from the pet store that previously occupied their space and is, no surprise here, dog-friendly. This was a huge plus for us traveling with two of our canine boys, Eduardo and Byron. Right around lunchtime on a recent weekday, the four of us laid claim to one of the precious tables outside before we went in to peruse the menu and place our order. And out popped Chris' brother-in-law, Chef John himself – lucky for us he was manning all of the food coming out of the kitchen that day. So we ordered a lot: the Local Burger with sweet potato fries, the last of the season heirloom tomato salad with fresh figs and blue cheese, tomato-basil soup with focaccia, grilled salmon with polenta, mache, berries and feta, the special plate of the day which had a sampling of a couple Southern staples: green bean casserole, succotash, and finally a hefty slice of pumpkin cheesecake.


Their most popular dish is the Local burger with sweet potato fries, is fantastic. It's made with Tennessee beef and local lamb, Swiss cheese, pickles, onion strips and a zesty sauce. The meat was seasoned with a beautiful blend of spices. The bread was an ideal texture and there wasn't too much of it to eclipse the meat. The sweet potato fries were grilled, made from sweet potatoes on site, were tender, soft and delicious.


We saw John and his family quite a bit during our three nights in Nashville. We hit the hotspots and the nightspots and the old tried and true spots. We heard rad, live music, went to a farmers' market and I even bought a beautiful, new handbag from a local designer that Chris' sister, Katherine, turned me on to. But culinarily, two things in Nashville really stood out to me; Fido and another joint Katherine and John sent us to: Hattie B's Hot Chicken. It was my first Hot Chicken experience and it was memorable. We sat outside (again with the pups) and stared down at our massive platters of Nashville-style fried chicken: marinated in buttermilk, breaded, sauced using a paste that had been heavily spiced with cayenne pepper, then pan-fried and coated in 'damn hot' sauce. It is served atop slices of white bread with pickle chips with traditional Southern sides like collards, black-eyed pea salad, fried okra, pimiento mac n cheese, and tea so sweet it hurts your teeth. Fred, of course, ordered his hot chicken as hot as he could and was on fire after two bites in. But we loved it. We felt so Nashville.


The food we experienced in Nashville – all of it – was solid, satisfying and fresh. We appreciated that we were also able to experience the new school and the old school. None were necessarily bells and whistles places. More, I'd say, salt of the earth, with just the right amount of salt.


We use this salsa for many things at Fido, but mainly it is the star ingredient in our Huevos Cubano.  Add it to soft scrambled eggs, with some nice sharp cheese and you have a wonderful breakfast item. Place in a blender with some of your favorite hot sauce and you have a tangy green hot sauce. Serve on pork loin, tacos, or just eat with chips!

Fido Roasted Tomatillo Salsa

Ingredients

1 red onions finely diced
1 poblano finely diced
1diced jalapeño
1 lemons juice and zest
1 tablespoon garlic minced
½ cup chopped cilantro
¼ cup chopped parsley
2 teaspoons cumin
1 teaspoon paprika
1 teaspoon salt
1 teaspoon ground coriander
½ cup olive oil
¼ cup rice wine vinegar
2 teaspoons brown sugar
salt & pepper to taste
4 quarts tomatillos

Directions

Preheat oven to 400F.  In a large bowl filled with water, place a few tomatillos at a time in and remove stems and paper husk from tomatillos. Place on large sheet pan. Place the sheet pan with all tomatillos, a little olive oil, and a pinch of salt in the oven and roast for 15-20 minutes until soft. Remove and cool for 10 minutes.

Place the tomatillos in a blender and pulse until chunky. Pour into large mixing bowl.
Put all other ingredients in bowl with tomatillos and mix together until combined. Taste for salt and pepper.

The Road Taken


I started writing this post over a month ago. Since then I have started and stopped quite a few times. Then I just stopped. And stared. Nothing. Then I started again, but didn't know where to take it. I wasn't sure why. Normally once I start something, anything, I stay right with it until I finish. But this one is different. Change is afoot.

Like many writers, I often grapple with how much, or how little, to expose about myself here. To you. I like to talk, I like to tell stories, I like to share. It helps me process. It helps me see. I used to be religious about writing in my journals, almost excessively some days. In a sense, this has become my journal. The big difference is there is now an audience. An audience with reactions I cannot gauge while I 'talk'. For the most part I keep things on the lighter side, but I assure you that this voice is mine and mine alone. If you met me, that would be clear within moments. This voice is more disciplined, however, and part of an identity I am able to control.

Here I tell you about me, but within the framework of food and within the realm of my kitchen, or, perhaps, someone else's kitchen. I will tell you about Fred, or Besito, or anecdotes about any number of members of my family and certainly friends that come in and out of the spotlight at any particular time. And from all of that, and the years we've known one another, I can imagine you have gleaned quite a bit about me.

I have been hinting about some big news and I'm finally ready to tell you about it. At the end of September, after twelve years in the City of Angels I will be moving back home. And by home I mean Richmond, Virginia. I will not be alone, however. My love, Fred and our pups, Besito, Eduardo and our newest addition, Byron, will all be moving together. Our little family is going to join my Richmond family and the horizon is enormous.

I am not sure if you knew this, because I know I've never told you, but I have owned a dog walking businessfor the past decade. It has been quite successful and very good to me. This business has been the most solid, consistent, dependable and reliable thing I have known during my life in Los Angeles.

So, at almost forty years old, I am selling my business and am moving clear across the country. To do what? I'm not entirely certain, but the idea is a lot more of this. Writing. Cooking. Eating. Food. Recipes. Pictures. With Fred.


