To Everything, There Is A Season.


According to my calendar it is officially Fall. But according to the thermometer, leveling at a tranquil 90 degrees today (or, it was when I started writing this), it is still very much Summer. Most people don’t think LA really has seasons, but we do. The changes are subtle and nuanced for the most part: June Gloom and the ocean layer, the smell of Night Blooming Jasmine, a shift in the quality of light, the Santa Ana winds (and the wildfires fires that follow), and perhaps most obviously, the produce at the markets. The Halloween (and some Thanksgiving) decorations are in the stores and all my magazines are showing up in my mailbox with pumpkins, fall leaves and all manner of oranges and browns on their covers. Except Vogue.  You can always tell it’s the beginning of Fall when you get the tome that is the Fall Fashion issue of Vogue. Tolstoy, step aside.

This is my favorite time of year. I never liked back to school (except the movie), but I always loved back to school shopping. Trapper Keepers, pens, notebooks, rulers, I coveted them all. Argyle, wool, jaunty hats, layers, scarves - who doesn’t get excited for all that? And, though we don’t exactly get vibrant yellow, orange, and red leaves falling from trees here in LA, we do have little pockets, stretches of streets that give us but a glimpse of that. Most of Halloween was filmed less than a mile from my house. And that’s certainly all Fall-y looking. But I can’t lie, I miss the East Coast this time of year. I would love to feel that clean, crisp bite of cool air on the tip of my nose as I walk down the street on my way to meet friends for a welcoming glass of red wine and perhaps a cheese plate. Wearing some cute, little layered number. With my Trapper Keeper.

This always seemed like it would be the best time of year to fall in love. Actually, I suppose it was this time last year that I did just that.




This year, ushering in Fall, has been a bit wonky. Which is why, perhaps, I have been seriously absent here in my blogland. Beso, my dog, my baby boy, my mascot, and my constant companion for the past twelve years, is sick. Again. He has had the worst luck in the huge-things-that-can-go-wrong-in-the-health department. And he is one tough nut. This sick is a bad one and one that will always be with us from here on out. Poor little guy just has too big of a heart. Literally. Anyway, he’s standing strong and getting even more mountains of love than usual, so we won’t dwell on that anymore here.

As an adult, the thing that I geek out about the most with that which is Fall is that it lends itself perfectly to my kind of cooking. I like to cook big. And not just quantity, I like to cook big, comfortable, classy, confident and strong food. I’ve said it before, food that loves. Food that hugs. And even though the past week has been hotter than the devil’s oven, I just couldn’t help myself - I made lasagne and then I slow roasted a chicken for five hours. Additionally, I’ve got all the fixins to make another lasagne with butternut squash and rapini. In the lineup this week I will also be making a chili and the most exciting thing, a Lima bean and ham hock pot, with a real, Southern Smithfield ham. I see lots and lots of brown butter and sage on my horizon. And pasta. And red, red wine. And snuggling with my Autumn love, Fred, my spunky, firecracker of a pup, Eduardo, and my sweet, little Beso - who, I suppose is in the Autumn of his years. And sort of looks like a Lima bean. 




Ham Hock & Lima Beans

Serves 8-10 (12?)

1 Large, meaty ham hock
3 Cloves garlic, minced
2 Medium onions, chopped
2 Lbs. dried large Lima beans
3-4 Stalks celery, cut into pieces
4-5 Carrots, cut into pieces
2 Bay leaves
Celery salt to taste
Kosher salt & fresh , black pepper to taste

Clean and soak Limas. Drain and rinse beans.

Cover beans and ham hock with water, add onion, bay leaves and garlic and simmer until tender (about 2 hours). Add celery, celery salt and carrots for last hour of cooking. When ham is done, and falling off the bone, remove from pot and cool. Remove skin and bone and cut into bite-size pieces. Return to pot and continue cooking until beans are done.

Salt and pepper to taste.

Serve with a crust of bread and a big glass of big, red wine. Or a hearty stout. Enjoy!


I'm Totally Rushing You In the Fall.


Things are happy. Things are good. Business is good, things feel pretty stable, and, on these crisp nights, I can rock layers (clothing). Thanksgiving has passed and Christmas is coming up really fast. Usually I am a pretty major Christmas geek. I love Christmas music, the tree, the decorating, the parties, the excuse to be over dressed and wear sparkly things, the excuse to be over dressed, wearing sparkly thinks while drinking sparkly things.

This year I don’t feel as much like Mother Christmas as I usually do. I don’t foresee having my annual Christmas party, I’m entirely unclear what I’m giving to whom as gifts (and I usually have that on lockdown months before), and I’m not even getting a tree. I have dug the big boxes of Christmas from the garage, so that’s a start.

A lot of this could be because of the timing of the most recent Dinner at Eight. That would have been last Friday. But even though that’s over and done with, I don’t feel like I can concentrate on things. I am decidedly distracted. I’ve barely even written anything this month. But maybe that’s because I have a crush.

