The Cousin of Sleep


Now, I'm pretty sure I'm going to step on someone's toes with this statement, but toes be damned...

Nas' 1994 debut album, Illmatic, is in a word, perfect. From the first track to the last Illmatic is a narrative of literate, fluid rhymes with sophisticated, thoughtful beats rooted in some of the best and most esoteric of jazz and hip hop. It's both simple and ambitious with no extraneous elements. It's smart and it's fun as hell. Just you try not to move your body while you listen. And once the album is over, I am always left wanting more.

It's an especially great album to listen to in the car. And, of course, I'm listening to it while I write this.

But there is one line that always gives me pause. It's from the second track, N.Y. State of Mind, "I never sleep, cause sleep is the cousin of death.” It could be that I'm a really big fan of sleep, or that I also have no problem, in concept or practice, with sleeping say, twelve hours straight. My head hits the pillow, I close my eyes, and I'm out. I also feel that sleep is really healthy (maybe not the twelve hour variety). It's good for the mind and body. A person can go crazy, can die, without sleep.

So why is it the cousin of death? Because your eyes are closed and you're lying down? Our minds are in superdrive with dreams during sleep, so it can't be mental. And wait, what about the ancient belief that sneezing is a near-death experience, and that a blessing will prevent your soul or sneeze from escaping your body and will deter the devil from entering? Shouldn't the line then be, “I never sneeze, cause sneeze is the cousin of death"? It surely seems more literal. And why cousin? I suppose it sounds better than nephew... the nephew of death.

The things that keep me up at night... At least they keep me further from death's cousin.


I've been thinking about sleep (and hence, that line) a lot because I'm not getting much of it. I'm pregnant and getting pregnant-er by the day. If I'm not up every hour for the bathroom, then I'm struggling to use the proper sleeping positions (my favorite body placement is apparently not recommended for pregnancy). Sometimes I even wake up in the middle of the night famished. And I know that this part will only get worse as time moves forward, and then there will likely be no sleep at all after our baby girl is born.

I've always been aware of, but paid little attention to, a couple of food/sleep – related old wives tales. One is that warm, liquidy stuff, like heated milk, tea or soup can be a soothing, sleep inducing aid. Another is that spicy food causes fitful sleep, or plainly put, nightmares. Well, what about spicy soup? Would that make for an extremely solid, good, long sleep with tremendously complex and mysterious dreams? Is this what the likes of David Lynch or Francis Bacon would have before bed while conceiving of their films/paintings? It most certainly would explain that which is Salvador Dali and Luis Buñuel's surrealist extravaganza, Un Chien Andalou.

So I figured, not only will I get some sleep, but I'm going to get some wicked creative sleep. What do I have to lose, right? Heck, maybe just maybe my opus, my Illmatic, would result. And, upon more listening to N.Y. State of Mind - I never sleep, cause sleep is the cousin of death. Beyond thewalls of intelligence, life is defined – I have to wonder if Nas himself tried this very same tactic. I'd like to think so. Maybe he'd like to try my racy-spicy pozole rojo one late night for the fuel to put him in the state of mind to put forth something as important and noteworthy as he did back in 1994.


Pozole Rojo
(recipe adapted from Emeril Lagasse)

Makes 4 quarts

Ingredients:
1 head garlic
3 1/2 to 4 pounds bone-in pork shoulder, cut into 3 or 4 pieces
3 teaspoons salt
1 teaspoon freshly ground black pepper
14 cups water
4 cups chicken stock
1 onion, sliced and 1 onion, chopped
2 ounces ancho chiles, seeded and stemmed
1 -ounce guajillo chiles, seeded and stemmed
2 (30-ounce) cans white hominy plus 1 (15.5-ounce) can
2 tablespoons chili powder
2 teaspoons ground cumin
2 tablespoons paprika
1 teaspoon black pepper
1 tablespoon ground coriander
1 teaspoon cayenne pepper
1 tablespoon garlic powder
1 teaspoon crushed red pepper
1 tablespoon salt
1 tablespoon dried oregano


Accompaniments:
Diced avocado, for serving
Thinly sliced cabbage, for serving
Julienned radishes, for serving
Chopped scallions, for serving
Chopped cilantro, for serving
Lime wedges, for serving


Directions:
Season the pork with 1 teaspoon salt and 1 teaspoon black pepper.

In an 8 quart Dutch oven, over medium high heat, brown the pork on all sides. Add the sliced garlic, sliced onion, 10 cups of the water and chicken stock. Bring up to a boil. Skim off any foam that may rise to the surface. Turn the heat down and gently simmer the pork, covered, until very tender, 2 1/2 to 3 hours.

While pork is simmering, toast the ancho and guajillo chiles in a pan over medium-high heat. Turn the chiles several times, cooking until they are pliable and fragrant, about 3 to 4 minutes. Add 2 cups of the remaining water; bring to a boil, turn off and let stand covered for 20 to 25 minutes.

In a blender, combine the chiles, the soaking liquid, chopped onion, garlic, 1 teaspoon of the remaining salt, black pepper, chili powder, cumin, paprika, coriander, cayenne pepper, garlic powder, crushed red pepper, and oregano and puree until smooth. Strain through a sieve to remove any skins or seeds. Set aside.

Transfer the pork to a cutting board, discard the bones, and shred the meat.

Rinse and drain the hominy. Return the pork to the broth; add the hominy, 1/4 cup of the chile sauce (or more to taste), remaining teaspoon of salt, and remaining water if necessary. Simmer the pozole for 30 minutes longer. Adjust seasoning if necessary.

