Field of Dreams


While I am patently aware of the dearth of new content on F for Food, it nonetheless hit me hard to receive an e-mail last week with an offer to buy the blog. Someone clearly took notice of the lack of activity and exhibited interest in taking it over and 're-aliving' it, so to speak.

Well folks, F for Food isn't for sale. Even though I have not been able to find the time to put the proverbial pen to paper consistently for over a year, I really, really plan to. I think about it all the time. Not only did this blog keep me relatively sane, relatively grounded, during some very bumpy periods for half of a decade in LA, but it has also been huge part of my identity, my creative outlet, my escape, my happiness and, now, my new career.

My New Career.

If you build it, they will come.* Whether you are referring to a ghost to play catch with in a field of dreams or a version of yourself that you are projecting, creating or recreating, I find this mantra, if you will, to be true. Sort of a fake it 'til you make it kind of thing, you know?

First jobs tend to always be this way. Waitress? Gotta start somewhere. Just fib a little bit in the interview, say you've done it before. At that little cafe. They're closed now, though. You get the job, and after a few months, you're Flo. In my own life I have found myself in this field of dreams scenario quite a few times. It seems that I usually hit the ground running and end up taking off just fine. A few hiccups here and there, of course, but that is to be expected. (Dig the mixed metaphors, here.)

Upon moving to Richmond I decideda few things. One of them was that I was going to be a Food Stylist to Fred's Food Photographer. Or rather that we already were. So we had cards printed up saying as much. Done.

Cut to a few months back, standing in a studio with Fred, each of our assistants, one for styling and one for photography, a production assistant scuttling around, and a cluster of people from The Martin Agency looking over our shoulders as we style and shoot a holiday ad campaign for Oreo Cookie Balls. Surrounded by dozens and dozens of said balls for days with little rest and trying to care for a six week-old baby, you can imagine the slap-happy-terrible-taste ball jokes flying around.

And then jump ahead to a week ago: I'm alone – that is, sans Fred, standing in a frozen yogurt shop, after hours, filled with twenty people, cast, crew and clients, along with truckloads of cameras, equipment and gear for a Hamilton Beach blender video shoot. I was The Stylist.

In addition to these high falootin' gigs we've kind of become the go-to food photographer/stylist team for our local magazine'sfood spreads and we even spoke at a local event recently, giving a how-to workshop on food photography and social media. Like, suddenly we're the experts, for crying out loud!

If you build it they will come.*

So, between all that stuff and our five month-old baby girl, the blog has gotten a little dusty. But not forgotten! I have been bugging Fred every week about us needing to get new work up here, and we keep saying we will. Life will regulate again at some point – I know it will. Bikes will be ridden. Books will be read. Maybe even a movie. In a theater.

A couple of days after the offer-to-buy email, I received an email with an offer to publish sponsored content. Us bloggers receive these with some frequency and with varying degrees of appeal, but this one caught my eye for a number of reasons. First of all, I know and respect the source. Secondly, the company, Rakuten, to be sponsored was new to me and I was pleasantly surprised with its bounty of offerings. Third, the post was to be Thanksgiving-themed.


That's right! It's Thanksgiving!

How could this have happened? How could it be thisclose to Thanksgiving with my hardly given it a thought? I am a food writer! A food stylist! This is thefood holiday! Even though I have never had a tradition for this holiday, that is I have never really done the same thing twice, I always host and always cook. A lot. Except this year. This year Fred, Emerson and I will be flying back to LA. On Thanksgiving day no less. I don't know what we will be doing or what we will be eating. I don't even know if Emerson will allow for much anyway, it being her first flight, her first new time zone.

At best we will be able to make a humble, yet noble, side dish for the holiday. So we turned to the beautiful new cookbook Heritagefrom fellow Virginia native, Sean Brock, for inspiration. We didn't have to look far. He had us at Farrotto. To be specific, Farrotto with Acorn Squash and Red Russian Kale. This dish is all kinds of Autumnal, it's healthy and with kale and farro, it's super IN. A perfect winner of a choice for Thanksgiving, if I do say so.

