The Revenge of the Homemade Ravioli


It’s this close to Halloween, the spookiest, scariest, fake-bloodiest night of the year (unless, of course, it gets trumped by a sad turn with the election next Tuesday). There will be lots of horror movies, trick-or-treaters, costumes, parties, candy and, in my house, ravioli. 

Boo!

The last time I made ravioli was two years ago, around this time. There were jack-o-lanterns glowing from the inside all around the house, a fire was burning in the fireplace, and twelve people sitting down to eat in my living room. And, among other things, I served them ravioli. More specifically I served them duck confit and pimiento mashed potato ravioli with braised chanterelle and lobster mushrooms. Sounds pretty fancy, right? My dad was in town at the same time we were hosting a Dinner at Eight, and so the menu was composed of the elements of all of his favorite foods, duck confit and pimiento mashed potatoes being a couple of said foods. The meal was very good and the evening was warm and festive. Or so I thought...

As I said, everyone seemed happy, elated even, with the meal and the evening. It seemed as though everyone had commendatory things to say about it. To my face. But then about a week or so later I read, in a public forum, that a guest and her date did not leave pleased. Some of what I read was fair enough and some was not.  Nature of the beast, I suppose, but it is exceedingly difficult not to take a sharp panning personally.

Now you’re scared, right?

I very rarely critique restaurants any more here and that is due, in large part, to this experience. So I asked myself, who am I to deign to review and criticize chefs and restaurant owners in a public forum? I am neither a Nobel Prize winning journalist - or hell, a journalist at all - nor an acclaimed food critic. And I do not visit an establishment three times with groups of people to sample as many menu items as possible and to check consistency prior to writing a post. What if I visited a place on an off night? We all have an off night, even the very best of us. Moving forth I decided to mention some restaurants here and there, but to be extremely cautious and thoughtful with any negativity.





What I did do following that review of, what was essentially, my style, my structure, my home, my peeps, my creative vision and my food, was make pasta over and over and over again. But not ravioli. Until last night. And it was insert expletive here awesome.


So, in some way, I triumphed. I knew that this ravioli would make even the toughest carbo-loading 'critic' warm and fuzzy inside, whether or not they aren’t a fan of toothy (read toothsome).

Yes, revenge is a dish best served cold. But this ravioli is not.

Acorn Squash Ravioli with Sage Browned Butter


Serves 4 (Main Course) or 6 (Appetizer)


Pasta Dough and How Ravioli-ize It


I happen to have a pasta machine. If you don’t you can still make ravioli your just going to have to roll the pasta out with a rolling pin.

I have done this myself. It is a lot of work but it can be done. You just need to roll the dough out really thin. Do not roll the dough out too thin. The pasta will split when you are cooking it and most if not all of your filling will be floating in your pot of water.

I found that when making my ravioli it works much better if you roll out a piece of dough, fill and seal the ravioli and then start all over again. If you roll all your dough out you take the chance of your dough drying out too much and it will make it more difficult to work with and you’ll end up with a very tough pasta.

Remove your ball of dough from the bowl and knead all of the flour and crumbs in for a couple of turns. Now cut the dough in half. Then cut each half in 4 pieces. You will end up with eight balls of dough. Put all of the dough except for the piece you are working with back into the bowl and cover it with the towel.

Flatten your dough a bit and dust with flour. 

Now place the piece of dough on your clean and floured counter surface.

Using a spoon place a dollop of filling along your piece of dough in a straight line, leaving about an inch of space in between and on each end. Each dollop is a little bit less then a teaspoon of filling. You really have to play with your filling because each piece of dough is going to be a different size. No two pieces of pasta roll out the same width or length.

Have a small bowl of water on the counter and dip your finger in and run a damp bead of water down each edge of the pasta and between each spoon full of filling.

Now flip the dough from the back over your filling.

Run your finger between each pocket of filling to remove most of the air and cut each ravioli apart. Trim it up just to even the edges.

Run your fingers around the edge of the filling forcing the air out. Use a fork to seal the edges.

Homemade pasta cooks really fast, about 2 minutes. You will be able to judge whether your pasta is too thin or thick if you cook a few when you first get started. To cook the ravioli boil a pot of water and add ravioli. Gently boil until the ravioli float. Once they are floating the filling and pasta are cooked through. 


Ravioli Filling

1 acorn squash, diced and roasted*
1/4 cup yellow onion, diced 
2 tablespoon fresh sage, chopped
1 tablespoon butter 
1 garlic clove, minced 
1/4 cup mascarpone cheese 
1/4 cup parmesan cheese 
1/2 teaspoon nutmeg  
1/2 teaspoon sherry vinegar 
dash of red pepper flakes 
salt and pepper 
4 tablespoon butter 
2 teaspoon fresh sage

Pre-heat the oven to 350 F. To get maximum flavor from the squash, peel the rind and dice into small cubes. Place the cubes on a foil or parchment lined baking sheet and drizzle with olive oil. Roast for 30-45 minutes until all sides are nicely caramelized. *Note: If you don't have the time (or patience) to peel the squash and cube it, you can alternatively follow this procedure: halve the squash. Place each half cut-side down on an oiled parchment-lined baking sheet. Bake for 30-45 minutes.