Any leftover chile sauce can be stored in an airtight container in the refrigerator for 2 to 3 weeks and may be stirred into marinades, sauces, soups, or stews, or used to flavor meats before grilling or sauteing.

The pozole should look hearty but be brothy enough to be thought of as a soup or brothy stew.

Serve the pozole buffet style with bowls of the accompaniments for guests to add to their taste.

Deep in the heart of Texas.


We arrived at our next stop after a long day on the road. We had driven all day and only been in one state – so you know we must have been in Texas. I was extra excited because A) I was meeting an old friend I hadn't seen since college, and B) I had never, ever been to Texas before. One thing for sure; there would be BBQ.

Now, I'm from the East Coast and that's usually the Carolina style BBQ camp. This means the meat (usually pork) is served pulled, shredded, or chopped. The predominant flavor is that vinegar-based sauce - it's tart. And cole slaw is invariably on top of it. Texas BBQ sauce is darker, thicker, tomato-ier, it's sweet. And this Q is slaw-free (or, at least, on the side).

After a fury of back and forth texting from the road with my friend, we agreed to meet at the landmark Texas BBQ joint, The Salt Lick. It worked out beautifully as we rolled into town in the middle of a beautiful sunset. The restaurant wasn't too far from their house – a little ways out of Austin, on the side of a long, lonesome, bucolic road in Driftwood, Texas. They call it Hill Country.


Opened in 1969 by Augustus 'Texas Boy' Roberts, Sr. and his wife, The Salt Lick grew quickly in popularity and went from being open only a few times a year to being open seven days a week. Upon walking into the large, ye olde wagon wheel, lodge-like space, I was greeted immediately by the massive open BBQ pit filled with MEAT.

Between the four of us we ordered everything – brisket, pork ribs, beef ribs, sausage, turkey and a half of a chicken. All of which came with sides of potato salad, cole slaw, beans, bread, pickles and onions. 'Thurman's Plate' was put in front of me (because that's the dish that 'Poppa always ate'); brisket, pork ribs and sausage. We did get some sweet tea, but as for the adult beverages, BYO. Thankfully our friends brought a mobile cooler filled with local beers and a box of wine (!).


About mid-way and 32596 bites of that sweet, Texas barbeque'd meat through the meal my friend asked me, “So, do you think it's GOOOD or do you think it's good?” Fred and I looked at one another and then back to her and replied in unison, “I think it's good.” And that kind of says it all. It's a really wonderful experience. The space is fun and authentic. The BBQ pit is fantastic. The food comes out at a clip, is inexpensive (the entire meal for four was around $60) and there is a ton of it. The service is friendly and approachable. We had a box of wine. Maybe it's those Carolina BBQ roots, and though I thoroughly enjoyed my foray into Texas BBQ, it was good. Really good. And really fun.

Missing were the wheelbarrows to transport us back to our cars.

And after that day of driving and that meal, we slept a sound sleep deep in the heart of Texas.

Well, since it took two days to drive through Texas, you get to hear about two restaurants....


The next day's lunch was all mapped out. And it was all Fred. He has been an avid fan of Top Chef, along with me, for many seasons, and had been reading all about the former Cheftestant, Paul Qui, and his flourishing career in Austin. More interestingly to Fred, Qui's brick and mortar iteration of his East Side King food trucks.

We found it hiding in the back of a divy dive bar aptly called Hole In The Wall, across the street from UT. The ultimate college bar; dark, dingy, old school rock music blaring from the speakers, with pool tables, pinball machines, murals on the walls and band stickers on everything else. Qui uses this iconic space to flex his tasty, funky fusion street food riffs on Japanese, Thai and Filipino cuisines. Using the ubiquitous cilantro, mint, onion, jalapeño combination in many of the dishes, Qui throws a little shout out to Texas to boot. Boot. Texas. Get it? Hello?


Fred ordered the Thai Chicken Kara-age, Liberty Rice, Poor Qui’s Buns, Brussels Sprouts Salad, and the uber melting pot of a dish; Chicken Tortilla Ramen (bacon dashi, chicken-tortilla-Tom-Yum paste, chicken thigh, avocado, corn, corn tortilla, pickled yellow onion, jalapeño, cilantro, garlic, lime).


The food was audaciously impressive. The dishes were heartfelt, inspired and esoteric. Everything was bright and fresh and colorful. The Liberty Rice; simply steamed jasmine rice, ginger, garlic oil, basil, cilantro, mint, onion and jalapeño – yet, so bold and herbaceous. The ramen was the perfect Winter comfort soup - so complex, layered and delicious, we couldn't stop eating it in even the arid ninety degree heat. All of this beauty confidently served up in little paper dishes with little plastic utensils. And putting a mere $40 dent in the wallet.

We ate a lot of food – and fairly big food - but did not feel weighed down at all. I'd even say we left with a spring in our step and a long forgotten Clash song in our heads.


Paul Qui's Chicken Kara-age over Liberty Rice

Serves 4

Ingredients

Brine
1 cup water
1 cup sugar
1 cup white vinegar
1/2 cup fish sauce
1/4 cup chopped garlic
1/4 cup chopped thai chilies

Chicken
24 oz chicken thighs
1.5 fl oz of Chicken Brine

Sauce
1 cup water
1 cup sugar
1 cup white vinegar
1/2 cup fish sauce
1/4 cup chopped garlic
1/4 cup chopped thai chilies
1  1/2 cup Mae Ploy chili sauce

Liberty Rice
1 quart jasmine rice
1 quart water
1 tablespoon julienne ginger
1/2 cup garlic oil (heat chopped garlic in oil)

Veggies & Herbs
10 jalapeños
2 large yellow onions
1/4 bunch basil
1/4 bunch mint
1 bunch cilantro


Directions

Make the Brine
Place water, sugar, fish sauce and vinegar in bowl. Whisk until sugar is completely dissolved. Add garlic and thai chilies and whisk until both are well dispersed throughout the liquid.