It will be interesting to return to LA, to my old friends, my old stomping ground, as a new mother with a new career, a new life. It will be interesting to head right into a Thanksgiving I have no concept of and no control over. I guess Thanksgiving's tradition for me is its non-tradition. That works. Thanksgiving is the holiday that I am constantly projecting, creating or recreating. If I build it IT will come.*

Farrotto With Acorn Squash and Red Russian Kale
(Recipe from Heritageby Sean Brock)


Servings: 6 as a side or 4 as an entree

Ingredients

Acorn squash
1 small acorn squash (about 2 1/2 pounds)
1 tablespoon unsalted butter
1 1/2 teaspoons kosher salt
Scant 1 teaspoon freshly ground white pepper
1 cup vegetable stock
1 bunch Red Russian or other kale (about 3 pounds)

Farrotto
2 quarts vegetable stock
1 1/2 teaspoons canola oil
4 tablespoons unsalted butter
1/2 cup diced white onion
1 garlic clove, sliced paper-thin
1/2 cup dry white wine
1 cup freshly grated Parmigiano-Reggianocheese



Directions

For the squash:

Preheat the oven to 425°F.

Cut the squash in half. Remove and discard the seeds and rinse the squash under cold water. Place the squash cut side up on a rimmed baking sheet. Divide the butter between the two halves and sprinkle with the salt and white pepper. Roast the squash for 35 minutes, or until fork-tender.

While the squash is roasting, prepare the kale: Remove the stems and ribs from the leaves. Make stacks of the leaves, roll them into cylinders, and cut them into very thin ribbons. Wash the kale in a sink of cold water, changing it several times, to remove any sand. Drain and dry with paper towels.

When the squash is done, remove it from the oven and pour the butter and juices from the cavities into a container. Let the squash cool enough to handle.

Warm the stock in a small saucepan over medium-high heat. Add the butter and juices from the cavities of the squash.

Peel the squash. Place the pulp in a blender, add the warm stock and juices, and blend on high to a very smooth puree, about 3 minutes. Set aside.

For the farrotto:

Preheat the oven to 425°F.

Heat the stock in a partially covered large saucepan over medium heat; keep warm over low heat.
Heat the canola oil in a medium ovenproof skillet over medium heat. When the oil is shimmering, add the farro and stir to coat it with the oil. Place the skillet in the oven and toast the farro for 8 minutes, stirring after 4 minutes. Transfer the farro to a bowl and reserve. Wipe the skillet clean.

Put the empty skillet over medium-high heat. When the skillet is hot, about 2 minutes, add 2 tablespoons of the butter and reduce the heat to medium. Add the onion and cook, stirring occasionally, until translucent, about 4 minutes. Add the garlic and cook, stirring constantly, until soft, about 2 minutes. Add the wine, increase the heat to high, and cook until the wine is almost evaporated, about 2 minutes.

Add the toasted farro to the pan and stir to coat. Add 1/2 cup of the warm stock, reduce the heat to medium, and stir until the liquid is almost absorbed. Continue cooking, adding 1/2 cup of warm stock at a time, stirring to prevent scorching and letting each addition be absorbed before adding the next, until the farro grains have expanded and are al dente, about 1 hour. The farro will look creamy like risotto. (The farro can be made up to 3 days ahead. Cool to room temperature, cover, and refrigerate. Reheat over low heat before proceeding.)

To complete:

Remove the farro from the heat, add the squash puree and kale, and stir until the kale is wilted. Put the skillet back over medium heat and add the remaining 2 tablespoons of butter and the cheese. Stir and serve.

It’s been hot. It’s been the kind of hot we don’t get too often here in Southern California. But it’s August. The month when almost everyone in the country can experience the same thing: sweat. This particular heat wave has been a bit of a doozy. I know, compared to the heat coupled with that added bonus of humidity happening on the East Coast, we have been fortunate. But we really have had hundred degree days over the past couple of weeks.

