Me vs. Cleanse: 2015


Two weeks of 'cleansing' has come to a triumphant conclusion. It hardly felt like a cleanse. I was never hungry and I never had any insurmountable cravings. I truly was sated. In fact, the portions were often so plentiful I couldn't finish some meals – even skipped some scheduled afternoon snacks and desserts. Which, I believe, makes up for the bit of cheating on the wine consumption. I didn't drink tons, but maintained a glass or two each evening. I cut myself some slack on that, especially considering I swapped morning coffee for tea. And I love, need, my morning coffee. These days, with the baby and not much sleep, I feel that I need coffee to makecoffee. But no, it has been tea. With almond milk and occasionally agave nectar. Meh.

Anyway, it's over. Some of the eating restrictions during the cleanse we will attempt to maintain. The big shocker: Butter. I never would have thought we could last two weeks cooking every meal in our home without butter. But, as it turns out, its absence went virtually without notice. The cleanse recipes layered so much depth and flavor, pulled from both fresh and dried herbs and spices and elegant oils like walnut and grape seed, that really kept the palate interested and happy - thinking. And using ingredients like barley, quinoa and whole grain rice kept me from pining for, craving or needing pastas, potatoes and breads. No, really.

But my morning coffee with full-fat cow milk is already back, boyeee.



I will say that this two-week food lover's cleanse is not for every one. It's title is apt. To really, really execute this cleanse, one's love of food must be infinite. Also beneficial is employment in the food field (writer, photographer, recipe developer et al). In fact, one may find it difficult to pull this off above fifty percent if one has an actual nine to fiver that is not in the food arena. And here's why: these past two weeks required an inordinate amount of time in the kitchen. A few hours a day. Even though it was extremely well conceived - using elements from the previous night's dinners for the next day's lunches, certain components prepared in batches or the night before to simplify the process of some breakfasts and parts of other meals (like the barley and dressings and compotes) it was still a bear. Oh, and try popping off to the market to grab a bit of orange flower water, why don't you? Hell, I had to try four different ones here until I landed the Bhutanese red rice. At times it was kind of like a scavenger hunt.

Another note of mention: it is not cheap. This was easily a $600 initiative (for two people, mind you). I will add that many ingredients were optional or could be substituted for others. For example, you could reasonably use walnuts in lieu of pistachios or extra butter lettuce or watercress in lieu of arugula. And admittedly, that orange flower water was on the optional list. But really, that's nickel and diming. Many of the big dollar items are pantry ones – specialty oils, dried spices and herbs and things like chia seeds and pine nuts. These are also presumably things that will last long after the cleanse. And we did not eat a single meal out for two solid weeks. So maybe it balances out. It depends on how you live your life in food, I suppose. But it's good to know what your bottom line is likely to be.



But for me, a lot of good came out of this cleanse. For too long now I have been absent in the kitchen. This new(ish) life, with this new(ish) baby chews me up and spits me out at the end of each day. By the time I get her to sleep, I'll eat whatever is easiest, first available or what Fred feeds me. My meals are sporadic and, as a result, randomly portioned – usually far too big. This cleanse has taught both Fred and me to plan better with meals, batch cook, eat smarter and seriously rein in the portions. Four ounces of protein is a gracious plenty. But it has been fun: we looked forward to each of our meals. The chopping, sizzling, and stirring, the news or music on the radio (oddly, we found ourselves in a Cat Stevens mood often while cooking these dinners), a candle lit on the table, and actually eating the meal at the table. I guess you could say we have returned to food. We even used a good deal of the surplus produce - the carrots, beets, sweet potatoes, and butternut squash - to start Emerson on solid foods. Everyone wins.

And here's one more thing: I lost ten (10) pounds(!). How you like them apples? 
(Apples with almond butter = often the 'afternoon snack' of the cleanse).

As I stated, we will try to carry on some of what we learned during the course of the cleanse. But the reality is, life is happening, too. We won't always have as much time and energy to put into each and every meal. Plus, it will be nice to have a social life again, share meals, coffee and drinks with friends and family, and Good Lord, eat a meal out again! But I really appreciated that Fred and I stuck this out and I can probably place a safe bet that we will do it again next year. Each year deserves a fresh start, right?