Brine the Chicken
Take the chicken thighs and cut into 3/4-inch cubes, making sure to remove fat and tendons from the thighs. Place in bowl. Whisk previously prepared brine to redistribute garlic and chilies evenly. Ladle 1.5oz of brine into the bowl with the chicken and toss. Cover bowl with plastic wrap and let marinate for 8 hours before use.

Prepare the Sauce
Place water, sugar, fish sauce and vinegar in bowl. Whisk until sugar is completely dissolved. Add garlic and thai chilies to the mixture and whisk until both are well dispersed. Add mae ploy and whisk until combined with mixture.

Make the Liberty Rice
Wash rice in bowl until water runs relatively clear. Place rice in cooker and add 1 quart water. You want a 1:1 ratio of rice to water. Add ginger. Close lid and set the rice cooker to cook. Once the rice is done mix in garlic oil. Keep warm until ready to serve.

Meanwhile, Slice Jalapeños & Onions
Cut the ends and tips off of 10 large jalapeños. Using a mandolin slice the jalapeños into 1/8-inch slices. Cut the tops off of 2 large yellow onions. Peel onion halves making sure that the root of the onions remain. Slice the halved pieces of onion in half, so that the onions are now quartered. Using a mandolin slice the onion width wise into 1/8-inch slices. Place sliced jalapeños and onions in the fridge and hold until time to serve.

Prepare the Herb Mixture
Pick herbs, making sure that only the nicest green pieces are saved. Places herb mixture in bowl and toss herbs gently making sure that herbs are well mixed in the bowl. Place herbs in fridge and hold until time to serve.
Cooking and Serving

Place 1.5 pounds of brined chicken in a bowl. Pour cornstarch into the bowl and toss chicken, until well coated. Place coated chicken into sieve. Place sieve into empty metal bowl and shake chicken in the sieve until excess cornstarch falls into bowl underneath. Place chicken into fryer basket and drop into oil. Fryer should be at 375 degrees F. Cook chicken until crispy and golden brown. While chicken is cooking make sure to shake the basket so that the pieces are able to evenly cooked. Separate pieces using tongs if needed.

While the chicken is cooking take medium metal bowl and place small handful of onions and jalapeños in bowl. Set bowl aside until chicken is finished cooking.

When chicken is finished pull from oil and allowing excess oil to drain and the chicken to rest. Place chicken in the medium metal bowl that contains all the vegetables. Season chicken with 1/2 tablespoon of salt. Pour 1/4 cup chicken sauce over chicken. Toss chicken and vegetables in the sauce until all is evenly coated. The chicken and vegetables should have a nice glean to them but chicken should still be very crisp.

Place 3/4 cup cooking rice into individual bowls. Place chicken and vegetables on top of rice. Top with small handful herb mixture and your dish is ready to serve.

Serve the chicken piping hot with sliced onions and jalapeños. Top with mint, basil and cilantro.



I'm the Dog Walker.


Oddly enough, I've been to very few weddings. A lot of people complain about weddings, like they're a drag or something. I love them. I love looking at all of the people, watching the families interact, figuring out who knows whom, who tolerates whom, you get the idea. I love to watch the eccentric great aunt with her shaky, little hands, clutching her champagne glass smeared with red lipstick smudges around the rim and crumbs of God knows what permanently lodged in the corners of her mouth. I love the awkward little children, dressed up like adults, the boys looking miserable and uncomfortable and the girls loving their princess hair and dresses and all of the attention. I love watching the bride's second cousin flirting with the groom's best man's brother, and sneaking off to hook up after just enough champagne, wine and cocktails to chalk it up to 'weddings'.

I love the formality, the process. I love watching the groom's face, and see his eyes light up (or fill with tears) when he first lays eyes on his very soon-to-be-bride walking down the aisle toward him. And, at that moment, I always cry a little. I love how awkward they are. I love that as a result of how awkward they are, and how no one really knows anyone all that well, no one is really themselves; rather people take on a veil of anonymity. And pretty much everyone over indulges in some way or another.

I love wedding food. I love food in chafing dishes. I love the taco themes, or the tapas themes, the big-fat-Greek-wedding themes, I love choosing either the salmon or the roast beef. I love the over cornstarchy, congealed sauce that is poured over either one. I love the extremeley cooked carrots and green beans with mashed potatoes and gravy. And, of course, I love the cake.

It's wonderful that everyone dances (to all manner of bad music). Everyone laughs. Everyone cries. Everyone talks. Everyone eats and everyone drinks. Family and friends from all over the country, or even the world, perfect strangers, yet all thrust together because of another couple's union. And everyone at least pretends to be happy, jubilant even. Until they receive the next wedding invitation whereupon they complain what a drag weddings are.


It had been at least five years since my last wedding, until this past weekend. One of my clients was getting married. And she wanted her dog, Giovanni, to be in the wedding. To be specific, she wanted me to escort Giovanni to the wedding and make sure he made it down the aisle with his "grandfather" (the bride's dad).  An ordinary day. Giovanni is an awesome dog and I adore him. Giovanni is a Pug. It was a hot day: Giovanni mouth breathes like a Pug, is a tiny bit chubby, and does not love the heat.