In the meantime, warm 1 tablespoon butter in a medium sauce pan. Saute the onions and 2 tablespoons chopped sage until the onions are transparent. Add garlic, salt, and pepper. Saute for one minute longer, then set aside.

When the squash is finished roasting, combine the squash, onion mixture, mascarpone cheese, parmesan cheese, nutmeg, sherry vinegar, and red pepper flakes in a food processor. Pulse until the texture is creamy. Add salt and pepper to taste


Sage Brown Butter
4 tablespoons butter
8 sage leaves
1/2 teaspoon lemon zest
1/4 cup grated Parmigiano-Reggiano

Melt butter in a 12 to 14-inch saute pan and continue cooking until golden brown color ("noisette") appears in the thinnest liquid of the butter. Add sage leaves and remove from heat. Add lemon zest and set aside. Add the cheese, spoon over ravioli and serve immediately.

Slowing Down.


I have gone home to Richmond and now I have returned home to Los Angeles. I had somewhat of a seminal trip, I must say. While I always appreciate going back home, it is, more often than not, fraught with some sort of mess(usually caused by me). This visit, however, was decidedly different. It was not only mess-free, it was calm and nice (with a lite peppering of pretty great play-times), and it made me honestly miss Richmond.

Don’t get too worried. I don’t see myself leaving LA. Certainly not any time soon.

On my first night there I had plans to have dinner with my dad and Paz. We had reservations at the Blue Goat at eight o’clock. Paz came over a little after seven or so for a champagne toast before heading out. But I just could not relax. I kept looking at my watch and asking Dad if we were okay on time. We had to get to the West End, after all! He told me to chill (which he does a lot). We left at ten minutes to eight, effortlessly found parking and walked in the front door of the restaurant at two minutes to eight.

Um.

On another day I was driving through my neighborhood, The Fan, with My Favorite Rugby Boy when I noticed the car in front of me pulled over to the right and put their hazards on while someone proceeded to get out of, or into, the car. Without hesitation I checked my blind spot and whizzed around them. MFRB grabbed the OMG handle in the car and was, visibly, a bit rattled. I turned to him and said, “What’s the problem?” To which he replied, “I forgot about you Los Angeles drivers, is all.” During that moment that I rolled my eyes at him, I also realized, he’s right. There was really no reason to go around that car. Why couldn’t I have just waited one minute, until they were moving again, and amble along from there? What’s the hurry?

And you know what? I’m always in a hurry. I always have to be doing, moving, going. I’m obsessed with time and being on time. There’s never enough time.

After I realized this, I slowed it down. I meandered around the new grounds of the Virginia Museum, I leafed through a magazine, I took a nap, and I wasn’t even crabby when My Favorite Rugby Boy told me he was running late for cooking-lesson-night at his house (bless his heart – he boils chicken and eats it for dinner).

That night I taught him how to make chicken under a brick (fantastic chicken from Belmont Butchery), slow-cooked broccoli rabe, salt-baked potatoes and a roasted cauliflower and garlic soup with rye croutons. I thought the first three items would all be things he could take away and riff on: simple classics that taste delicious. In an interesting turn of events he was most taken with the soup. In an even more interesting turn of events, I walked away that evening with knowledge of a new term: SCRUM. One never does know, does one?

The next day Dad and I drove up to Northern Virginia to visit Aunt Babe. I napped the whole way there while Dad drove. We had lunch with she and her daughter, my cousin, Noel. It was truly wonderful to see them both. I got a ton of recipes and stories and material to work with. Heck, three of the dishes at the next Dinner at Eight are Aunt Babe’s. The funny thing was, Aunt Babe expressed she was pleased as punch to be out of the kitchen and didn’t miss it one bit. One never does know, does one? 

I then napped the entire way back to Richmond while Dad drove.

For my last night back home I stayed in. In my pine cone jammies. On the couch. I was sort of sad. I realized that I really love Richmond. I realized that I really miss Richmond. I started fantasizing about moving back to Richmond. It’s so beautiful, so straightforward there. I, of course, also realized that it’s easy to feel this way about a place when you spend your days there jogging, wandering, eating, drinking wine, napping, reading and being snuggly.

But I did make a decision. Here it is: I will be going back home considerably more often. I even pulled a classic chick move on the very house in which I grew up. I left stuff that I knew I would have to return to – namely my pine cone jammies.