I do.

 
And it (he) has taken quite a bit of my physical and mental space over the past few weeks. He’s coming over for dinner tonight. I haven’t cooked for him yet. I’m nervous. Why am I nervous? I cook for people all the time. I cook for friends, family and even complete strangers. All. The. Time. And yet I’m nervous to cook for Fred tonight. I know I’m going to make my oyster stew. However, I don’t know what will follow. I’m sure it will be fine. I’m sure it will be better than fine. I’m sure it will be delicious and fun.

But I’ve still got the swirlies. Ugh.


Anyway, this past Sunday we spent the better part of the day making cassoulet. I’ve wanted to make cassoulet for forevers. It’ one of my very most favorite dishes. Cassoulet night at Lucques is something I look forward to all year (that’s coming up, by the way). Our cassoulet making was a really fun process that began with procuring our Meat(s) at Lindy & Grundy around one o’clock and ended on Fred’s couch, chowing down at about eleven o’clock. And that was with the fast soak on the cannelini beans. We spent a good deal of the down time doing the Sunday crossword and watching In A Lonely Place (best movie, ever). It all worked out really nicely. It was good times and good food, I must admit. And, as you know, I do so love a Process. And a Sunday. And a cassoulet.


So, back to tonight. I’m thinking either scallops or a stuffed pork tenderloin. Something with beets? I welcome your thoughts on the matter. Regardless, I’ll keep you posted on how tonight’s meal turns out. Promise.


Our Sunday Cassoulet
Serves 6-8

1 lb. dried cannelini beans
10 tbsp. duck fat 
16 cloves garlic, smashed
5 shallots, chopped3 carrots, chopped
1 large ham hock
1 lb. lamb neck, cut into 1"cubes
1⁄2 lb. pancetta, cubed
4 sprigs oregano
4 sprigs thyme
3 bay leaves
1 cup whole peeled canned tomatoes
1 1/2 cup white wine
2 cups chicken stock
2 confit duck legs (we used chicken legs)
1 lb. pork sausages
2 cups bread crumbs

Soak beans in a 4-qt. bowl in 7 1⁄2 cups water overnight. Heat 2 tbsp. duck fat in a 6-qt. pot over medium-high heat. Add half the garlic, shallots, and carrots and cook until lightly browned, about 10 minutes. Add ham hock along with beans and their water and boil. Reduce heat and simmer beans until tender, about 1 1⁄2 hours.


Transfer ham hock to a plate; let cool. Pull off meat; discard skin, bone, and gristle. Chop meat; add to beans. Set aside.


Heat 2 tbsp. duck fat in a 5-qt. dutch oven over medium-high heat. Add lamb and brown for 8 minutes. Add pancetta; cook for 5 minutes. Add remaining garlic, onions, and carrots; cook until lightly browned, about 10 minutes. Tie together oregano, thyme, and bay leaves with twine; add to pan with tomatoes; cook until liquid thickens, 8–10 minutes. Add wine; reduce by half. Add broth; boil. Reduce heat to medium-low; cook, uncovered, until liquid has thickened, about 1 hour. Discard herbs; set dutch oven aside.


Meanwhile, sear duck legs in 2 tbsp. duck fat in a 12" skillet over medium-high heat for 8 minutes; transfer to a plate. Brown sausages in the fat, about 8 minutes. Cut sausages into 1⁄2" slices. Pull duck meat off bones. Discard fat and bones. Stir duck and sausages into pork stew.


Heat oven to 300˚. Mix beans and pork stew in a 4-qt. cast iron dutch oven. Cover with bread crumbs; drizzle with remaining duck fat. Bake, uncovered, for 3 hours. Raise oven temperature to 500˚; cook cassoulet until crust is golden, about 5 minutes.

Yerp: Part 6. Barthelona (Part 2), THE HAMOVER.

That was a lot of ham yesterday. There was a lot of everything yesterday. We were not deterred, however. Actually, I think we were. We were supposed to meet up with Sal and the gang for lunch, but we didn’t get up and moving until pretty close to lunch time anyway, and we desperately needed to be free of time constraints and meeting up with people for just one meal. And both Chris and I really had our hearts set on one meal in particular.


Three years ago, on that original vacation with Chris, he took me to La Boqueria. La Boqueria is a huge, covered, market and an impressive landmark with an entrance from La Rambla. The smells, colors, sounds and activity easily throw one’s senses into overdrive, not to mention the wild and crazy items sold in the market. It is truly a small village inside of a big city.

 

 

La Boqueria also offers up a few counters serving food. One in particular, my favorite and the focus of this post, is El Quim. Prior to that first visit Chris had excitedly described their, perhaps most lauded dish, baby squid and fried eggs. That day he ordered that and I ordered the sardinas a la plancha. That meal has stayed in my memory since. Such fresh ingredients, such delicately nuanced flavors and textures. A couple of glasses of cava. Delicious perfection.