I followed the wedding planners' instructions to the T: I drove Giovanni downtown at five pm and parked outside the venue.  We were escorted in by one of the planners; I then waited to hand him off to the bride's father at the proper time. Oh, did I mention Giovanni was wearing a tuxedo?  A snug tux at that--couldn't fasten the bottom button.  So here I am in downtown LA at 5 pm on what seemed the hottest day of the year with a chubby Pug in a tux.  After Giovanni's down the aisle promenade with granddad I was to take him and wait until the conclusion of the ceremony at which point the wedding photographer was going to get a few shots of the happy couple with Giovanni.  Then Gio and I were free to go.

Everything went as planned. Except there were no side aisles. So for the first few moments of the ceremony, I sat in the very front row, next to the VIPs and the parents, who must have wondered who this bold stranger might be. I quietly explained, “I'm the dog walker”, and they seemed relieved. So, Gio's granddad walked his daughter and her dog down the aisle and it was touching. As always, while everyone else was craning their necks to catch that first glimpse of the bride, I watched the groom's face, and could tell exactly when he laid eyes on her, in her dress, for the first time. And I cried a little.


After that, Giovanni was quickly handed to me and, while the ceremony began to hit its stride, I had to awkwardly duck back up the center aisle, the only aisle. The very aisle that still had the lingering scent of the bride's perfume as she had just walked down it not six seconds prior. And, of course, with Giovanni panting very audibly in his tuxedo. A graceful exit it was not.

Then, Gio and I were shown to a corner in the back of the reception area to wait for the ceremony to end. A couple of the caterers and staff were curious about what we were doing back there, all alone, no champagne. “I'm the dog walker," I told them.

Then, as fast as it began, it was over. And while Giovanni was photographed with his just married mom and dad, I waited by the front door of the venue with the valets. Then a woman stepped outside for some air and since we were the only non-valets standing there, she felt compelled to say, “Hi, I'm Evelyn, the groom's sister. Are you with bride or groom?” To which I confidently replied, “Hi, I'm the dog walker!”

And so, as the bride and groom went back inside to enjoy the reception, the meal, the dancing and the champagne with all of their family and friends, Giovanni and I hopped back in the car to head back to my house to relax. And man, was he happy to get that tux off.


Back at my place, it was dinner time. I fed the pups their kibble and Fred poured us a couple of glasses of Vino Verde to sip while we got to our Saturday night project: making ricotta, which was something I had wanted to do for a very long time – ever since I saw the recipe in Saveur six or so years ago and ripped out the pages. As the milk and cream were heating up on the stove, I told him about how it felt so strange to have been a part, in even the tiniest way, of one of the most important days in two people's lives, but to have been so very invisible. I wasn't really even there. And I didn't mind one bit – though a glass of champagne would have been much appreciated.

As we sat down to the table to eat our dinner of grilled pork tenderloin (with an amazing dry rub) and zucchini with Niçoise olives and homemade ricotta, I realized I definitely got my wedding fix. I got the vibe. I watched the families, the couples, the singles scoping out their next flirt target. There was champagne, and spicy margaritas. It was a taco theme, with mariachis and the whole bit. I did what most women who have not yet had their own wedding do (and have thought about since they were six years old), compare it to what they would do differently, take note of what worked, little details, décor, style, all of it. And before Giovanni and I left, I did get a hug from the bride and groom – which is actually pretty hard to get at a lot of weddings, with all of the hullabaloo. Especially for the dog walker.

Would I serve this dish at my wedding? Perhaps. But man alive, the ricotta that we made was out of this world. Light, airy, buttery, creamy, rich, and delicate. We ate it in everything for three days straight, until it was gone. We even ate it for dessert; a heap of it in a bowl topped with lemon zest, honey and almonds.


Zucchini with Lucques Olives and Homemade Ricotta

8-10 servings

Ingredients
1/4 cup plus 2 tablespoons extra-virgin olive oil
8 medium zucchini (about 3 1/4 pounds)—halved lengthwise, seeded and cut into 1/3-inch dice
3 lemon thyme sprigs
Kosher salt
1 teaspoon finely grated lemon zest
1 tablespoon fresh lemon juice
1/2 cup pitted Lucques olives, chopped
Freshly ground pepper
3/4 pound ricotta (here's how to make your own)
1 tablespoon fresh mint, chopped, plus a sprig for garnish

Directions
In a very large skillet, heat 2 tablespoons of olive oil. Add 1/3 of the zucchini, 1 lemon thyme sprig, a generous pinch of salt and 1/4 cup of water and cook over moderately high heat, stirring occasionally until the zucchini is just tender and the water has evaporated, about 5 minutes. Transfer the zucchini to a platter to cool and discard the thyme sprig. Wipe out the skillet and repeat in two more batches with the remaining olive oil, lemon thyme, zucchini and salt, adding 1/4 cup of water to each batch.

In a large bowl, toss the cooled zucchini with the grated lemon zest, lemon juice, mint and olives. Season with salt and pepper and transfer to a serving platter. Arrange the ricotta over the zucchini, garnish with a sprig of mint and serve.

Buck Jumping & Having Fun.