After we completed the cleanse, Fred and I sat down – over chia pudding and fresh fruit, mind you – to settle on our favorite and least favorite foods of the cleanse. Here's where we landed:

Roasted Pork Tenderloin With Porcini Broth

4 servings

Ingredients
½ ounce dried porcini mushrooms (about ¾ cup)
1 1¼-lb. pork tenderloin
Kosher salt and freshly ground pepper
2 tablespoons olive oil, divided
1 small shallot, finely chopped
4 ounces wild or cultivated mushrooms (a combination of black trumpet, maitake, chanterelle, beech, oyster, and/or shiitake), trimmed, halved if large
2 medium carrots, thinly sliced on a diagonal
1 cup homemade chicken stock or low-sodium chicken broth

Directions
Preheat oven to 425°. Place porcinis in a heatproof bowl and cover with 2 cups boiling water. Set aside until porcinis are tender, about 20 minutes. Strain, reserving liquid and mushrooms. Finely chop mushrooms.

Season pork with salt and pepper. Heat 1 Tbsp. oil in a large skillet over medium-high heat. Add pork and cook until browned on all sides, 6–8 minutes. Transfer to a rimmed baking sheet and roast until an instant-read thermometer inserted into center of pork registers 140°, 15-20 minutes. Transfer pork to a cutting board and let rest 5 minutes before slicing ½” thick (about 15 slices).

Meanwhile, heat remaining 1 Tbsp. oil in the same skillet over medium heat. Add shallot, mushrooms, and carrots, season with salt and pepper, and cook 1 minute. Add porcini broth, chopped porcinis, and chicken stock, season with salt and pepper, and simmer until vegetables are tender, about 4 minutes.

Divide pork among shallow bowls and ladle broth and vegetables over top.

The First Seduction


I've noticed that lots of people (especially, ahem, older folks) really love to talk about the weather. What it was like a few days ago, the upcoming forecast, and the current moment's temperature - sky, light, precipitation or lack thereof - are all equally consequential. Perhaps I have noticed this more acutely after spending over a decade in a mostly sunny and 75 degree arid region. But LA does have its seasons. They come in hints, little seductions: the Santa Ana winds in the fall, the rains in the winter, the return of the bright blue sky in the spring followed by the June Gloom and the smog in the summer. There, I was a dog walker– out in the elements every day, and still it was rather pointless to check up on the forecast to figure out whether stockpiling was in order or making sure I had the right 'gear.' With the exception of the annual week long rainy season in February, a hoodie and a light scarf would always suffice.

Back in Southern California, with bounty and sunshine available all year long, I never gave a second thought to sharing a story and a recipe about my patio garden, fresh tomatoesor an anecdote about traipsing around by the beach. In March.

But my how the winds have changed. I haven't seen green grass or fresh tomatoes in months, I've spent the least amount of time necessary outside in the elements bundled up in a strata of fabrics with only my watery eyeballs exposed. The closest thing to any beach-like elements involved the salt stuck on my boots from being poured over the sidewalk after shoveling the snow from the front of our house. The trees have been bare and the sky grey.

Until a few days ago.


A few days ago the sun shone brightly and the temperature reached a balmy 70 degrees. And the city came alive – it was pulsing. People were out on their porches, out in the parks, out in the restaurants, out on their bikes, they were everywhere. And though the trees are still bare, and there is no green grass or fresh tomatoes yet, the promise of all of that and more was palpable. Exciting. Because it's a hint of the breathtaking glory, the explosion of Spring (which is downright stupendous here) that is just right around the corner. Even better than a clandestine glimpse between the button of a blouse, it was a major seduction.

And I do love a seduction. A little tease. Probably why I so love the femme fatales from Film Noir. It's all about the want, the suggestion. Once the characters get what they want, it's all downhill. But, given the chance, they would undoubtedly do it again. Just like the four seasons and our responses to each one and the one sneaking up next. Agitated about Winter by the end of Winter, daydreaming about carefree Summer, then agitated about Summer by the end of Summer, daydreaming about cozy Winter. I guess we aren't much different than the duped Walter Neff in Double Indemnity. He knew it was a bad idea, but Barbara Stanwyck's anklet, her seduction, was where his will and determination would lead him, hell or high water.