 

And this brings us to about Noon on that Thursday, with Emma and Chris. Yes, we may have, in our er, exaltation the night before, told our new posse of friends that we would meet them the next day for lunch. But in the light of day, come Hell or high water (or being lame to our new friends), we knew we were headed straight for El Quim.

And there, in the middle of the bustling Boqueria stood the stall we sought. All eighteen of its stools occupied and a crowd of people waiting two-deep to scurry into any newly freed spots. Somehow, silently, we had a plan: Emma stalked one side of the stall and Chris the other. I was the liaison between the two to be able facilitate getting all three of us to the opening of seat(s) as quickly as possible. This all took great concentration.

Chris scored. I grabbed Emma and we raced over to his side. He got us two stools with the promise of a third opening up any minute as the person occupying it was paying their bill. Emma and Chris sat while I opted to hover until stool number three opened up. We immediately ordered the white anchovies, garlic, caper berries and green olives in olive oil and balsamic vinegar, some bread and a few glasses of cava. 

 

 

I was over the moon. I was literally clapping when the first bite was in my mouth. The anchovies were fresh, meaty, firm and elegant in their simple marinade. With a few bites of that dish and a few bites of the bread swabbed around in the oily goodness I took my newly vacated stool and stole a moment to soak up my surroundings.

El Quim is cluttered and chaotic. The counter crowds with dishes – frittatas, paellas, and fresh seafood.  Sausages, dried chiles, produce, garlic and pots and pans hang from the eves. Orbited by a swirling mass of entropy, the tiny kitchen gets along amazingly well. The menu is chalked up above the stove, although paper menus are available as well. You’ll find yourself seated next to travelers from all over the world, locals, foodies and chefs alike. Quim is always behind the counter and is also always surprisingly friendly in the midst of the frenzy. He also manages to squeeze his three or four chefs/co-workers back in that little nook of a kitchen as well. Size-wise, think food truck. Cut in half. I don’t know how they do it.


Second glass of cava and time to order the big stuff. First off, El Quim is most famous for his fried eggs. Period. He puts them either over or under pretty much everything on the menu. As mentioned above, Chris orders one thing and one thing only: the fried eggs smothered under a mosaic of tender, baby squid sautéed in a pan sauce of oil and a touch of chile heat. This dish is also Quim’s calling card. It is ubiquitous with the restaurant’s name. When the eggs are cut up and the yolk runs into the squid the dish becomes complete, thickening and marrying all textures and flavors that hop, skip and jump across one’s tongue.


Emma, in the spirit of not having tangential dishes at the “table”, opted for the fried eggs with jamon iberico (Iberian ham). This ham is from free-range pigs that roam oak forests and eat only acorns. This ham is also called Jamón Iberico de Montanera. The ham is cured 36 months. Bellota jamones are prized both for their smooth texture and rich savory taste. You really just can’t go wrong with this dish.


I went in an odd direction. I ordered the Catalan sausage over white beans with aioli. This was a simple and savory answer to my fairly prominent hangover. The presentation left room for some humor for obvious reasons, but don’t be fooled – it was rich and robust with clean succinct flavors. The slightly crisped skin of the sausage gave way to a tender, succulent, meaty inside. The beans underneath provided the perfect texture to round out the variations in the sausage. 


We also got and order of asparagus wrapped in bacon. For our vegetable quotient. Hey, what can I say? It’s asparagus wrapped in bacon!


As we were saddling up to head out to our second lunch to meet Chris’ friends Quim gave us a little dessert on the house. I was a little scared of it as it looked as though it fell into the gelatinous-gooey-fruit department. Emma assured me it would be alright for me as it fell into the coconut department. That is usually okay. I still don’t know what it was but I ate it. 


It’s understandable why chefs flock to eat here. The quality of the ingredients is unparalleled – everything is fresh from the market. Quim’s execution is simple and solid. And the flavors are confident and honest and all cooked to order. Straightforward and comforting, this is the type of food that you love to eat and want to crave.

And this was just our first meal of the day. 

We then went on to meet up with the boys at a restaurant called Joséphine, but we were so late that they were basically out of everything. So we migrated to a rooftop restaurant and bar called La Isabela. There we camped out for hours, drinking and eating more ham. The photograph at the top of this post was taken at this spot. It had a terrific view.


We then moved on to the home of Paul, where we had some more wine and snacks and lost Emma and Engel for a little too long for my comfort. But they appeared eventually. Wearing pirate hats and swords. And carrying the largest lollipop anyone has ever seen. Then we ended up, briefly, at a small café. I mostly threw a tennis ball for Paul’s dogs during this stretch.