Seven years ago at this time Katrina had just hit New Orleans and forever changed a lot of things for a lot of people. It was one of those landmark events in history that will always remind us of where we were and what we were doing when the hurricane roared through with its devastation. Not entirely unlike 9/11 in that sense. During Katrina, I was living in a different house with a different person. We were glued to the television all night in awe and shock stricken silence. I was, even then, up here in my canyon. Beso was there and so was Milo. I’m pretty sure around that time I was cooking things like braised short ribs, sausage and cheese grits, meatloaf, barbecued tri-tip, various types of fish with various types of salsas on top of them and mushroom risotto and stuff like that.

Kitchen-wise, I guess things were not so terribly different than they are now. Though the music has decidedly shifted in the tune of my world, and the orchestra of my kitchen, and, I’ve certainly advanced a great deal. I still appreciate, and crave, my foundation dishes and my staples, as well. Heck, I make the fish/salsa thing all the time. Lately I’ve been fiddling a lot more with sauces and accents - chimichurris, preserved lemons, hot sauce, mignionettes, reductions, jus, roux and the Five Mother Sauces. I’ve also been deliriously happy playing with all the wild stuff growing in my garden - some of which I have never cooked with, or heard of.

As a result of a vintage cookbook sale last Sunday at the farmers’ market, and the eve of Isaac hitting New Orleans on the almost-to-the-day anniversary of Katrina, I  read through my two new/old Louisiana cookbooks and decided to try my hand at shrimp
étouffée. That dish, of course, involves a roux. I think it turned out pretty well. Fred nearly ate his body weight in the stuff. I wasn’t the greatest judge as I’ve A) never made shrimp étouffée, or any Louisiana cuisine in my life and B) I’m, admittedly, not a huge fan of said cuisine. However, I enjoyed it. But something was missing. Some layer. Some complexity. I’m not sure what it was, but I look forward to playing a lot more with my new/old Louisiana cookbooks to figure it all out.

So no, I will not be sharing with you my shrimp étouffée recipe. Seems almost blasphemous for me to do, really. But I will get back to you on it.

Back to my garden. I have a small bush growing there, with little, lantern-like things dangling from
the small branches. My mom planted this green baby a while back, and I remember she was really excited but wasn't really familiar with the plant. We thought, maybe, tomatillos? No. Well after some research on the interwebs I came to the conclusion that I have a Cape Gooseberry bush. You know the berries are ripe when they fall off the bush. When you peel back the little lantern a smooth, yellow berry is revealed. It is about the size of a marble, and resembles a miniature spherical tomato, about one or two centimeters in diameter. Like a tomato, it contains numerous small seeds. It’s sweet when ripe, with a mildly tart flavor - kind of like a raisin married to a tomato.






I didn’t have enough to make a jam (nor would I ever want to), but that seemed to be the only application I could find. I did see a cape gooseberry and apple crumble. No thanks. And then I realized the gooseberries would probably make a beautiful reduction for duck or pork... or foie gras... sigh. And I just so happened to have a pork tenderloin in my fridge. Done and done.

I make pork tenderloin all the time. I was making it seven years ago and even long before that. I sometimes stuff the tenderloin with garlic, spinach and goat cheese and serve it over purple mashed potatoes. Or sometimes I smother the pork in herbs de provence, sear the outside and then slow roast it. Recently I’ve been barbecuing it on the grill. I always serve pork tenderloin in medallions. This time I marinated it in sweet tea for twenty-four hours - let’s just call that a brine - grilled and served it over rice, smothered in a cape gooseberry reduction with a wonderful broccoli preparation on the side. Fred, who historically, is not a fan of pork, upon eating this dish exclaimed that pork tenderloin may now just be his favorite meat.

As I said, this dish is one I would have been preparing
all those years ago, but the reduction is entirely me in 2012. As they say, accessories make the outfit. I’d even say that accessories turn an outfit into a look. And, in regards to the look, the sound, the music of my kitchen, to quote Farnand Point,  "In the orchestra of a great kitchen, the sauce chef is a soloist."

And with this meal, as we were finally able to confidently switch from watching the news to resuming our marathon of season two of Treme
we breathed a sigh of relief for New Orleans. They may have gotten bruised, but they ain’t broken. The second line buck jumps onward.

Cape Gooseberry Port Reduction Sauce

1 cup ruby port
2 sprigs fresh thyme
1 shallot sliced thin
2 tbsp butter
1 tbsp balsamic vinegar
Zest of 1/2 Meyer lemon
1/2 cup cape gooseberries
Salt and pepper to taste

Directions

To prepare the sauce, combine the port, balsamic vinegar, thyme, shallot and lemon zest in a medium sized saucepan.

Set the pan over medium heat bring to a boil then reduce to low heat and simmer.

Simmer until reduced by half. Strain the liquid using a fine mesh strainer. Save the shallots.

Add butter and the berries to the hot liquid and stir to release juices in the sauce without killing the tender berries.

Season to taste with salt and pepper, add shallots back in and reserve sauce for later.

I'm Totally Rushing You In the Fall.


Things are happy. Things are good. Business is good, things feel pretty stable, and, on these crisp nights, I can rock layers (clothing). Thanksgiving has passed and Christmas is coming up really fast. Usually I am a pretty major Christmas geek. I love Christmas music, the tree, the decorating, the parties, the excuse to be over dressed and wear sparkly things, the excuse to be over dressed, wearing sparkly thinks while drinking sparkly things.

This year I don’t feel as much like Mother Christmas as I usually do. I don’t foresee having my annual Christmas party, I’m entirely unclear what I’m giving to whom as gifts (and I usually have that on lockdown months before), and I’m not even getting a tree. I have dug the big boxes of Christmas from the garage, so that’s a start.