This is the kind of hot I both loathe and love. While I am slightly miserable roaming around during the day, worrying about getting sunburned and, of course, my social curse: the sweat moustache - the cool, arid, balmy, breezy nights are just, well, sexy. Perhaps it’s even more so because of enduring the day part, but it’s so exhilarating to feel that sultry, lustful air on my skin and in my hair on these evenings. And no unsightly sweat moustache.

Since it is right at that time when the thermometer outside is stuck at the “hot and sticky” mark, Fred and I couldn’t have picked a better time to move in together.


So, to heighten the challenge of endurance, Fred and I have spent the last two months moving his stuff out of an apartment he has occupied for ten years and relocating said stuff into a house where I have been residing for four years - during weekends, right in the middle of the day. Barrels of joy and without any bickering. No-sir-ee.


Another super smart and obvious choice to make in the kitchen department would be to eat a lot of salads and make ultra use of the grill. So last night we decided to throw a pot of oil on the stove, get it up to about 350 degrees, and fry stuff. It was just about the worst idea ever: scorcher of a day, no air conditioning, tiny kitchen, bare skin, scaldingly hot oil, really messy cooking experiment.


But also really delicious.



Parts of it did make sense. We used produce from the garden. The dish felt fresh and summery. It would probably go great with a cold beer and did go really well with a crisp rosé. It was snacky.

It was zucchini fries with poblano cream. The zucchini and the poblanos came straight from my garden - which is so happy this year. I guess it was just going through puberty for the past couple of years and is finally growing up. The Meyer lemon we used to squeeze on top was from a neighbor' tree. It was all so precious. And it was very good. The zucchini kept it's textural integrity and had a light, crunchy shell. I thought the poblano cream was the most exciting part. It was cool, light, creamy with a subtle, warm, roasty heat. I plan on using it to top a chilled heirloom tomato soup this weekend, and I can only imagine it is delicious, and versatile, enough to have a myriad of other applications.

So yes, thank you Los Angeles, for pulling out all the stops where the sunshine and heat are concerned. It’s sweaty, dirty, nasty stuff, even before all the moving boxes and the bags and the dust. But last night, even though we picked a peculiar thing to get kitchen concoctery with, everything worked out. We set the table, turned on the fan, poured ourselves a couple of glasses of rosé, plated up our dish and sat down across from one another - and our burn blisters - to enjoy a peaceful evening of quiet, still, snackery. Together in our home together. 




Zucchini Fries with Poblano Cream

Serves 4

Poblano Cream

Ingredients

8 oz. creme fraiche
1 roasted and peeled poblano pepper
1 tbsp sherry vinegar
salt & pepper to taste
Chopped celery leaves, to garnish

Directions

Blend creme fraiche and pepper in food processor and pulse until pepper is broken down and mixed in. Pour into small mixing bowl and fold in vinegar, salt & pepper. Stir until flavors are well integrated.

Top with chopped celery leaves.



Zucchini Fries

Ingredients

  • Olive oil, for frying
  • 1 1/2 cups panko
  • 3/4 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/4 teaspoon paprika
  • 2 large eggs
  • 3 medium zucchini, cut into 3-inch long by 1/2-inch wide strips

Directions



Pour enough oil into a large frying pan to reach a depth of 2 inches. Heat the oil over medium heat until a deep-fry thermometer registers 350 degrees F.
Stir salt, pepper, paprika and panko together in a medium bowl to blend. Whisk the eggs in another medium bowl to blend. Working in batches, dip the zucchini in the eggs to coat completely and allow the excess egg to drip back into the bowl. Coat the zucchini in the panko mixture, patting to adhere and coat completely. Place the zucchini strips on a baking sheet.
When the oil is hot, working in batches, fry the zucchini sticks until they are golden brown, about 3 minutes. Using a slotted spoon, transfer the fried zucchini to paper towels and drain.
Serve with poblano cream for dipping.