Speaking of the onset of Spring and of films, one tell-tale event that speaks to both, the Academy Awards, is happening this weekend. And in that very city of subtle seasonal changes, the city of limos and lights, Los Angeles (which, in an interesting twist from the ultimate femme fatale, Mother Nature, is experiencing torrential downpours). Though I was never directly involved in 'the business' during my tenure in LA, nor did I get too, too wrapped up in the glitter and glamour of that which is Hollywood, I have always enjoyed the Oscars. I love a simple little soiree to celebrate the occasion replete with drinks, precious crabby snacks and homemades and, of course, the requisite Oscar ballots for everyone to cast their votes.

So, tomorrow, on my first Oscar night back in Richmond, with my oldest and dearest friends all around me, I will take a peek back into the city I left behind, my City of Angels, glowing bright and beautiful, rain or shine. And I will serve these delicious little sandwiches, which are a twist on the classic Croque Monsieur, which I was first seduced by at the famed Chateau Marmont – easily my single most missed place in all of Tinseltown. That place is magical. Talk about a seduction.



Croques Besito
(recipe adapted from Food & Wine)

Makes 16 bite-sized sandwiches

Ingredients
Sixteen 1 1/2-inch cubes of a rustic loaf of bread (remove all crusts)
4 tablespoons unsalted butter, 2 tablespoons melted
2 tablespoons all-purpose flour
1/3 cup whole milk
4 ounces of Comté or Gruyère cheese, shredded (1 1/2 cups)
1/4 cup finely diced, cooked bacon
Pinch of freshly grated nutmeg
Kosher salt and freshly ground pepper
Finely chopped fresh chives (for garnish)

Directions
Preheat the oven to 375°. Using kitchen scissors, cut a 1/2-inch square from the center of each bread cube; don't cut through the bottom. Discard the squares. In a bowl, toss the hollowed-out bread cubes with the 2 tablespoons of melted butter. Arrange the cubes on a baking sheet and bake for about 8 minutes, until they are lightly toasted.

Increase the oven temperature to 425°. In a small saucepan, melt the remaining 2 tablespoons of butter. Add the flour and cook over moderate heat, whisking, until smooth, about 1 minute. Whisk in the milk until a thick paste forms. Remove from the heat and fold in the cheese and bacon. Season with the nutmeg, salt and pepper. Spoon the cheese filling into the bread cubes. Bake for about 5 minutes, until the cheese is melted.

Top with fresh chives. Serve hot.

Winging It.



Before I begin, I would like to make a bold statement: never again will I have a brilliant writing concept as I'm falling asleep and assume I will recall it the next day. I would like to tell you all right here and now that forever forward I will keep an adorable little notebook and a nice pen on my person at all times. Even in bed. Especially in bed.

That said, I promise this will still be just as great as my brain flower seemed last night, while half asleep and a few glasses of wine down the hatch.

I know this because I want to talk about wings. And, really, who doesn't like wings?

Actually, for the better part of my possible wing-eating adult life, I have been slightly repulsed by them. Wing consumption can appear a little desperate, a little cannibalistic, hands in face, both covered in cloying, sticky sauce, gnawing away at that tiny little bit of meat. I found the meat-to-bone ratio unnerving.

But I've been sheltered. I have not been around wings much. Wings are usually served in bars. To be specific, wings are usually served in bars with beer and sports and boys in baseball hats. And while I am a fan of sports and boys and baseball hats (though not necessarily together), you won't often find me with a beer in my hand. I am a wine drinker through and through. And the bars I just mentioned, often at these bars, when I ask what sort of wine they serve I hear, “Both kinds. Red and white.

Call it lack of exposure, call it association, but you can clearly see why I'm not a wingophile. But a few, perhaps six or so, years ago, my then boyfriend (who always wore a baseball hat, followed sports (if they were New York teams) and drank beer in the appropriate bars with others like him)) noticed a blurb about wings in an issue of Saveur I was reading. The recipewas the original from the Anchor Bar in Buffalo, New York. He was very into all things New York, being from Jersey himself. And so he tore the page out, shopped for the ingredients, including some ubiquitous and authentic cayenne pepper sauce, and made a batch of Buffalo wings that, to him, tasted like 'home.' I think he may have even smiled.

And you know what? More importantly, I liked them just fine. Even better, I secretly basked in the carnivorous, sloppy-faced, blue cheese dressing soaked process of it all. But I still paired mine with wine. A crisp white, I believe.

He made the wings once or twice more before our relationship ended. Funny thing, when he moved out, I'm almost positive he took that hot sauce-stained-ripped-out magazine page with him - and not a whole lot else.

In the years since, I've had very few wings. Until now.