And then Engel, Chris, Emma and I ended up at a restaurant, apparently heralded for their – wait for it – ham, Recasens. I wish I could share more about this part of the evening but we were not only dead on our feet tired. But we were drunk on ham and libations. Poor Chris was the worst off. His eyes were closing while we were standing outside waiting for our table and the only thing he could put together to utter was, “No more ham. Please?”

We waited about thirty minutes outside for a table to open up. It was about 1:00am. They did bring us a small wicker basket of ham to keep us at bay while we waited. We finally got our table. The place was tiny and adorable. Turns out they specialize in ham! So we had three or four plates of different kinds of hams and some cheese.

Our trifecta somehow made it back to our apartment building. Wearing the pirate hats. When we arrived at the door of the building we ran into two Canadian women who were staying across the hall from us. We started chatting. Well, Emma and I started chatting. Chris made a bee-line into the building and up to our apartment to face plant on his bed. Emma and I ended up hanging out with the Canadians, drinking wine and laughing until almost dawn. But not before Emma broke a glass filled with red wine in their apartment and said something mildly offensive about Canadians.

I do believe this was the first night of the trip that Emma, Chris and I did NOT cap off the evening with a bottle or two more bottles of wine while lounging in our apartment, sighing, giggling, and taking stock of the last days (who's even counting, now?) week plus, the whirlwind, of our adventure. At least, if we did, I don’t remember it.


Salt's Cure: The Little Kitchen That Could (And Does) - Parts 1 & 2

Part 1:


I am a saltaholic. I always crave salty over sweet. I salt everything. I carry my own salt in my bag so I don’t feel like a jerk asking for it in most restaurants. Almost no one can share my popcorn at the movies because of the almost comical abundance of the stuff.

I also like snackables. I love to graze. So you can imagine my delight upon hearing about the opening of Salt’s Cure this past August. Owners, Chris Phelps and Zak Walters, formerly of Hungry Cat, have created a simple, neighborhood café with a simple menu concentrating – but not limited to -  local, in-house cured meats, pates, rilletes, terrines and an assortment of pickled items. They are open for brunch, lunch and dinner, offering a compact and ever rotating menu of smalls to ginormous entrees that upon hitting the palate are anything but simple.

Finally, last Sunday, a mere five months after their opening, I had my first experience at Salt’s Cure over brunch with Brandon and his friend, Jeffrey. Interestingly I had been driving and walking past this building forever and never really noticed it. It’s an old, white garage-y looking space occupying the corner of  Santa Monica and Vista. And their signage is so small (and so very cute: a salt shaker!) that I had doubly missed it. But there Brandon and Jeffrey were, sitting at the table right by the large, almost floor to ceiling front window (not at the bar, sniff).

The room is small, modest, warm and welcoming. There are only a handful of tables and a bar that looks over their little kitchen. I’m guessing they can seat about 35 folks in the whole place (perfect). And always in that kitchen you will be sure to see Chris and/or Zac, cooking away.

After the French press arrived ($5) and my mimosa, served just the way I like it: with one eye droplet of juice ($9), all three of us ordered the same thing for brunch that day. And how could one not? The 2X2X2 – bases loaded - two eggs; sunny side up, two homemade sausage patties (lamb when we went), a biscuit and two slices of thick-cut beef bacon, a ramekin of fresh plum preserves, and a couple of chunks of heirloom tomatoes in a bit of oil and vinegar ($13). We also ordered a plate of roasted potatoes for the table ($4). 


Delicious. Fantastic. Titanic in flavor. This was a perfect plate of brunch-ness. Even the tomatoes were reminiscent of the Hanover variety I vividly remember from Virginia – unparalleled. The biscuit was delicate and creamy, the eggs (Schaner Farms) were bold and nutty with a beautifully bright orange yolk, the house-made sausage was rustic and fresh, and the bacon… oh the bacon. *Swoon*. The potatoes were nice, but not as crunchy, smushy, crazy as I usually prefer them. I loved that they used a medley of different types yellow, red and purple. I will say that the caramelized onions accompanying those potatoes were outstanding. Brandon kept going on about them while spooning little bites of them onto my plate.


Plus, looking around the room, I kept thinking to myself (and saying aloud to Brandon and Jeffrey) that, not only the staff and owners (cute, cute, cute), but the clientele, all looked like my kind-of peoples. The ones who go to the farmer’s markets, the ones who read, the creative ones, the ones with genuinely slightly mussed hair (not cultivated), and big, kooky accessories (or none at all). I felt at home and knew it would be a very short time before my return.


Part 2: 



Less than a week ago, last Friday night, I met my friend Emma back at Salt's Cure at 7pm (told you so!) for dinner before she was meeting a first date at 10pm. And when I said this place was welcoming earlier, I was not just whistling Dixie. Zac literally opened the door for me when I arrived. He did the same for Emma and every other customer that night.