A lot of this could be because of the timing of the most recent Dinner at Eight. That would have been last Friday. But even though that’s over and done with, I don’t feel like I can concentrate on things. I am decidedly distracted. I’ve barely even written anything this month. But maybe that’s because I have a crush.

I do.

 
And it (he) has taken quite a bit of my physical and mental space over the past few weeks. He’s coming over for dinner tonight. I haven’t cooked for him yet. I’m nervous. Why am I nervous? I cook for people all the time. I cook for friends, family and even complete strangers. All. The. Time. And yet I’m nervous to cook for Fred tonight. I know I’m going to make my oyster stew. However, I don’t know what will follow. I’m sure it will be fine. I’m sure it will be better than fine. I’m sure it will be delicious and fun.

But I’ve still got the swirlies. Ugh.


Anyway, this past Sunday we spent the better part of the day making cassoulet. I’ve wanted to make cassoulet for forevers. It’ one of my very most favorite dishes. Cassoulet night at Lucques is something I look forward to all year (that’s coming up, by the way). Our cassoulet making was a really fun process that began with procuring our Meat(s) at Lindy & Grundy around one o’clock and ended on Fred’s couch, chowing down at about eleven o’clock. And that was with the fast soak on the cannelini beans. We spent a good deal of the down time doing the Sunday crossword and watching In A Lonely Place (best movie, ever). It all worked out really nicely. It was good times and good food, I must admit. And, as you know, I do so love a Process. And a Sunday. And a cassoulet.


So, back to tonight. I’m thinking either scallops or a stuffed pork tenderloin. Something with beets? I welcome your thoughts on the matter. Regardless, I’ll keep you posted on how tonight’s meal turns out. Promise.


Our Sunday Cassoulet
Serves 6-8

1 lb. dried cannelini beans
10 tbsp. duck fat 
16 cloves garlic, smashed
5 shallots, chopped3 carrots, chopped
1 large ham hock
1 lb. lamb neck, cut into 1"cubes
1⁄2 lb. pancetta, cubed
4 sprigs oregano
4 sprigs thyme
3 bay leaves
1 cup whole peeled canned tomatoes
1 1/2 cup white wine
2 cups chicken stock
2 confit duck legs (we used chicken legs)
1 lb. pork sausages
2 cups bread crumbs

Soak beans in a 4-qt. bowl in 7 1⁄2 cups water overnight. Heat 2 tbsp. duck fat in a 6-qt. pot over medium-high heat. Add half the garlic, shallots, and carrots and cook until lightly browned, about 10 minutes. Add ham hock along with beans and their water and boil. Reduce heat and simmer beans until tender, about 1 1⁄2 hours.


Transfer ham hock to a plate; let cool. Pull off meat; discard skin, bone, and gristle. Chop meat; add to beans. Set aside.


Heat 2 tbsp. duck fat in a 5-qt. dutch oven over medium-high heat. Add lamb and brown for 8 minutes. Add pancetta; cook for 5 minutes. Add remaining garlic, onions, and carrots; cook until lightly browned, about 10 minutes. Tie together oregano, thyme, and bay leaves with twine; add to pan with tomatoes; cook until liquid thickens, 8–10 minutes. Add wine; reduce by half. Add broth; boil. Reduce heat to medium-low; cook, uncovered, until liquid has thickened, about 1 hour. Discard herbs; set dutch oven aside.


Meanwhile, sear duck legs in 2 tbsp. duck fat in a 12" skillet over medium-high heat for 8 minutes; transfer to a plate. Brown sausages in the fat, about 8 minutes. Cut sausages into 1⁄2" slices. Pull duck meat off bones. Discard fat and bones. Stir duck and sausages into pork stew.


Heat oven to 300˚. Mix beans and pork stew in a 4-qt. cast iron dutch oven. Cover with bread crumbs; drizzle with remaining duck fat. Bake, uncovered, for 3 hours. Raise oven temperature to 500˚; cook cassoulet until crust is golden, about 5 minutes.

Winds of Change


I’ve never considered myself much of a spiritual person. I was brought up with zero knowledge of any sort of religion or religious history.  Apparently, one day, when I was very young I returned home from pre-school and exclaimed to my mother, “Who’s this little girl, Baby Jeeza havin’ a birthday?” Turns out it was Christmas time and the other kids were referring to Jesus' birth. I just thought one of my classmates was having a birthday party and I wasn’t invited. My mom says she was mortified. She promptly proceeded to outline Religion 101--no great detail, just basic historical information. Easter was only just explained to me at length a couple of years ago thanks to Brandon. Boy, was I off about that one.

Over time I became hugely interested in my peers’ various religions and practices. I loved going to the Friend’s Meeting House (Quaker) with Kelly Wolf and her parents. Everyone sat in a little steeple and meditated for set periods of time – the kids had fifteen minutes while the grown-ups had an hour. During this time anyone that felt compelled to stand up and say – or sing – something was more than welcome to do so. I vividly remember someone standing up from the silence and belting out Morning Has Broken by Cat Stevens.  Me – I counted the stripes on the people’s shirts in front of me. After our fifteen minutes us kids were allowed to go play and do arts and crafts and stuff (Macrame! Macaroni art! Things that start with MAC!).


I also enjoyed attending midnight mass with my Uncle Pat and his family in Roanoke, Va each Christmas Eve at their Southern Baptist church (interestingly, the same church where my parents were wed). Mostly I loved that we got to hold candles (I’m a bit of a pyro) and sing Christmas carols (I really like to sing).