It's summer, and Fred (who rarely wears baseball hats or goes to bars, but does enjoy his sports) not New York teams, however)) is back in full-on grill mode. And, in addition to all of the steaks, pork tenderloins, salmon, veggies, brick chickens, shisito peppers, and the like, Fred has been grilling wings.  A lot. About five or six times, now. Each time he has riffed and each time he has done something slightly different, be it in the marinade, the dipping sauce or the garnish. But every single time, with my sticky fingers and my smiling face, messy like a five year-old playing in the mud, I look down at my plate of carnage, my mountain of tiny, little chicken bones, and the cloth napkin, so dotted with sauce it resembles a Pollock painting, and exclaim how much I absolutely love wings. With a crisp, white wine, of course. I'm not an animal.


And I always want at least one more.

So, after all of this, I still don't remember what my brilliant, masterpiece brain flower was from last night. But I do remember I was thinking about the concept of 'winging it', and that I thought I had some extraordinary watershed concept with regard to that phrase. And, I suppose since it had dissapeared completely by the time I opened my eyes this morning, in writing this today, I did in fact, 'wing it'.

But I'm still keeping an adorable little notebook and a nice pen next to my bed from now on.


BBQ Buffalo Wings with Avocado-Ranch Dip

Serves 2-6, depending on your appetite.

Wings:

3 pounds chicken wings
Salt
2 Tbsp vegetable oil

Marinade:
1/2 cup unsalted butter
2 tablespoons Texas Pete's, Tabasco or hot sauce of your preference
1 teaspoon salt
1 teaspoon brown sugar
1 teaspoon honey
1 teaspoon black pepper

To make the sauce, mix all of the ingredients together in a small pot set over low heat and stir constantly until the butter melts. Once the butter melts, take off heat and whisk the sauce vigorously and set aside. It should remain liquid, but if it starts to solidify, heat it up just enough to melt it, whisking all the time. Never let it boil.

Toss the wings with the vegetable oil and the salt, and arrange in one layer on the grill set over low heat. If you are using charcoal or wood, set your fire on one side of the grill and arrange the wings on the other side, away from the direct heat. You want them to cook slowly. Cover the grill and cook for 30 minutes.

Turn the wings and baste with sauce. Close the grill and cook for another 30 minutes. Repeat the process, painting the wings every 15 minutes or so until the wings are cooked through. Make sure you have a little leftover sauce to toss the wings with at the end. Serve with the avocado-ranch dipping sauce.


Avocado-Ranch Dipping Sauce:

1 ripe avocado, halved and pitted
1/2 cup buttermilk
1/4 cup mayonnaise
1 tablespoon diced red onion
1 tablespoon chopped cilantro
1 clove of garlic
1 teaspoon fresh lime juice
1/2 teaspoon hot sauce (like Tabasco)
1/2 teaspoon sugar
salt & pepper to taste


Place the avocado in a food processor and add hot sauce and lime juice. Set the food processor to puree or high, and puree the avocado for 30 seconds or until it is a smooth paste.

Lift the lid from the food processor and to the avocado add buttermilk, mayonnaise, red onion, cilantro, garlic, sugar, and 1 pinch each of salt and pepper.

Replace the lid on the food processor and pulse the ingredients 5 or 6 times for about 15 seconds each time until all the ingredients are thoroughly combined. It may need a few more pulses if the garlic is not chopped finely enough.

Check the dressing for salt and pepper and adjust if required. You can add a bit more hot sauce at this point as well, if you want it a bit spicier.

Refrigerate until ready to use.


Four years ago: Vichyssoise


It's like, a heat wave.


My word. June strutted out with a lasting impression. We've got a full-on heatwave out West. It's that kind of heat, that muggy, oppressive heat that crosses over into kind of sexy. I mean, you just can't help it if it's so hot that you must walk, or rather, sashay, around in nothing but a slip and and something cool to drink in a glass beaded with sweat. You may even have to put said glass up to your forehead or the side of your neck to further assist in cooling off. I'm just saying...

Or you could grab your bathing suit, an exceptionally cute looking, breezy throw over, and call your friends with a pool. Then you are able to do all of the above, but while sporting a bikini under an exceptionally cute looking, breezy throw over in lieu of the slip, and actually be cool – while acting sultry.