This go ‘round, I had my druthers and sat at the bar. Luckily, we secured my favorite two seats at any bar: the corner. Zac was to the left of me, greeting folks, quality control and whatnot and Chris was right in front of me, cooking epic portions of red meat. The room was warm and lively and smelled delicious. I was happy. I started everything off with a glass of champagne and Emma, a glass of sauvignon blanc.


While we caught up, we decided to order some cheese. Our server helpfully informed us that the cheese selection ranged from soft to hard (insert joke here (which I did that night)). The cheeses are $5 each or $13 for three. We ordered three: the Red Hawk (cow), the Winchester Sharp Gouda (cow) and the Pepato (sheep). The plate was served with some candied pecans, honey and a pair of oat biscuits. I was hesitant to order the gouda because I thought it would be too pedestrian. It was anything but. All of our cheeses were sublime, actually. This was followed by a plate of the pork shoulder ($8) served with walnuts and large, flat-leaf parsley, lightly blotted with a delicate olive oil. The meat was chiffony, tender, and almost melted on one’s tongue. I could have eaten mounds of it (I guess I did eat a mound of it).


This was around when Emma and I (round two or three on our glasses of wine) started obsessing about the enormous slabs of meat Chris was working on the grill. And Emma really started fixating on the Pork Shoulder-n-Beans ($18). Every time she saw it being plated (just about under her nose) she would squeal with delight about how amazing it looked and smelled. Then the two men seated next to us were served one of the gargantuan steaks ($62, serves two people). I asked if I could take a picture – they obliged – and we all ended up tasting each other’s food (the chocolate cake bite I had was outstanding) and laughing and chatting for a while: reason 2849606 I like to sit at bars.


Then Emma decided she had to have the pickle plate ($5) with foie gras pudding ($18) and grey snapper. Don’t get me wrong, no one was twisting my arm either. That foie gras was so light and airy and delicate, it was like a foie gras cloud. I actually screwed the lid back on to save it to take home and, of course, forgot and left it there (wine + karma = sucks). Emma was so blown away by the pickled onions, she ordered another plate of them (good move prior to a first date). It was all beautiful, elegant, yet bucolic. 

 
And then, Emma looked down in front of her, and lo and behold, Chris had placed a half plate of the Pork -n-Beans there, just for her! He had overheard her oohing and ahhing all night (how could one not), and obliged her with a treat of treats.


And this treat, my good people, was dazzling. Emma asked for a knife but immediately realized that it was unnecessary: this meat literally fell off the bone. It was simply prepared yet clearly tended to and thought about for hours and hours, if not days. As Emma was (still) going on about the dish, she offered a bite to the gentleman sitting to the right of her – he partook. Turned out he works there!

Oh, those crazy kitchen guys…

Listen – don’t let anyone tell you otherwise, this spot is so much, and then so much more. I hope they don’t get sick of me, because my eatin'-drinkin' self plan to make me part of the atmosphere more often than not.

Lost and Found


I can’t tell but I think I lost something. Well, I’m not sure if I ever actually had it, but I’m pretty sure it’s gone now anyway. Maybe I’ll find it. Hell, I hope so. I guess I didn’t know I even wanted it that much until I lost it. I hope I didn’t accidentally throw it away.

When I was a little girl I had Weeble Wobbles. I even had the Weeble Wobble Tree House. Jealous much? I loved them. One day I got one of my Weeble Wobbles caught in the drain of the bathtub. I guess it caused a pretty major issue because I don’t remember ever getting that Weeble Wobble back. Perhaps I underestimated my Weeble Wobble. I didn’t give it credit for its strength and ability to affect change, and for this it left. I lost my Weeble Wobble forever.

There have been quite a few times that I thought I lost money, anywhere from a $1 to a $20 bill. I really wasn’t aware that anything was missing. Maybe I was for a minute, but I would usually assume I spent it on something or another and quickly forgot about the matter. Then, days or weeks later I would find a crumply, dried bill in the dryer. It’s like striking gold! Yes, maybe it was already mine and then I lost it, but forgetting about it, assuming it’s found another home, in some other pocket or some cash register somewhere, and then realizing it never left is very exciting. I took it for granted and then it gave me a second chance. It was testing me and I passed.

Sometimes I have a very precious thing that I will lend to someone or leave with someone: my favorite cookbook, signed by the author, or my baking stone, given to me as a Christmas gift from someone special, a really good pair of jeans, or just some Tupperware I sent someone home with food in at some point. I always assume this thing will find its way back to me though it may take weeks or years. More often than not this is the case. The risk however, in the approach of if you love something set it free, is that it very may well find happiness, its home elsewhere.

The most extreme case of this was one of my more personal photography books that I sent to a magazine I respected and wanted to shoot for. The protocol is to send it back once it has been viewed. I never got it back. That was 8 years ago. Sad but a reality nonetheless. I like to think the world opens up a notch when that thing and the person or place that it has found and vice versa have found each other. I figure that whoever saw my book was so impressed and touched by it that they wanted, or needed, to keep it. I like to think it sits on their coffee table and has been oohed and ahhed over by many people over the years. That it has inspired. It still loves me, in its way. But I was merely a vehicle to allow it to move on to its true role, its real place in this world. I was sad for a while. We will never forget each other. But such is life.