Squashes and Sniffles


I’ve been sick. I never get sick and I’ve been sick. I have a cold. I guess I’m getting over it now. But what misery; a Summer cold.

As a result of this nasty cold, I spent my holiday weekend at home with season 2 of True Blood, a box of tissues, and my dog. By the time Sunday rolled around, I was so sick of being sick that I didn’t even care that my nose resembled Karl Malden’s from so much blowing and I ventured out to the Hollywood Farmers’ Market. I’m glad I did. It seems to be better for me to pretend I’m not sick and to continue to do my normal things – with the exception of late nights and too much wine. So I stocked up on beautiful produce gems and marched home to play in the kitchen.

I actually found the most incredible looking potatoes I have ever seen and used them in my World-Famous Breakfast Potatoes a mere hour later. Check these out...


After I made brunch (sans mimosas (gasp!)), I decided to test a couple of the recipes for the next Dinner at Eight: the chilled avocado-cucumber soup with ancho cream and the summer squash gratin with salsa verde. Would have been more fun with mimosas, but such is life.

I was really excited about the gratin recipe, one I’ve adapted from Suzanne Goin. While I am not a huge squash or zuchinni fan, in general, summer squash is the shining exception. And squash blossoms. I adore squash blossoms. They are so delicate, elegant and beautiful both in appearance and taste. I love that summer squash has the tender and edible rind (which is a result of it being harvested early). You could tear that thin veneer with a mere grazing of a fingernail.

In the past I have not waxed terribly poetic over summer squash. I have (rather boringly) sliced it lengthwise and grilled it alongside its plate partner for the evening--a meat item, I imagine. But this dish could very easily stand alone. It has layers of bold flavors within the salsa verde, shallots and garlic. It somehow manages to be both subtle and summery, yet warm and hearty.

Originally I had planned to serve it alongside a Bistecca Fiorentina but thought the flavors would compete too much with one another. Rather, I will be serving it with an herb-roasted pork loin. I feel confident that these two items will dance together brilliantly with their simplicity, comfort and sophisticated earthiness.


Summer Squash Gratin with Salsa Verde

Serves 6

2 pounds summer squash
1 1/2 cups fresh breadcrumbs
4 tablespoons unsalted butter
3/4 cup sliced shallots
1 teaspoon minced garlic
1 tablespoon fresh thyme 
3/4 cup salsa verde (recipe follows)
1 1/2 cup grated Gruyere cheese
Kosher salt and fresh ground black pepper


Preheat oven to 400 degrees.

Cut the squash into 1/8-inch thick slices (on the diagonal). Toss the slices in a large bowl with 1 teaspoon kosher salt, and let sit 10 minutes.

Place the breadcrumbs in a bowl.

Heat a small sauté pan over medium heat for 1 minute. Swirl in the butter and cook a few minutes, until it browns and smells nutty. Pour the brown butter over the breadcrumbs, scraping all the bits into the bowl. Wait for a moment for the butter to cool, and toss well.

Drain the squash and transfer it to a large mixing bowl. Add the shallots, minced garlic, thyme, salsa verde, and some pepper. Toss to combine, and add the cheese and half the buttery breadcrumbs. Toss again.

Place the squash in a gratin or casserole dish. Scatter the remaining breadcrumbs over the top, and bake 35 to 40 minutes, until the squash is tender and the top is crisp.



Salsa Verde

1 teaspoon marjoram leaves
1/4 cup coarsely chopped mint
1 cup coarsley chopped flat-leaf parsley
3/4 cup extra-virgin olive oil
1 clove garlic
1 anchovy
1 tablespoon capers, rinsed and drained
1/2 lemon, for juicing
Freshly ground black pepper

Using a mortar and pestle, pound the herbs to a paste. Work in some of the olive oil, and transfer the mixture to a bowl.

Pound the garlic and anchovy, and add them to the herbs.

Gently pound the capers until they're partially crushed, and add them to the herbs. Stir in the remaining oil, a pinch of black pepper, and a squeeze of lemon juice.