And so, yesterday, that is exactly what Fred and I did. The only thing is, unlike Fred - and most people - I don't really care much for pools. Unless they are about as hot as a bath would be. And I also realized that it had actually been a couple of years (three) since I had put on a bikini. But, I figured, it was that hot and I would be spending the afternoon with good friends - very good, old friends. So I threw the bikini and my impossibly perfect and exceptionally cute looking, breezy throw over into a canvas bag, grabbed my just-so worn-in, flouncy straw hat, and my fancy sunglasses and hopped in the car with Fred to head over to Kisma and Jonathan's place for a beat-the-heat poolside, backyard picnic.

The backyard picnic is great, as it can be as ornate or pared down as you want it to be. Why? Because a kitchen is right there. You don't have to pack cleverly or concisely. Fitting everything into a basket or back pack is a non-issue. And another fun possibility with a backyard picnic: games! Backgammon, chess, croquet, volleyball, Yahtzee, water polo... if you have the game, you can play the game. But all the fun picnicy parts are all in place: blanket, lots of snackies and noshables, any number of drinks (even the adult variety) and, of course, the flies. It seems no picnic would feel like much of a picnic without flies, ants or mosquitos, so just man up and deal with it.


After a quick dip in the pool, some laughter while recalling the debacle that was the end of my birthday last week over a glass of wine, and oogling and googling with their baby, Jones, we all got into our various places in the kitchen and grill to begin cooking, slicing and assembling everything for our picnic. We had a cheese and charcuterie plate with rosemary crisps, some homemade pickles, roasted almonds, cornichons, an orzo salad with fresh veggies and herbs from the gardenblanched and chilled haricot verts with minced garlic, lemon and purple basil flowers, grilled bratwurst with lavender and thyme sauerkraut and brown mustard, grilled haloumi, celery stalks and homemade bleu cheese dressing for dipping, fresh strawberries and blueberries with candied ginger, a couple of watermelon and lime water cocktails and some chilled wine. But what ended up being the star of this glorious spread was actually all Fred's. He has made this dish a handful of times, now with much success: grilled then marinated Summer vegetables over grilled rustic bread topped with burrata. It can be a snack, it can be an appetizer or it can be lunch. It's fresh, seasonal, robust, bright, and has a medley of shapes, colors, flavors and textures. You can use whatever veggies you happen to have at a given time, making it versatile, fairly easy and extraordinarily delicious.


After our massive festival of grazing food and sipping drinks, we all jumped back in the pool for another cool down before some more lounging in the grass, a little more grazing and another glass of so and so. Next thing we knew it it was seven o'clock. You have to love these long, Summer days.

And so, with the end of June comes the end of our picnic posts (for this year, anyway). And I can think of nothing more perfect with which to close out a month of picnic ideas that this recipe for Fred's grilled, marinated veggies. And, likewise, I can think of no recipe more perfect which which to usher in July.

Grilled, Marinated Summer Vegetables over Rustic Toast with Burrata

Serves 6

3 summer squash or zucchini (about 1 lb.), sliced on a diagonal 1/2" thick
3 red, orange or yellow bell peppers, cut into 1" strips
1 bunch of asparagus, trimmed
4 tablespoons extra-virgin olive oil, divided
Kosher salt & freshly ground pepper
2 garlic cloves
2 tablespoons Sherry or red wine vinegar
1 small shallot, minced
4 sprigs oregano

1 loaf of rustic bread, sliced into large chunks and brushed with oilve oil, lightly grilled or toasted.

1 lb. burrata

Place squash, pepper and asparagus in a large bowl with 1/2 tablespoon olive oil, salt & pepper and toss to coat. Spread out in a single layer on grill, turning peppers skin side up.

Roast until tender, turning squash once, about 15-20 minutes. Let cool slightly; remove skins from peppers.

Whisk garlic, shallot, vinegar and remaining olive oil in a large bowl; season with salt & pepper. Add vegetables and oregano; toss to coat. Cover and let sit at least an hour.

Portion burrata evenly onto slabs of grilled bread and top with marinated vegetables.




Leftovers


Christmas has come and gone. The gifts have been thought out, purchased, wrapped, received, unwrapped and put away. The guests have come and gone. What remains, however, is a lot of leftovers. Fred and I have done all sorts of things imaginable with all of the leftovers in the fridge - the most creative being a shepherd pie of sorts. We took the leftover prime rib, chopped it up with some carrots, celery and red wine and turned it into a boeuf bourguignon. Then we took the scraps leftover from the domino potatoes, boiled them and made a mash. We put the remains of the winter greens gratin in the mash and stirred it all together. Then we put the bourguignon in a casserole, topped it with the mash and baked it. That was dinner one night. And a snack the next day. The funny thing is that now we have that leftover in the fridge.