Something so crazy just happened while I have been writing this. Remember the thing I thought I lost, that maybe I threw away? I found it! Interestingly, it never went anywhere. It was in the same place the entire time. I just couldn’t see it. It was right behind the milk, of course. I probably should have been confident that it didn’t disappear. I think there’s even a possibility that I was a little bit nervous to find it. Maybe it had diminished. Or grown. Maybe it went bad. Maybe I wouldn’t want it anymore. But there it was, right behind that silly milk, the same as before. I never know, I may consume it too quickly, it may go bad, or hell, it could hide behind that pesky milk again. But I’m relieved to know that I didn’t lose it, or worse, callously throw it away.

The recipe I am sharing with you here is one my Grandmother, Janie, made for my dad decades ago back in Roanoke, Va. It is also a recipe my dad often made for me slightly fewer decades ago back in Richmond. I never met Janie, though we came frustratingly close. She died right before I was born. Perhaps because of all the stories I’ve heard about her, the pictures, and obviously the existence of my dad, to me she is the thing I lost but never had. But in a way, I get to find her again when I make her recipes. And when I look in the mirror.



Lima Beans in Cream & Butter

Serves 4 to 6
  • 16 ounces dried Lima beans
  • 1/2 to 3/4 cup heavy cream
  • 2 – 2 1/2 tablespoons butter
  • Salt and freshly ground black pepper, to taste
Soak the beans overnight and leave them in the soaking water. Cook the Lima beans in boiling salted water for a good hour or so, until the beans are tender.
Drain well. Add the cream and butter. Taste and add salt and pepper as desired. Heat thoroughly. Serve hot.
 




What I Used To Do.


Caroline, a friend of mine from back in Atlanta once told me, “You’re a sponge for one.” While it may sound strange as it’s seemingly out of context, and pretty random sounding, I understood perfectly. Although I have been rich with friends and friendships throughout my life, I have pretty consistently concentrated on one major friendship at a time. And I would always put the majority of my energy and stock into that friend, even to the detriment of romances running concurrently. I don’t think this quality made Caroline very happy at the time because she felt shut out. I don’t blame her. I was putting all of my friendship eggs into another basket.

My main bestest friend throughout almost all of my "adult" life, Paz, and I grew up together. In collusion we attended middle school, high school, college, and then moved to Atlanta. We planned to go to college together – in Ohio, mind you. We were dorm-mates there. We returned to Richmond together for vacations, holidays, lived in Mexico together, she videotaped my dad’s wedding, and even moved in with my boyfriend and me after college when I went to Atlanta. And in a different time and house in Atlanta, every Tuesday night, we watched Buffy the Vampire Slayer and then got all dressed up together before we went and worked the door at a bar where our dj friends performed. I felt badly for our various boyfriends over the years as we were almost like a package deal.

Don’t get me wrong, we also fought like Scotsmen, but Paz was my family. I would throw myself in front of a train for her.

Another thing to point out: while Paz has been very prominent and consistent, there have been quite a few other friends for which I was sponge for one-ing throughout my life. My mom tells me I was exhibiting that tendency from a very early age.

About 8 years ago I moved to Los Angeles, and – without going into too much detail because it’s irrelevant now - although Paz and I were falling apart at the seams, I think my move was the nail in our coffin. We didn’t speak or see one another for over 5 years. Until recently.

Interestingly, not long ago I had a watershed realization: in the past 5 years, slowly but surely, I am no longer a sponge for one. Not at all. In this big, scary, massively populated city I have found a wealth and abundance of friends, all very close, all very special and important. Everyone may play different roles at different moments but no one stands above anyone else.

Maybe some of this is a result of moving here without Paz - the result of being thrust into anonymity and having to swim without those puffy arm things. But I still could have just found my one super friend again, right? Now I have super friends. Together, they are my network, my team. I feel overwhelmingly fortunate to have every single one of them.

And the awesome-est thing? As mentioned above, Paz and I have recently reconnected. We literally ran into each other on the street late last Summer while I was in Richmond – on her birthday actually. Since then we have seen one another when we can, on whichever coast one of us happens to be on at any point; we email, we text, and we have phone conversations that last hours at a time. We talk about boys (men now, I suppose), our insecurities, our dogs, food, and all of our old private jokes and language have relevance again. It’s wonderful.

The recipe I’m sharing with you here is one that originated in some form from Paz’s mom, who is from the Dominican Republic. Paz has been making this dish on her own, with her own touches, since even before our food co-op in college. She has always referred to it as her world famous recipe. Even then.