Creamy Roasted Garlic and Cauliflower Soup with Rye Croutons

serves 4-6

Ingredients:

1 whole head cauliflower
1 large whole head garlic
1/2 tablespoon olive oil
1 tablespoon butter
6-8 fresh sage leaves
1 medium onion, chopped
1/2 teaspoon salt
1/4 teaspoon pepper 
1 tablespoon flour
1/3 cup sherry 

1 cup water
3 cups chicken or vegetable stock, plus up to 2 more as needed for desired consistency
1 dried bay leaf
1/3 cup heavy cream
1 slice crustless rye bread, cut into 1/2-inch dice (1 cup), toasted
 
Directions:

Preheat oven to 400 degrees F.


Cut cauliflower into individual florets. Toss with 1 tablespoon olive oil. Transfer to a foil lined baking sheet. Scatter fresh sage leaves around the florets. Sprinkle lightly with salt and pepper.


Cut the top off of the head of garlic. Drizzle with olive oil and wrap with foil. Place wrapped garlic on the baking sheet. Roast the cauliflower and garlic at 400 degrees F for 15-20 minutes. When the cauliflower is tender and golden remove from the oven.


The garlic will need to roast for a total of about 25-30 minutes. You can remove it to check it's progress as needed - it should smell fragrant but not raw, be golden and tender.

Meanwhile, heat the butter in a cast iron dutch oven or medium-large stock pot. Add the onion. Saute over medium heat for about 10 minutes. Whisk in the salt, pepper, and flour and continue to cook for 2 more minutes.

Add the sherry and water, whisking to combine with the flour mixture. Then, slowly add in the 2 cups broth. Add the bay leaf and roasted garlic cloves. Bring mixture to a boil, then reduce heat to medium-low and simmer for 10 minutes. Add the cauliflower and simmer an additional 5 minutes.


Remove the bay leaf. Working in batches, add the soup to a food processor (or use the trusty immersion blender) and blend until pureed and smooth. Add additional broth during or after blending to achieve desired consistency. After all the batches have been completed, return to the pot. Stir in the cream. Cook until just heated through. Adjust salt and pepper for tastes.


Ladle into bowls, scatter the croutons on top and serve.

My Little Chickapea


The mother of a friend of mine from my high school days referred to any inclement weather as weatherin’. So, for example, if it was raining or snowing out, it was weatherin’ outside. I am aware that this is strange as there is always a state of atmosphere, always weather at a place, whether it regards heat, cloudiness, dryness, sunshine, wind or rain. But you have to admit: it’s weatherin out really gets the point across.

Well, it has been weatherin’ more than usual here in the city of sunshine. In fact, it’s been weatherin’ so much I – not wanting to be out in the cold, wetness – whipped through my Netflix and had to hit the video store. Remember those? It had been so long since I had been in that they had to renew both my address and credit card information.

I rented 4 DVDs, more than usual, and the max one can rent at a time at my store. I then stopped to pick up some dinner to go from Greenblatt’s, a sufficient amount of wine (ahem) and headed back up the hill to put on my sweatpants and max out on the couch with mountains of movies. It seems like it has been a while since I’ve had an evening like that, being such a busy body. I often have to force myself to stop tinkering about and just veg out.

So, after finishing 500 Days of Summer and halfway through The Ugly Truth (Lay off! Everyone has guilty pleasures! Plus, have you seen Gerard Butler??) I got a hankering for some popcorn or some such thing.

I had no popcorn.

As you now know, I do so love a crunchy, salty snack. I also love to improvise and concoct with items in my refrigerator rather than going to the store with designed menus in mind. Time for some kitchen composition.

Although one might consider this a deviation from my chillaxed evening on the couch, with no tinkering allowed, it was so fast and easy that it hardly counts. Popcorn would have taken just as long.

And it was even better.

With this combination of elements, it can just keep on weatherin’ out there a little longer. Perhaps next time I will actually watch a W.C. Fields movie. Um, probably not. 


Roasted Chickpeas with Garlic and Sage
Serves 2


Ingredients:

2 cups chickpeas, rinsed and drained
2-3 tbsp olive oil
3 cloves garlic, very coarsely chopped
6-8 sage leaves

½ lemon 
coarse sea salt

Directions:

Preheat the oven to 425.

In a cast iron skillet, heat the oil. Add the chickpeas, garlic and a pinch of salt, and sauté for about 5 minutes. Be sure the beans are well coated with the oil, then add the sage, and remove the pan from the stove.

Place the skillet in the oven and roast, giving it a shake every so often. Roast until the chickpeas begin to turn brown, about 15-20 minutes. Remove the pan from the oven and set aside to cool a bit.

When the chickpeas are still hot, sprinkle with a little additional olive oil, a little extra pinch of salt and a squeeze of lemon.