Then, when I was eight years old, my mom married Michael Lasky. Michael was (and, I imagine, still is) Jewish. This was my most favorite of all. I loved the process. I loved the ceremony. I loved the sense of inclusion. I loved Seders, the Yarmulke, the Menorah, the language. Michael’s mom was not too pleased about Michael’s choice in wife. Hell, her oldest son married a divorced-with-young-kid-shiksa. I guess she was mostly indifferent toward me, though. I think I used to wear a Yarmulke at the table, which, for obvious reasons, was looked upon with various levels of disdain and confusion. I went to Hebrew school, became a member of the Jewish Community Center and went to a Jewish Summer Camp, Camp Hilbert. Incidentally, I attended quite a few Summer camps in my time, that way, was by far, my mitzvah. Especially compared to Camp Hanover. Don’t even get me started on Camp Hanover. Those bitches in the Hogan next to me made up a secret language so they could talk smack about me. A language I deconstructed very quickly, which was convenient so I could spend the entire two weeks understanding what the mean girls were saying about me.

Mom and Micheal moved to Colorado with me and our car, Chet, in tow and then Mom and I, with our car, Chet, in tow, moved back to Richmond, sans Michael, eight months later. It had nothing to do with religion. Far from it. Their relationship had just run its course, I suppose. I was only eight. I didn’t really understand or care. I was just really happy to get back to my dad, my hometown, my friends, and a school system that had a Summer break (not that three months on, three months off crap). Plus, E.T. came out while I was living in Colorado. My name is Elliott. I was in the third grade. Need I say more? I only hoped the buzz of the movie had died down by the time I returned to Virginia.

It had not.

I’m pretty sure that was the last of my religious vision quests for a while. There were drum circles and “sweat lodges” happening a lot in college (#drugs). I even took a “Religions of the World” class there. It was in a shoebox-sized room with only six students. Only moments into the first class, the dude sitting next to me, Jerry Bello, the stinkiest, hippiest boy on campus, (who if his B.O. wasn’t alarming enough (and I like B.O.)) proceeded to pluck a beard hair and floss his teeth with it. I walked out of the class and marched right to the Dean’s office to promptly drop said class. Never to return.


And that about wraps things up for the next decade - certainly through the Atlanta years and into The LA ones.

A couple of years after I moved here, however, my friend Heather introduced me to this thing called yoga. Maybe you’ve heard of it?

If there’s anything I lack more of than religious education it would be the drive to exercise. In college I took juggling and “Independent Rollerskating” for PE credit to avoid any team sports or actual sweat, in general. I have tried various gym memberships over the past fifteen years, but nothing lasts longer than about a month. This has all fine and dandy until I noticed that, since moving into my thirties, my always-the-same-size-since-high-school body has, well, changed. It’s not a huge deal. I still fit into most of my clothes. Just differently.

And so I realized I have to get proactive. Obviously I enjoy food a great deal. I am willing to make certain sacrifices, certain tweaks, here and there, but let’s face it – I’m not going to fast or become vegan or macrobiotic. Same deal with the wine. I can certainly scale it back, but it’s still going to be around. That leaves one option: exercise.

So. Back to Heather and yoga almost a decade ago. When Heather first suggested we go to a Kundalini yoga class, I scoffed. I mean, exercise and chanting and meditating, with a pile of strangers? Honestly, I’d rather stick needles in my eyes.

But I went. And I fell in love with it.

I never became very regular with it. I still only lasted for brief fits and became distracted by something else. But something about this Kundalini stuff… It touches me. Spiritually. I am always very affected by the classes – both during and afterward. And it’s great exercise to boot.

Needless to say, I have returned to yoga. I just started going back this week so we shall see how long I last. But right now I feel energetic, alert, centered, happy and sore as hell. Even laughing hurts.


This past weekend my mom gave me a pork butt from, the most awesome Lindy Grundy, that was too big for her to cook in her kitchen. I had never prepared anything pork butt-ish as far as I knew, but the first word that popped into my mind was braise (and braising really is very zen, you know).



And, this past Sunday, braise I did. Heather came over and while the butt braised and braised, we settled in on the couch for a marathon of Criminal Minds. As we drew near the end of braise-o-rama, I pulled out the meat to rest while I made the pan sauce. I then was supposed to pull the meat apart with two forks.

What? I had imagined serving thick slices with the pan sauce over the meat.

This was when Heather gingerly pointed out that, not only did I not take note of the image of what the finished dish was supposed to look like, but I did not read the recipe in its entirety – or really look at the title of the dish: Beer Braised BBQ Pork Butt (actually she was far from “gingerly” about it – there may have been laughing and pointing).

So I accidentally made my first BBQ pulled pork. A lot of it. And it’s really good!

It’s true, I know I should always read a recipe all the way through before embarking on it – but, for some reason, I rarely do. I suppose this is because I feel so confident riffing in the kitchen. But Heather had a point. And it seems a prevalent point right now. While I’m all spiritual and stuff.

Be patient. Be thorough. Be calm. Be confident. Take your time and try do things correctly – even if you mess up a little. You will get it just right soon enough.




Beer Braised BBQ Pork Butt

Makes like 276485 pulled pork sandwiches




For the dry rub: 

 


2 tablespoons salt  
About 45 grinds black pepper  
2 tablespoons chili powder
1 tablespoon garlic powder
2 teaspoons ground coriander
2 teaspoons mustard seed
12 ounces good ale or dark beer
5 cloves garlic, chopped
1 5-pound pork butt (shoulder of the animal)


Directions: 

Combine rub ingredients in a bowl and mix well. Rub all over pork butt. Wrap in plastic wrap and refrigerate for at least one hour and as long as overnight.