I hope she can visit me out here again sometime soon. I want her to meet all of my friends and I know they are dying to meet her.


Although it may seem more of a hearty, Winter dish, I beg to differ. The cilantro brightens it right on up and ushers it gracefully into Spring.

This is her recipe verbatim. However, I have added my two cents in italics.


Paz’s World Famous Rice and Beans

Serves 6
 
1 can each kidney, black and white beans (drained)
1 can of diced tomatoes (for fun, try the ones with green chilies in them)
1 small onion, diced (I used a Vidalia)
1 green, red, or gold bell pepper, diced (I used a red pepper. Green peppers make me want to drive off of a cliff)
1 heaping tbsp of ground cumin
1 tbsp of Italian herbs (I used fresh thyme, oregano & marjoram from my garden)
¼ tsp of cayenne pepper (optional) (I, personally used a lot more heat, more like 3/4 tsp. Chile de Arbol would be a beautiful addition as well))
1 small bay leaf
Salt and fresh ground pepper to taste
4-5 cloves of fresh garlic finely chopped
1 handful of fresh cilantro coarsely chopped

In a large pot, stir in beans, tomatoes, cumin, Italian herbs, cayenne and bay leaf over med-low heat. Stir until it begins to bubble, then turn the heat down to the lowest simmer ever (so it doesn’t burn). In a frying pan, sauté onion and green pepper in extra virgin olive oil until the onions become translucent and the peppers are softly browned*. Add them to the pot of beans. Add the finely chopped garlic (raw) to the beans. Slow cook beans for 45 min to one hour stirring occasionally. Add cilantro and cook in for the very last 10-15 minutes.

Serve with rice and sour cream (optional, however very good if you accidentally added too much cayenne).


*I would sauté the onion & pepper in the pot, first then add everything else. The ingredients marry better and you have fewer dishes to do.




The Duchess and The Pea


Spring is springing all over the city of angels and I am really excited about it. I can smell the wisteria and night blooming jasmine, birds are chirping like crazy, everything is green and bloomy, all of my windows are open and I can wear much cuter tops. The clear, bright and warm days morph into clean, cool evenings with a hint of mystery. This is the absolute perfect time of year to be in Los Angeles.

Oh, and did I mention the produce?

Asparagus, artichokes, peas, heirloom tomatoes, arugula, beans, strawberries and rhubarb are all in season right now and the farmers markets are filled to the brim with them. It’s just wonderful.

I lived in Atlanta for about 6 years prior to moving here in late March of 2002. We didn’t have farmers markets like the ones here. There were no outdoor, open-air markets with individual growers. At least, not that I knew of. I’m sure they have them now, of course. There was an interesting place in Decatur called the Dekalb Farmers Market. It was huge and amazing. It was also reminiscent of a Costco, but just for food – a huge warehouse and great prices. The employees had to wear hair nets and no photography was allowed. Looking back, that was actually a really strange place.

One of my closest friends in Atlanta, Michael Fancini, coined me “The Duchess”. I don’t think it was entirely a compliment or an insult and, while I’m not completely sure why he called me that, I get it. If you knew me, you’d probably get it. In fact, everyone in Atlanta got it. So much so, that I became The Duchess. Occasionally, if I was acting particularly persnickety or gooby, Fancini would lengthen the moniker to “The Duchess of Dork”. Cute.

I miss that guy. He had a beautiful Boxer that he named Chesty B. Wiggles. He also worked wonders with polenta.

So, now here I live in this city of sunshine and shadows, limos and lights, diamonds and guns. And this is the place I call home. As far as I know, I currently have no nickname to speak of. But when I’m at the Sunday market, picking over the healthiest, fluffiest chards, nuttiest avocados, brightest dandelion greens, or delicately sifting through the squash blossoms and perfect heirloom tomatoes, I feel like The Duchess.

At last Sunday’s market while delicately examining and selecting my peas, the metaphor was not lost on me: The Duchess and the pea.

And on a beautiful, sunshiney day, remembering my life in Atlanta, Michael Fancini, Chesty B. Wiggles, and the Dekalb Farmers Market, home to make soup I went.


Fresh Mint Pea Soup


*I have a bounty of various mints growing in my garden. I used a mixture of candy mint, lime mint and chocolate mint. If you can find some different mints, they add a wonderful complexity and zing to the soup.

Serves 4-6

1 tbsp olive oil
1 tbsp butter
2 cloves garlic, smashed
1 large shallot, chopped
3 ½ cups fresh peas
3 cups chicken stock
¼ cup fresh mint, chopped
1 cup sour cream
Sea salt & white pepper

Heat oil and butter in a large pot over medium heat. Add shallot and garlic and sauté until tender, about 5-7 minutes. Add peas and stir for a couple of minutes, until well coated. Add stock and bring to simmer. Cook until peas are tender, about 10 minutes. Be careful not to cook too long or on too high heat, to maintain the integrity of the green in the peas.