I feel like Sisyphus, but my rock is leftover food. Actually, my rock is the ham. We weren’t entirely certain we would have enough food to feed our seven, possibly eight, guests for Christmas dinner (a thought, that in hindsight, was absurd) so we asked Fred’s mom’s boyfriend to bring a ham (he had offered). Needless to say, the ham never even saw the dinner table on Christmas as we had an over abundance of food.


So I sent everyone home with some ham that night. And the next day there were ham sandwiches. And some ham biscuits the day after that. We even had ham and eggs for breakfast the next morning.


But even yesterday, when I opened the fridge, the ham was still there. And a lot of it. I wanted to get the hock to make ham and beans, but there was still so much ham left to use. So, I did what I often do in these situations; I called Mom. You see, my mom makes a killer ham salad.


My mom is also moving back to Virginia in less than two weeks. So right now, any excuse to see, or talk to her is welcomed. In fact, lately, we’ve been talking about five or six times a day. Yesterday it was about ham salad. She told me her recipe and her technique, and while Fred watched football in the den, I took every last shred of meat on that ham, got two chefs knives, and went cray cray on some ham salad. My mom told me Uncle Dougerton especially loves her ham salad, so I delivered some to him today. I also took some to my girls at Lindy & Grundy, since they love anything my mom makes.


Today is New Year’s Eve, and I’m sitting on the sofa, writing this, completely swaddled in the blanket my mom knitted me for this Christmas. She has been working on it for well over a year and it shows. It’s huge. It’s like twenty feet long huge. It’s bright and colorful and filled with different textures and shapes. I know it will be in my life forever. My kids and grandkids will love this blanket. I look at the blanket and I know she touched, and thought about, and poured love into every thread, every millimeter of it. Did she know what she was giving me right before she is moving away? My favorite leftover of them all. An heirloom.


And this recipe for ham salad.




Kathy's Deviled Ham Salad


Ingredients:
2 cups ham, really finely chopped
1/4 cup sweet onion, finely diced
1/4 cup celery, finely diced
1 large dill pickle, diced
3 tablespoons mayo
1 teaspoon dijon mustard
Dash of sherry vinegar
Salt and black pepper to taste


Directions:
Mix all the ingredients together until blended but not too smooth as you want a bit of texture. Taste and adjust any seasoning or add more mayonnaise if you like. A little drizzle of pickle juice is excellent as well.


Yield: About 3 cups. Keeps in the refrigerator for a few days.

Dr. Strangecleanse



I’m currently on a cleanse. I did one about a year ago, too - which was my first cleanse. That makes this one number two (pun intended). The first one I did with Maggie and was bookended by an alien procedure (just leave it alone). But the week in the middle, the diet, was not that strict. I believe it was no meat (but some fish or a little chicken was okay), no dairy, no caffeine (but maybe an occasional coffee, or preferably tea, was okay), no booze (but maybe one or two glasses of wine throughout the entire week were okay), and no wheat or gluten. And drink a glacier's worth of water each day. During this I was to take supplements in the mornings and evenings. This cleanse was a bust - and an expensive one at that. I did not feel different, my skin was not all glowy, I did not lose any weight (that I know of (I don’t actually own a scale)), and I don’t recall any increase in energy.

But it was entertaining. In a way. Feel free to ask Maggie about it.

As it had been about a year, and I hear its good to cleanse every so often - to detox, as it were, I convinced Fred that we should do a cleanse together. I thought the beginning of September, right after he was all, totally, completely moved in would be perfect. The end of Summer, the beginning of our official cohabitation, a brand, new day. So while I did no research at all, Fred asked his friend, Ryan, who had done a cleanse fairly recently, how he went about his process. And here’s exactly what Fred got back:

i start with three days faste. nothing but water. tonic water is really helpful because you will crave (esp day 02) crazy shit like a pregnant lady. keep activity down and focus on work. after that its simple. no meat, dairy, sugar, wheat. stick to it! you will want to stray. lentils are your best friend. small portions. the restaurant cru in silverlake is a good place to go out after your three days faste. lots of options. the largest discipline is learn ing to be ok with being hungry. questions anytime. so worth it. i can give you more extreme path if you want. any questions ask and remember its basicall y a reversion of every eating habit since childhood so its not easy. but guaranteed you will experience increased energy and focus after one week. and th en its just how long you can do it... raw veggies.