Preheat oven to 500 degrees F. Unwrap pork and place in a roasting pan with sides about 2 inches high. Cook 45 minutes until dark browned and even blackening in places. Remove from oven. 

Lower oven to 325 degrees F. Pour beer over the top and add chopped garlic around the pork. Cover tightly with heavy duty aluminum foil or twice with regular foil. Poke about 10 holes all over the top of the foil. Cook pork butt 3 hours longer until so tender that it comes away very easily from center bone.


Place the meat on a plate and pour the pan juice (there will be plenty) into a saucepan. To the pan juices add: 


1/2 cup ketchup
2 tablespoons whole grain Dijon mustard
3 tablespoons Worchestershire sauce
1/3 cup dark brown sugar
1 tablespoon apple cider vinegar 



Bring to a simmer until reduced by half and thick, about 20 minutes.



While the sauce is boiling down, pull apart the pork with 2 forks. Pour the sauce over the pulled pork and work through until fully absorbed.


Make sandwiches!

Yerp: Part 3 – Cooking Dinner for More Than a Dozen People.

Alright. Second morning waking up in Yerp. At the crack of dawn. Before everyone else. Again.

My head hurt, though. No idea why.

This is the night on which I have committed to prepare dinner for The Group. Part my thank you and part me being a show off. I hate me.

So we were off to the Les Halles Market in Narbonne to select my booty. I adore this market. It’s also France’s oldest indoor food market opening its doors in 1901. #funfact

Fun things from the market.

I hadn’t really thoroughly conceived of what I wanted to prepare. Or how. So I was a little frantic at the market. Oh, and I don’t speak a lick of French - except vas-y mollo, which is not tremendously helpful while figuring out how to buy enough fava beans to create a puree that feeds twelve plus, folks. Or really helpful at all, for that matter. 

Emma helped some until she spotted The Group having wine and tapas at one of the stands. Then Dad jumped in to help me figure out my meat purchase. Which involved math. In French. I was STRESSING. But we ended up finding a gorgeous pork loin roast.

The menu that I settled on went like this:

I put Dad and Emma on fava bean duty: a chore I doubt either of them will ever embark on again voluntarily. I don’t think Dad was wild about dealing with the artichokes either. But I gotta give the guy props - he actually helped me in every arena of this meal, including the keeping-me-calm arena. You see, I had never cooked a formal meal for this many people before. This past Thanksgiving, yes. Hell, I made enough food for greater Los Angeles that day. But I was cooking for days and it all came out staggered. Food just continued to pour out of the kitchen all day and night. It was buffet style.

With the exception of the artichokes still having a few of the sinewy leaves here and there in the hash, I think the meal was a hit. I was proud of it.

I believe Emma and I capped off this evening with a bottle or two more bottles of wine while laying in our beds, sighing, giggling, and taking stock of the last twenty-four thirty-six hours, the whirlwind, of our adventure.

The artichoke-potato hash that I prepared was inspired by Suzanne Goin’s (imagine that). I have the recipe for you here:


Artichoke-Potato Hash

Serves a mere 6...

12 baby artichokes
1 1/2 pounds red potatoes
extra-virgin olive oil
4 cloves of garlic, unpeeled
1 bay leaf
4 sprigs of thyme
2/3 cup sliced shallots
2 tablespoons flat-leaf parsley, chopped
Juice of 1/2 of a lemon
Kosher salt and freshly ground black pepper

To make the hash, preheat the oven to 400 degrees F.  Toss the potatoes with 2 tablespoons of olive oil, the garlic cloves, thyme sprigs, bay leaf, and 1 teaspoon of salt.

While the potatoes are roasting, prepare the artichokes.  Cut off the top third of the artichokes and remove the tough outer leaves.  Using a vegetable peeler, trim the bottom of the stem and the stalks.  Cut each artichoke in half and using a small spoon, remove the fuzzy choke if there one.  As you work, immerse the artichokes in a large bowl of cold water and the juice of 1 or 2 lemons, so they do not discolor.  Be sure to drain and dry them well before cooking.

Heat a large saute pan (we used two), over high heat for 2 minutes.  Add 1/4 cup of oil to the pan and then wait for 1 minute.  Add the artichokes and season with 1 teaspoon of thyme, 1 teaspoon of salt, and a grinding of pepper.  Turn the heat to medium and saute for about 10 minutes tossing often, until the artichokes are golden brown. 

Remove the artichokes from the heat and after they've cooled a little, cut them into large chunks.  Once the potatoes have cooled, cut them into large chunks and squeeze the roasted garlic from their skins and set aside.

Wipe out the pan the artichokes were sauteed in and return it to the stove and heat it over high heat for 2 minutes.  Swirl in 1/4 cup of oil and wait a minute.  Add the potatoes to the pan and season with 1 teaspoon of salt and freshly ground pepper.  To get the potatoes nicely browned and crisp on the outside, do not overcrowd them in the pan.  We used two pans.  Don't be temped to stir the potatoes too much, that will prevent them from getting the good brown crust.  It should take 6 to 8 minutes to get a good crust on one side.  Stir the potatoes and continue to cook until they are browned all over.

Once the potatoes are golden brown on all sides, turn the heat down to medium and add the shallots, artichokes, and roasted garlic.  Toss well and sautée the hash together for 5 to 6 minutes until the artichokes are hot and the shallots are translucent. 

Toss in the chopped parsley and squeeze a bit of lemon just before serving.