Let cool for about 15-30 minutes. Puree soup and mint in batches in a blender or food processor until smooth. Return to pot. Can be made 1 day ahead. Cool, cover and chill.

Rewarm soup over medium-low heat and salt & pepper to taste. Garnish with a little sprig of mint and serve.

This soup can be served hot or cold and would pair beautifully with a sparkling vouvray.

Dear Diary,


I have kept journals almost all of my life. I only stopped a few years ago (probably because of this blog), but I still have boxes of them. I don’t often go back through them – or, at least, it’s been quite a while. The other night, knowing I was going to have a busy week of work, I stole a night to myself and treated me to a dinner at Cheebo. With one of my old journals. And a few glasses of sauvignon blanc, a bowl of creamy artichoke soup and their signature chopped salad. Before I continue I will say that the food was very, very good. In fact, I will try to recreate the soup at home soon.

Here’s what’s wild: while reading my words from over a decade ago, it didn’t seem that I’ve changed as much as I would have hoped, or at least thought. Don’t get me wrong – I’m a really good person. What I noticed, though, is all of the things that got me dithered out, all of the promises I used to make to myself – are all the same dithers and promises of today.

Yet reading the entries still makes me miss something. Staying up until dawn? Dying may hair a new color and not to cover grays? Being able to do shots? Looking good in spandex?

I imagine it would be youth. Or at least the version of youth that allows us to fear little. The feeling of being invincible.

I wonder why that changes as we get older. Don’t get me wrong – I have no interest in going back in time. I don’t feel a need to recreate or relive any of the moments of my past. I am happy with the present and look brightly into the future. But I do find it interesting that, while looking through my words from all the years past that the more things change the more they stay the same. I can’t tell if I take comfort or concern in this little phenomenon.

I still spend too much time worrying about boys, friends, money, success and my hair. At least I don’t feel compelled to pierce anything or toy with the idea of getting a tattoo anymore. I’ve never liked doing shots, so I’m glad the pressure is off there. And I have little to no interest in wearing spandex (although it would be nice if it looked better on me).

Some of my old journals are filled with stories of my life, some are filled with watercolors, some have little taped scrawls and scraps from friends and the world, and some are simply filled with lists. Some parts are sad and some are happy, but they all mirror the trajectory of my life. They track the people who have moved in and out of my life, who have stayed, who have passed on. There is love, loss, elation, heartbreak, failure and triumph. I found them all to have beauty.


Last night, as I was trapped in the canyon, with my car needing a jump, my only phone dead and in a majorly crabby mood, I decided to make something that made me comfortable. Cozy. Something we all have eaten all of our lives in some form or another. A dish that, the more it changes, the more it stays the same. Something that can be colorful or monochromatic. Something that can be ornate or bare bones. Something that can taste both simple and complex.  Something that everyone perceives differently. Something that most of us have an opinion about. Something that, like the phases of our lives, seems to be ever morphing – moving forward while suspended in time.

Chili.

I have never used a recipe for chili. Rather, I like to toss all sorts of things in there each time and see what comes out. I never measure spices or concentrate very hard on it (except this time, so I could document the recipe for you). This go ‘round, I sautéed the onion in rendered bacon fat and kept the smoky bacon bits in. I always like to use lots of different kinds of beans for color and texture. It turned out great: thick, bold, good heat, smoky and rich. The sour cream and green onion on top add a splash of bright color and round out the spice.

And then I wrote everything you just read.



Chili with Beef & Bacon


2 strips bacon, cut into small pieces
1 red onion, chopped
1 lb. ground beef
4 cloves garlic, smashed
2 tbsp cayenne pepper
2 tbsp chili powder
1 ½ tbsp ground cumin
1 ½ tsp Hungarian paprika
1 bay leaf
15 oz can of tomato sauce
15 oz can of plum tomatoes
1 tsp Worcestershire sauce
1 tbsp red wine
20 oz can of red kidney beans
15 oz can of pinto beans
15 oz can of cannellini beans
Salt
Sour cream and chopped scallions for garnish

Directions
1. In a large, heavy-bottomed pot over medium-high heat, cook bacon, stirring until it just begins to brown, about 4 minutes. Add onion, lower heat to medium, cover, and cook, stirring occasionally, until translucent, 4 to 7 minutes. Uncover pan, stir in garlic, and cook 1 minute.
2. Increase heat to medium-high and add ground beef; break it up with a wooden spoon and stir gently until it loses its raw color, 6 to 8 minutes. Stir in spices and 1 tsp. salt and cook 1 minute. Add tomatoes, tomato sauce, bay leaf, and Worcestershire, wine and bring to a boil. Reduce heat to medium-low, cover partially, and cook 30 minutes.
3. Add beans and cook 30 minutes, uncovered. Season to taste with additional salt. Serve warm, with toppings on the side.