And so, beginning at Midnight - a week ago this past Monday, with this text from Ryan (mis-spellings and grammar aside (everyone knows all's fair in love and texts in that regard)), Fred and I embarked on our cleanse.


I am a little more than halfway through right now, and I will keep my opinions on it to myself until I am on the other side. I will say that I will never fast again. I am with the Chinese on this one: fasting is not good. At least not for me. Hunger was not an issue but I got really depressed. Also, I didn’t know what to do with myself. I mostly wanted to sleep until it was all over. I felt truly lost. I called it at the end of day two. I will say that the fasting part made eating the very limited diet downright exhilarating. You mean, I can really have a carrot stick? What joy!

And so what we have been eating a lot of has been water, water with lemon, quinoa (which, I’m sorry all y’all bloggers who that cannot stop professing your undying love for the stuff, but I just don't get it.), water, lentils (which Ryan is right, is my best friend - but I’ve always loved lentils.), water with lemon, almonds, fresh fruit - which I say has sugar in it (refer to Ryan’s text) and therefore should not be allowed, but Fred says it’s fine - and fresh veggies in every sort of variety: raw, yanked from my garden and popped into my mouth, grilled, pureed, roasted, in salads, soups, you name it. And water. Can we have egg whites? Fred says no, but I don’t see why not. And so we keep referring back to this cryptic text from Ryan. It says no dairy. But eggs haven’t been really considered dairy since the eighties. Some websites say yes, some say no. We never hear back from Ryan, so we err on the side of if you want it, you probably can’t have it. We also have had a lot of water.

During this cleanse, I have eaten at M Cafe, Cafe Gratitude, and even Ryan’s suggestion, Cru. While I have always been a fan of M Cafe, I have a new appreciation for Cafe Gratitude (though I have to agree with Chris in that their whole concept really sets LA back about twenty years in the stereotype department), and Cru, where I likely shan't return. But that’s just me - perhaps it's just not my cup of holistic-non-caffeinated-tea-that's-supposed-to taste-just-like-a-double-espresso.





Shockingly, I have not had that difficult of a time with wine’s absence. I crave a glass most when I’m in the kitchen preparing food and listening to music in the evening (don’t get me wrong, I have a special bottle waiting for Friday to celebrate the end of these shenanigans. And I am beyond excited about tearing the cork out of that bad boy and bottoms-ing it up.). The lack of coffee hasn’t been too bad either, as long as I can have a hot mug of something in the morning, like the stupid ginger tea I’ve been parading around as my cup o’ joe. At least that feels better.

My timing on this whole thing, by the way, was just atrocious. This is not something to embark on with your boyfriend, who pretty much JUST moved in (and the moving process was long and stressful). No more secrets or mystery here! No need to ever shut the bathroom door for privacy again. Why bother? We've been in it and through it together, now.

My dad thinks I’ve lost my mind and has practically taken my last name away from me. “No wine? That’s crazy. What sort of self-respecting Shaffner would... Why would you even do that to yourself? No cheese? Elliott, I don’t think this sounds healthy at all.” And he actually sounded very dire while he said this to me. I think my mom just thinks its boring. “Tweeters, Lordy, don’t write about your cleeeaaannsse. Write about your garden! Or, at least, something interesting or special.”

And she’s right. I write a food blog. So why am I going on about the deficit of all things delicious, decadent and downright debaucherous? Where’s the beef? When is it Wine O’Clock? Friday, my friends. Friday.

Until then I will leave you with the recipe for a mignionette Fred made to top the couple dozen oysters we ate (and the multitude of bottles of wine we drank) the night before this ten day Hell storm began. And hey, Mom, we used stuff from the garden!






Poblano-Sherry Vinegar Mignonette


Serves enough for 2 dozen oysters

Ingredients:

1/4 cup rosé
2 tablespoons sherry vinegar
2 tablespoons minced shallots
1 tablespoon minced poblano pepper
1 teaspoon chopped fresh tarragon
1 teaspoon chopped flat-leaf parsley
Coarse sea salt & fresh crack pepper to taste

Directions:

In a small mixing bowl, whisk together all ingredients. Cover and refrigerate. Serve with oysters on the half shell with a wedge of lemon.