And there you have it.

I feel a little bit naked now. But good naked.

And relieved.

One very, very fun and exciting part of all of this is the actual journey. We will be driving and taking our time. Specifically, this will be a culinary journey from California to Virginia with a huge focus on the South. In the cities where we don't know people, we hope to rely on folks we know via social media to assist us in finding our next meal, or interview, or as Fred wants to do, a place for us to cook with locals; both home and professional chefs, and in both homes and restaurants. Part of the thrill of our cross country trip is the serendipity involved. We know that we will have food adventure and discovery that we are not even aware of at this moment. The best part is that we will be documenting everything as we go along.

In honor of this post I thought long and hard about what dish to share with y'all. Fred suggested I make something I've never made before, in the spirit of the unknown road ahead (very Robert Frost of him). I wanted to do something that represents what is happening with food here in LA then and now, so to speak, and food that signifies where I'm from and where I'm going: The South.

I settled on what I will call a Low Country Benedict: fried green tomatoes with Smithfield ham, poached eggs and a pimiento cheese hollandaise. Oddly, I have never made fried green tomatoes. And this summer my fecund garden is bursting with tomatoes – red, yellow, orange and green. When I think of eggs Benedict I think of the LA from the eighties, think LA Story and people lingering over coffee, mimosas and bloody marys and fancy, bougie French fare wearing sunglasses, white linen and big hats. That said, southern food is so, so, very, very en vogue here in LA (and everywhere) right now. Think Willie Jane and The Hart and the Hunter's entire menu, , A-Frame's fried chicken picnic, Son of a Gun's pimiento cheese with Ritz crackers, Lucques' annual rib-fest, everyone's deviled eggs, and so on. And perhaps most obviously, fried green tomatoes are, and have been for quite some time, very prominent in the south.

And so without further ado...


Fried Green Tomato Benedict with Smithfield Ham & Pimiento Cheese Hollandaise

Makes 4 servings

Ingredients

4 thin slices of Smithfield ham
2 tablespoons chopped chives, for garnish
4 eggs
2 teaspoons white or rice vinegar
4 large slices of fried green tomatoes
Salt & freshly cracked pepper

Pimiento Cheese Hollandaise

8 tablespoons (1 stick) unsalted butter
4 egg yolks
1 tablespoon lemon juice
4 teaspoons powdered cheddar cheese (found in your standard mac n' cheese package)
1 4 ounce jar of pimientos, chopped
Dash of cayenne or tabasco
Dash of Worcestershire sauce
Salt to taste


Directions

Start with the fried green tomatoes. Recipe below. Once they're cooked, keep them in the oven on warm until you're ready to assemble the dish.

Next bring a large saucepan two-thirds-filled with water to a boil, then add the vinegar. Bring the water to a boil again, then lower the heat to a bare simmer.

Make the pimiento cheese hollandaise. Vigorously whisk together egg yolks and lemon juice in a stainless steel bowl until the mixture is thickened and doubled in volume. Place the bowl over a saucepan containing barely simmering water (or use a double boiler); the water should not touch the bottom of the bowl. Continue to whisk rapidly. Be careful not to let the eggs get too hot or they will scramble. Slowly drizzle in the melted butter and continue to whisk until the sauce is thickened and doubled in volume. Remove from heat, whisk in powdered cheese a teaspoon at a time, Worcestershire sauce and cayenne. Stir in the pimientos. Cover and place in a warm spot until ready to use for the eggs Benedict. If the sauce gets too thick, whisk in a few drops of warm water before serving. Salt to taste

Poach the eggs. Here is  an easy method for poaching eggs. Essentially, working one egg at a time, crack an egg into a small bowl and slip into the barely simmering water. Once it begins to solidify, slip in another egg, until you have all four cooking. Turn off the heat, cover the pan, and let sit for 4 minutes. (Remember which egg went in first, you'll want to take it out first.) When it comes time to remove the eggs, gently lift out with a slotted spoon. Note that the timing is a little variable on the eggs, depending on the size of your pan, how much water, how many eggs, and how runny you like them. You might have to experiment a little with your set-up to figure out what you need to do to get the eggs exactly the way you like them.

Gently remove the eggs from the poaching water and set in a bowl. 

To assemble the eggs Benedict, put two fried green tomatoes on each plate and top each with a thin slice of Smithfield ham. You can trim the ham to fit the tomato if you’d like. Put a poached egg on top of the ham, pour hollandaise over. Top with sprinkles of chives and fresh cracked black pepper. Serve at once.


Fried Green Tomatoes

Ingredients

1  large egg, lightly beaten  
1/2 cup  buttermilk
1/2 cup  all-purpose flour, divided
1/2 cup  cornmeal
1 teaspoon  salt
1/2 teaspoon  pepper
1/4 teaspoon red pepper flakes
3  medium-size green tomatoes, cut into 1/3-inch slices
Vegetable oil
Bacon drippings
Salt to taste

Directions

Combine egg and buttermilk; set aside.

Combine 1/4 cup all-purpose flour, cornmeal, 1 teaspoon salt, red pepper flakes, and pepper in a shallow bowl or pan.
Dredge tomato slices in remaining 1/4 cup flour; dip in egg mixture, and dredge in cornmeal mixture.

Pour oil/bacon dripping to a depth of 1/4 to 1/2 inch in a large cast-iron skillet; heat to 375°. Drop tomatoes, in batches, into hot oil, and cook 2 minutes on each side or until golden. Drain on paper towels or a rack. Sprinkle hot tomatoes with salt.