The Red Hot Chili Peoples


It’s been hot. It’s been the kind of hot we don’t get too often here in Southern California. But it’s August. The month when almost everyone in the country can experience the same thing: sweat. This particular heat wave has been a bit of a doozy. I know, compared to the heat coupled with that added bonus of humidity happening on the East Coast, we have been fortunate. But we really have had hundred degree days over the past couple of weeks.

This is the kind of hot I both loathe and love. While I am slightly miserable roaming around during the day, worrying about getting sunburned and, of course, my social curse: the sweat moustache - the cool, arid, balmy, breezy nights are just, well, sexy. Perhaps it’s even more so because of enduring the day part, but it’s so exhilarating to feel that sultry, lustful air on my skin and in my hair on these evenings. And no unsightly sweat moustache.

Since it is right at that time when the thermometer outside is stuck at the “hot and sticky” mark, Fred and I couldn’t have picked a better time to move in together.


So, to heighten the challenge of endurance, Fred and I have spent the last two months moving his stuff out of an apartment he has occupied for ten years and relocating said stuff into a house where I have been residing for four years - during weekends, right in the middle of the day. Barrels of joy and without any bickering. No-sir-ee.


Another super smart and obvious choice to make in the kitchen department would be to eat a lot of salads and make ultra use of the grill. So last night we decided to throw a pot of oil on the stove, get it up to about 350 degrees, and fry stuff. It was just about the worst idea ever: scorcher of a day, no air conditioning, tiny kitchen, bare skin, scaldingly hot oil, really messy cooking experiment.


But also really delicious.



Parts of it did make sense. We used produce from the garden. The dish felt fresh and summery. It would probably go great with a cold beer and did go really well with a crisp rosé. It was snacky.

It was zucchini fries with poblano cream. The zucchini and the poblanos came straight from my garden - which is so happy this year. I guess it was just going through puberty for the past couple of years and is finally growing up. The Meyer lemon we used to squeeze on top was from a neighbor' tree. It was all so precious. And it was very good. The zucchini kept it's textural integrity and had a light, crunchy shell. I thought the poblano cream was the most exciting part. It was cool, light, creamy with a subtle, warm, roasty heat. I plan on using it to top a chilled heirloom tomato soup this weekend, and I can only imagine it is delicious, and versatile, enough to have a myriad of other applications.

So yes, thank you Los Angeles, for pulling out all the stops where the sunshine and heat are concerned. It’s sweaty, dirty, nasty stuff, even before all the moving boxes and the bags and the dust. But last night, even though we picked a peculiar thing to get kitchen concoctery with, everything worked out. We set the table, turned on the fan, poured ourselves a couple of glasses of rosé, plated up our dish and sat down across from one another - and our burn blisters - to enjoy a peaceful evening of quiet, still, snackery. Together in our home together. 




Zucchini Fries with Poblano Cream

Serves 4

Poblano Cream

Ingredients

8 oz. creme fraiche
1 roasted and peeled poblano pepper
1 tbsp sherry vinegar
salt & pepper to taste
Chopped celery leaves, to garnish

Directions

Blend creme fraiche and pepper in food processor and pulse until pepper is broken down and mixed in. Pour into small mixing bowl and fold in vinegar, salt & pepper. Stir until flavors are well integrated.

Top with chopped celery leaves.



Zucchini Fries

Ingredients

  • Olive oil, for frying
  • 1 1/2 cups panko
  • 3/4 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/4 teaspoon paprika
  • 2 large eggs
  • 3 medium zucchini, cut into 3-inch long by 1/2-inch wide strips

Directions



Pour enough oil into a large frying pan to reach a depth of 2 inches. Heat the oil over medium heat until a deep-fry thermometer registers 350 degrees F.
Stir salt, pepper, paprika and panko together in a medium bowl to blend. Whisk the eggs in another medium bowl to blend. Working in batches, dip the zucchini in the eggs to coat completely and allow the excess egg to drip back into the bowl. Coat the zucchini in the panko mixture, patting to adhere and coat completely. Place the zucchini strips on a baking sheet.
When the oil is hot, working in batches, fry the zucchini sticks until they are golden brown, about 3 minutes. Using a slotted spoon, transfer the fried zucchini to paper towels and drain.
Serve with poblano cream for dipping.
